France is the largest wine producing country in the world. The history of French wine traces back to Roman times. French wine is controlled by the AOC system, Appellation d'Origine Controlee. This system guides as to what grapes are allowed to be grown in each region. The system was created using hundreds of years of growing history and the use of terroir. Terrior is a French wine term that encapsulates all the variables that apply to a wine's tastes…such as soil, climate, and the area the grape is grown.
France is home to many grapes that have now been cloned throughout the world. Not only have France's grapes been replicated, but so have their wine making styles. Even though they are the strongest player in the wine producing world, they now have competition from the new world wine producing countries.

Marquis d'Alesme Margaux is made from 63% Cabernet Sauvignon, 30% Merlot, 5% Petit Verdot and 2% Cabernet Franc.
Deep purple-black colored, it leaps from the glass with vibrant notes of mulberries, black cherries and blackcurrant pastilles, plus suggestions of underbrush, fallen leaves and violets. The medium-bodied palate is lively and refreshing, featuring a light touch of fine-grained tannins and just enough mid-palate red berry flavors, finishing savory.
Mas Olivier Faugeres Rouge Expression is made from 70% Syrah, 20% Grenache and 10% Mourvedre.
Dark color with a deep purple hue. Intense nose with ripe red berries notes which reveals after breathing herbal notes of pepper, incense, cardamom and chili. It is a well-structured wine with powerful and fine tannins.
The wine is produced from a unique plot nested in hilltops, at 400 meters above sea level on rich schist soils. The grapes are selected with love and great care (optimum maturity checks and berry tasting before the hand harvest). Each variety is harvested separately on different dates to ensure the best quality and the perfect homogeneous blend “expression” of the AOP Faugères terroir.
Pair with roasted rib of beef with porcini mushrooms. Game dishes with candied turnips, cheese.
Mas Redonne Bandol Rose is made from 55% Mourvèdre, 35% Cinsault, 10% Grenache.

The flavors are fresh, fruity and very aromatic with tons of apricot and mango.

The grapes for this wine is coming from 2 famous part of the Maconnais' region: Vergisson and Solutré, famous for their Rocks. Hence, the minerality is coming from these rocky soils.
The wine went through malolactic fermentation.
It has been gently filtered before bottling.
Excellent with white meats and fish.

Luis XIV Fondillon Oro 50 years NV is made from 100 percent 100% Monastrell (Mourvedre). Only 24 9 liter cases produced.
The wine is produced in the village of Cañada, in the subarea of Alto Vinalopó in the province of Alicante. Made from 100% Monastrell planted on traditional dry land as bush vines, at 550-580 meters above sea leval and enjoying a Mediterranean climate with great marine influence due to the easterly winds.
Fondillon 50 years is mahogany in color with orange tile rim, medium layer and great density. On the nose, it has a very deep aroma of old wood, black tea and carob. In the mouth, it has a sweet entry balanced by a rich high acidity. Its aromas are long, almost eternal and very intense. It tastes like old mahogany, a very old barrel and bygone times.
Bottled in December 2019.

"The NV Fondillón Luis XIV has the subtitle Edad Superior a 50 años (over 50 years old), and it's a dark mahogany, bottled from a single barrel that has the specific profile of a very old wine greatly concentrated by age, which tends to make it similar to other very old and concentrated wines, be it a Mediterranean rancio or a very old Moscatel. It has notes of bitter chocolate, coconut and iodine, carob beans (algarroba) and some bittersweet sensations. It's dense and concentrated, and the palate is pungent, with very intense flavors and a bitter twist in the finish. This has 16.3% alcohol, 6.45 grams of acidity and 34 grams of sugar, but it comes through as very dry. The wine is long and extraordinary, but it just doesn't have any Fondillón character after decades of concentration by evaporation. The price is ludicrous. "Fondillón is an extraordinary treasure of Alicante, a rare product, made from late harvest, non-botrytised grapes, unfortified, but with a final alcohol of no less than 16%. Matthews Cabernet Sauvignon Columbia Valley is made from 76% Cabernet Sauvignon, 15%Merlot, 6% Cabernet Franc, 2% Petit Verdot, 1% Malbec.
The 2021 Columbia Valley Cabernet Sauvignon is deep ruby in the glass with purple hues. The rich bouquet of spiced black plum and cocoa nib are balanced with aromas of fresh earth and crushed flint. Intense and opulent flavors of ripe blackberry, cedar, mocha, and black currant coat the broad and balanced palate and the ripe tannin creates a perfect frame for the lush fruit expression. Cherry cordial and cola linger on the long, quenching finish.

Precise and expressive, with handsome flavors of blackberry, bay leaf and espresso that build richness and structure toward refined tannins.

The 2021 Cabernet Sauvignon Columbia Valley is spicy, showing off a gentle peppery tinge and dusty rose tones that give way to dried black cherries. This is wonderfully crisp and refined, with silky textures and depths of dark red fruit propelled by juicy acidity. It tapers off long and structured, yet the tannins are quite sweet. The 2021 finishes with a pleasant crunch and a lingering licorice tinge.
