Here is a big, powerful Cabernet that pushes the envelope. The 2022 vintage was another drought year, and Paso Robles experienced late season heat waves. Made from 100% Cabernet that was aged for 21 months in French oak, 50% of it new, it clocks in at 15.5 % alcohol. However, when tasted blind, it offers an aroma of ultra-ripe black berries, chocolate, and spices that by the final swirl is absolutely gorgeous. Full-bodied with very juicy black fruit flavors and spice backed up by toasty oak, it all holds together seamlessly thanks to integrated tannins. The finish ends on a light toasty oak note. The real challenge is to pair it with a comparably robust main course.

The 2021 DAOU Reserve Cabernet Sauvignon is emblematic of Paso Robles as a world-class region for Bordeaux-style wines. Intense purple-red hues foreshadow deep aromas of black fruit, pomegranate, tobacco, mocha, and bay leaf. Trailing notes of clove, nutmeg, and vanilla emerge as the wine opens up in the glass. The estate soils have been formed from sediments from the Garraf Massis, deposited thousands of years ago. One of the most characteristic features of the estate’s soils is the presence of accumulations of calcium carbonate. The movement of water through the soil dissolves the carbonates and takes them to a certain depth. The continuous repetition of this process has ended up producing the accumulation of these deposits. When these become massive, after thousands of years, they bind together and form a hard stratum called a petrocalcic horizon. This hard stratum limits the availability of water to the vine and the production, but is a factor that gives the grape quality
The wine offers a straw yellow color, clean, transparent, fine, and persistent bubbles with a rosary formation. Dark, ruby/purple core with a medium intensity rim and moderately stained tears. Complex and very aromatic with black cherry, cassis, toasty vanilla, cinnamon, cedar, graphite, oak, dusty leaf notes, star anise and red licorice. Full bodied, with ripe black fruit of cherry, currant and berry with baking spice on entry. The mid-palate features sustained fruit with sweet tobacco, leather, vanilla and licorice, and mouth coating tannins that balance its full fruit character through a very long, fresh and beautifully balanced finish that evolves with a complex mix of fruit, spice and savory elements.
The 2016 ISOSCELES Reserve is a bold, but balanced wine that pairs nicely with rich meat dishes like slow cooked stews and braises, but shines beautifully with a simple grilled ribeye steak.

We planted our first vineyard back in 1981 with a mission to make world-class Bordeaux-style blends. Since then, we’ve expanded both our knowledge of viticulture in this unique region as well as our acreage.
Soil:
Rich in fossilized limestone from eons of marine deposits, JUSTIN’s soil is ideally suited to creating big, Bordeaux-style reds. The limestone “stresses” the vines, producing grapes that fully express their varietal character.
Climate:
Paso Robles’ distinctive microclimate offers the widest day-night temperature swings of any grape-growing region in California. The hot days allow the grapes to develop intense flavor, while the cool nights create great structure and balance.
At JUSTIN, we combine traditional Old World methods—like hand-harvesting and small-barrel aging in French oak—with New World technology. For example, the “Air Knife”, an ingenious New World process invented by our winemakers, boosts grape quality and efficiency.

Intense was the first word that came to mind. Purely focused tannin weaves its way through the core of this wine. Has a savory characteristic that we have found in past vintages (2014 to be specific) with a slight licorice note on the exceptionally long finish. While this vineyard has been described as “feminine” in the past, that is certainly not the case for this bigger, bolder vintage!
Any vegetable or meat in the grill. Delicious with Chocolate as well.
The Grade Napa Cabernet Sauvignon Winfield Vineyard is made from Napa Valley Cabernet Sauvignon.
“2016 produced wines that are very giving, round, coating and streamlined. Year after this year, this bottling aims to highlight the best attributes of the Winfield Vineyard, and also creates a wine that possesses qualities that allow it to age well in the cellar and evolve over many years.
“This wine expresses a focused balancing act of dark, rich black fruit, and a fine tannin structure, illuminated through the core with a laser-like acidity. The wine displays a deep purple-red hue with a cranberry halo. Aromas of cassis, cinnamon, citrus oil, roasted meat, and lilac swell from the glass.
“The palate is marked by a wave of jet-black brambly fruit up front, followed by an exotic spice mid-palate and a long, complex finish that lasts and lasts expressing notes of flowering jasmine, and oolong tea. Coming from the Winfield Vineyard in Calistoga, the 2016 Cabernet Sauvignon is another brilliant wine from the hands of winemaker Thomas Rivers Brown. This deep purple-colored effort boasts tons of blueberry and jammy blackberry fruits as well a medium to full-bodied, concentrated, yet elegant style on the palate. It has the purity of fruit that’s the hallmark of the vintage, ripe, sweet tannins, and no hard edges, and is already hard to resist.

Grand Veneur Chateauneuf du Pape Blanc Le Miocene is made from 60% Clairette, 40% Roussanne
Pale yellow colour with hints of green, aromas of white flowers (may blossom, honeysuckle).
The palate is pleasantly balanced between liveliness and roundness, which brings out characteristics of dried apricot, honey and elderberry. A Châteauneuf du Pape white displaying a great finesse.
Best between 1 and 8 years.
Soil type Coming from the single vineyard named “La Fontaine”, the plot is facing north.It is made of clay-sand and limestone. Thanks to the northern orientation, it is always very well aired. This sector allow the Roussane and Clairette to mature in great conditions without losing freshness, which we believe is key point. Winemaking & ageing Whole-bunch pressing. Vinification in stainless-steel tanks. Fermentation temperature controlled at 15°C.
