-Vinous 92 Points
DAOU Vineyards Reserve Cabernet Sauvignon is made from 77% Cabernet Sauvignon, 23% Petit Verdot.
The 2021 DAOU Reserve Cabernet Sauvignon is emblematic of Paso Robles as a world-class region for Bordeaux-style wines. Intense purple-red hues foreshadow deep aromas of black fruit, pomegranate, tobacco, mocha, and bay leaf. Trailing notes of clove, nutmeg, and vanilla emerge as the wine opens up in the glass. Opulent textures expand across the palate with flavors of red fruit, blueberry, and chocolate-covered raspberry. The overall experience is fresh and rich, concluding with velvety tannins and impressive length.
Review:
Dark and focused aromas of cherry, clove and caramel meet with creamy milk chocolate and mahogany on the layered nose of this bottling. Showing a deft mastery of tannins, which is the Daou hallmark, the palate is silky and yet structured, offering rich fruit and lightly bitter walnut flavors.

DAOU Vineyards Reserve Cabernet Sauvignon is made from 77% Cabernet Sauvignon, 23% Petit Verdot.
A heady nose delivers fruit-forward aromas of blackberry, raspberry and plum with traces of licorice, thyme, vanilla and cherry. The palate is beautifully balanced, showing layers of black fruit and chocolate-covered blueberry with underlying herbal, cedar and mineral complexity. Exquisitely rounded tannins imbue the finish with stature and length.
Review:
Black plum and roasted walnut aromas meet with woodspice on the nose of this bottling. The palate is tense and firm yet still brighter with blackberry, pepper and nut flavors that cling to the persistent structure. — Matt Kettmann
-Wine Enthusiast 93 Points
Made from 100% hand-selected Cabernet Sauvignon from the best parcels of the estate. The grapes are carefully chosen and fermented in small lots to preserve the vineyard identity. The resulting wine is barrel aged for 12 months to fully reveal the character of the Andean terroir. A smooth, complex wine with intense, savory fruit flavors, great length and elegance.
"Full-bodied and dense with abundant notes of creme de cassis, chocolate, espresso roast, spice box, and tobacco leaf, it is a layered, succulent, hedonistic Cabernet to drink over the next 3-4 years."

The Estate
Produced in the Lujn de Cuyo sub-region of Mendoza by the Pelizzatti family, Maipe wines are an expression of the deep rich soils and a commitment to excellence by the young winemaker, Liliana Iannizzotto, and consultant Alberto Antonini.
"Alberto Antonini (think Altos Las Hormigas) is a consultant at Maipe which in and of itself is an indicator that the winery is focused on quality." - Wine Advocate (Dec 08)
The Vineyards The wines are produced from grapes grown in Agrelo and Lujn de Cuyo, in the foothills of the Andes Mountains, at an altitude of 3,000 feet above sea level. Agrelo is a cool climate region in Argentina's premier grape growing area. Each bottle captures the expression of the grape variety, showing its adaptation to the local soils and climate. The vineyard is planted with 18 hectares of Malbec and 32 hectares of Cabernet Sauvignon. The soils are deep and textured, which facilitates plant development and confers great body and structure to the wines. Classified among the best areas within the province of Mendoza, year-long sunny and dry conditions permit almost organic viticulture practices. Its outstanding feature is a great daily thermal amplitude, with mild days and cold nights that allow a particular richness of polyphenols that improve the wine's flavor and color.

Maipe is produced in a state-of-the-art winery, Chakana, built with the purpose of achieving outstanding quality.
Chakana winery was founded by Juan Pelizzatti on May 2nd, 2002. Juan was driven to enter the wine industry first and foremost by his passion for wine, and also by the desire to invest his time and money on a product of agriculture. Although Juan did not know it at the time, the company was founded on the same day the Chakana was celebrated on the Andes highlands: on that same day, the Southern Cross (the Chakana for the Inca people) becomes vertical in the night Andean sky.
Juan's mission is to create an integral experience to introduce world consumers to the taste and culture of the Andes. His vision is to become one of the top 20 exporters of wine from Argentina, by consistently offering outstanding value for money.
Wine is currently produced in four different levels at Chakana, by winemaker Gabriel Bloise:
Entry Level: Maipe
Reserve Level: Maipe Reserve, Cueva de las Manos, Nuna

The winemaking process is focused on treating the grapes with great care and with strict control of every step of the production.
Wines are designed under the responsibility of the renowned international wine consultant Alberto Antonini.
The winery is located on a 150 ha. estate, 34 km South of the city of Mendoza, in Agrelo, Lujan de Cuyo.
The grapes grown are 35 year-old Malbec, Bonarda and Cabernet Sauvignon.
Deep and textured soils facilitate plant development and confer great body and structure to the wines.

A drip irrigation system has been set up to achieve a precise control of the vegetative cycle and a rational use of water. Waters are processed and used in the vineyards.

The vineyards and their terroir are the essence of our wines. This is where everything starts and where we focus our efforts throughout the year. You can’t make great wine without great grapes.
The viticulture is essentially done by hand. Five people work full-time in the vineyards. They are supplemented by seasonal employees who work during bunch thinning and the harvest in order to bring out the very best in our vines. Working by hand and the attention each vine gets are fundamental. Pruning, de-budding, trellising, leaf removal and picking are thus carried out by hand with the utmost care.
We prepare the soil by using good old-fashioned ploughing. Organic compost is made from grape marc (the discarded stalks and skins).
As a way of protecting the plants, we only use phytosanitary products when necessary and within strict guidelines by staggering the treatments appropriately, to minimise the amount of chemicals used. We prefer to use as much as possible manual and organic techniques . Leaving natural grass cover, removing buds and leaves from the vines, preserving biodiversity around the vineyard: olive, almond and cypress trees, wild rosemary and capers.
In the spirit of respecting traditional techniques and the best elements of modern technology, cellar manager Andrew Hall and his winemaker son Romain Hall take family traditions very seriously.
When making our wines, the Muscat de Beaumes de Venise plays a central role and requires great care. After picking the grapes by hand, we press them straightaway to ferment the juice without skins. We don’t add any yeasts and keep the alcoholic fermentation in check by temperature control. Vin Doux Naturel winemaking involves stopping fermentation to preserve the grapes’ natural sweetness. During vinification, we watch the vats day and night and add the fortifying spirit just at the right moment. At this stage, the wine’s final balance is at stake. The wine is then aged in stainless steel tanks for 6 months before bottling.
