Pinot Noir is a variety of black wine grape that comes from the French words “pine” and “black.” These dark grapes are grown mostly in France’s Burgundy region, but it is also grown all over Europe, and in parts of South America, Canada, and the United States, and Pinot Noir vines thrive in cooler weather. The variety is especially sensitive to wind, frost and diseases. Although it is considered as a variety that produces the finest wines in the world, this variety is difficult to grow and cultivate. Pinot Noir wines are popular, with black and red cherry aromas, currant notes, and berry flavors. Depending on the growing conditions, Pinot Noir wines can also produce earthy tones, tomato aromas, or a wood-like flavor. The variety is also used to create Champagne, rose wines, and vin gris wines. The versatility that this wine has when pairing with food makes it very popular. It is one of the lightest red wines in its class. Pinot Noir is an excellent companion to various poultry dishes such as chicken, pork, ham, duck, or goose. This wine is also perfect with Filet Mignon, Boeuf Bourguignon, and various cheeses. The wine is one of the versatile food wines in the world.

Ayni is the quechua name of a principle of reciporcity practised for centuries by the andean cultures, it means in order to receive something you first have to give. Ayni is also the name of our most special vineyard, located in Paraje Altamira one of the best appelations within Uco Valley in Mendoza.
Argentina has a history of sparkling wine production since the early 1960’s.
Tasting Notes: Aged for 18 months on its lees before disgorgement. It’s a creamy with a nice toast aroma. It is made in a well-balanced style, with fine bubbles and a dry, palate-cleansing finish.
Vineyards: 100% Altamira in the Uco Valley subregion
Soil type: Sandy loam over calcium carbonate coated gravels, 30 to 50 cm deep
Grapes: 100% Pinot Noir
Average age of the vines: 10 years
Winemaking: Methode Traditionnelle (Champenoise). Aged sur lattes for 18 months. Made following the tratidional method, fermentation goes until it gets totallay dry. No liquor is added to keep the freshnes, elegance and purity of is clean profile.

Bachelet Bertrand Chassagne Montrachet Rouge is made from 100 percent Pinot Noir.
The Chassagne-Montrachet appellation is originally better known for its white wines, but also produces high quality red wines. The complexity of the terroir allows both varieties to thrive side by side.
The wine is produced from vineyards located in the villages of Les Lombardes and Les Benoites that benefit from iron rich clay soils. A ruby garnet color, and an expressive nose of spices and red fruits that echo on the palate.
Pairs well with a nice cut of red meat.

Paul Hobbs Beckstoffer Dr. Crane Vineyard Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon.
Grown on the west side of St. Helena, this distinctive cabernet sauvignon clearly displays its origins with a rich garnet hue and sophisticated aromas of cacao bean, crème de cassis, and sweet tobacco on the nose. Layered, with a superb structure, the wine offers impressions of blueberry coulis, black raspberry, and savory herbs like Herbs de Provence. The weighty mid-palate unveils anise spice and a graphite mineral note that combines with a fresh acidity that extends the long finish.

Needing plenty of air to show at its best, the 2019 Cabernet Sauvignon Beckstoffer Dr. Crane Vineyard is a sensational, gorgeous Napa Valley Cabernet that delivers the goods like only this region can. Pure Cabernet magic on the nose, with deep blackcurrants, smoked tobacco, lead pencil, and a kiss of spring flowers as well as a beautiful Pessac-Leognan-like scorched earth character, it hits the palate with full-bodied richness, silky tannins, no hard edges, and a great, great finish. It's one of those wines that builds incrementally on the palate and it's only after the second or third sip that you realize how special this wine is. It also offers that rare mix of power and elegance that's the hallmark of all great wines. It needs a couple of hours in the decanter if drinking any time soon. Hats off to Paul Hobbs for an incredible Napa Valley Cabernet Sauvignon.

Gaja Sperss is made from 100 percent Nebbiolo.
Vibrant and intense notes of herbs and spices such as thyme, cloves and black pepper. On the palate the wine is tense, loaded with energy that will need serious ageing to fully develop although extremely approachable in its youth. Impressive fruit concentration, with dark and ripe fruits – prunes and black cherries. Acidity and tannins lift this wine to its freshest expression.
Nebbiolo based wines have not only complexity and structure but also great elegance and finesse. The distinctive silky tannins of the Nebbiolo make it the right wine to drink with meat. Usually a young vintage goes very well with richer dishes because of the stronger tannins; mature Barolos are more suitable with delicate white meat courses or braised meat courses with sauces or concentrated red wines reductions.
Review:
The 2019 Barolo Sperss is rich with dark mineral earth, black cherry, and Earl Grey tea. Long and mouthwatering, it has a powerful structure while retaining finesse. It is fantastically balanced, with gripping tannins, fresh acidity, and notes of forested earth and ripe red berries. A wine for the long haul, this is another great and noble wine to drink over the coming three decades.
