Seven has been brewed by making use of soft ground water from Echigo Yuzawa, which is the utmost characteristics of Shirataki. This sake features fruity and elegant aromas of peach, coconut and orange complimented by floral, ginger, cucumber and almond. On the palate, generouse and rich flavors of honeydew, almond and toasted rice, with balanced acidity and smooth aftertaste.
SEVEN - The name "SEVEN" reflects the intention of brewing new sake in a new era with two seventh generations.
The current head of Shirataki Sake Brewery, Shintaro Takahashi, represents the seventh generation.
The general manager of a sake brewing is called a toji. In 2018, Takaki Matsumoto was appointed as the seventh generation brewer at Shirataki Sake Brewery. He was 27 back then - a young new toji who will open up a new chapter for Shirataki Sake Brewery.
Seven is the first brand that Mr Matsumoto planned from scratch as a chief brewer.
The finest sake rice is luxuriously polished to a rice polishing ratio of 25%, and carefully brewed in small tanks during the coldest months of January and February. The mash is pressed with a traditional press called "fune" and the mash is poured into bags. The bags are laid or hanged in a fune, then the fresh sake is squeezed out naturally. No dilution with water was done to enjoy a fresh and rich taste.

This Junmai Daiginjo has a beautiful nose full of banana, melon and star anise. The all natural brewing process gives this sake a bright fresh palate of plum, lime and minerality with a clean dry finish. A very food friendly sake, and is thought to be best after the meal with a light, smooth, rich cow's milk cheese.

Eikun, also known as Saito Shuzo Co. LTD., founded in 1895, is located in the Fushimi region of Kyoto Japan
In 1905 during the Taisho period in Japanese history, the "EIKUN" sake was adopted as the company's corporate brand name. Since then, the finest quality sake has been produced by Saito Sake Brewer known as "EIKUN" which is acknowledge today as the finest Sake produced in the Fushimi district of Japan famously known to sake lover for its premium brewed sake.
Over the years, the company has become a leader in the sake industry and the pioneer for the development of quality premium sake in Japan.
ushimi region is home to 30+ other breweries due to the quality of its water source. This soft water plays an instrumental part in creating smooth and balanced sake. Food and Sake in Kyoto
Kyoto is home to many Shinto shrines and a particular type of cuisine called Kaiseki. Kaiseki is a sequence of small and artistically arranged dishes, both beautiful in presentation and flavor.
"Kaiseki" in Kyoto cuisine is all about "Dashi (broth)" and it’s "Umami". So the taste of food is elegant, and they don't usually put a lot of soy sauce or salt in Kyoto cuisine.
Therefore, the sake flavor is kind of gentle and soft to match with local Kyoto cuisine.
This western area of Japan around Kyoto blends sake and culture into a perfect marriage.
Eikun Sake isn’t just known at the consumers market level, but it is also very well received at traditional high end Japanese restaurants though out Japan where people come to enjoy the traditional taste of Japanese cuisine and to enjoy the unique experience of Eikun Sake.
Best of the Best Sake
Each year since the 1890’s there is a competition "Shinshu Kanpyou-Kai" (National New Sake Competition) now called National Competition, which judges sake quality. Eikun has received the gold medal for their sake an unprecedented 14 years in a row.
Only 20-25% of all Kura receive gold medals each year.
In addition, no Kura or brewery has received the award 14 times consecutively. The National Competition is attended by 90% of all 1300 Kura in Japan and is for Daiginjo grade products only.
About Kyoto
The City of Kyoto was founded as "Heiankyo" in 794 A.D. It flourished as the capital of Japan for approximately 1,000 years and was the birth site of the quintessential Japanese culture and traditions one finds throughout the country today.
Even after the transfer of the capital to Tokyo during the Meiji Restoration in 1868, Kyoto maintained its position as Japan's cultural capital. It is home of various national treasures worthy of global pride as well as many historical buildings and traditional arts and crafts. Kyoto's rich and colorful history, combined with its geographic and climatic factors have created a city with a very unique blend of tradition, culture, and industry. Kyoto was laid out in a grid pattern with the Imperial Palace located at its center.
TASTING NOTES:
This is a classic, delicious Honjozo with crimini mushroom, almonds and lilac aromas. The first sip of this sake is full of stone fruit and minerals complimented by notes of caramel, cocoa and almond and finishes with plenty of umami.

This sake has aromas of gardenia, ripe kiwi, papaya, green peppercorn, aged comte cheese and notes of nutmeg, mushroom, toasted oat and yeast. This sake is bright, dry and lively with medium plus acidity, and full bodied on the palate with a long finish.

Emilio Rojo Ribeiro Blanc is made from 80% Trajadura, 20% others.
Emilio Rojo is produced on the hillside facing the morning sun of the Avia Valley. The vineyard has been tirelessly worked for over 30 years and through these efforts it shaped an iconic landscape that is defined by its perfect terraces and artisanal viticulture.
Emilio Rojo has been designed to transcend time. A wine made in communion with Nature and attached to the roots of the vines that faithfully express the character of the place. Emilio Rojo is the perfect fusion of the man and the vineyard.
Emilio Rojo is a blend of different local varieties (treixadura, lado, godello, caíño blanco, albariño and torrontés) that resulted in a delicate, but tense and lively wine. A complex nose that opens with time, marked by round, citrus fruit notes and floral nuances. An energetic and elegant feel with great depth that leads to a long, full finish. An honest representation of this unique plot.

2019 was the first vintage under the new ownership, a very good year with mild weather and a quiet harvest when they picked the grapes with no stress. The 2019 Emilio Rojo is a blend of all the grapes in the organically and biodynamically farmed (but not certified) vineyard—Treixadura, Godello, Albariño, Torrontés, Loureira, Caíño Blanco, Lado, etc. The grapes were picked in two passes and fermented with indigenous yeasts in stainless steel followed by 14 months in tank. It's 12.5% alcohol and has a pH of 3.42 and 6.9 grams of tartaric acid per liter (acidity). This might be released in November 2022, after almost two years in bottle. It has a strong herbal strike on the nose, spicy and nuanced, elegant and harmonious. It has great balance and a brilliant texture with fine granularity and a long, tasty, almost salty finish. 2,190 bottles and 300 magnums produced. It was bottled in December 2020. They produced less as they moved to organic viticulture, and unfortunately, there will be even less wine from 2020.

Lismore Estate Reserve Viognier is made from 100 percent Viognier.
This a Greyton WO.
Balance is the key to this wine. Viognier is an aromatic and generous varietal, it benefits from barrel maturation and lees contact with a fuller mouth feel and increased texture. This combined with the firm acid backbone and intense fruit will allow this wine to integrate beautifully and gain further complexity over the next 3-5 years.
Rich, lush and decadent. Viognier is a gorgeous variety. Honeysuckle, peaches and dried apricot with a lingering citrus finish. A clean fresh acidity supports the extravagance of the nose and the palate.
Viognier, a traditional Rhone variety is perfectly suited to Lismore’s cool-climate terrior. The vineyard block is on decomposed shale and one of the healthiest and well balanced on the farm. The entire team looks forward to the Viognier harvest and the beautiful amber tinged berries.
The grapes were picked at optimal ripeness and whole bunch pressed, slowly extracting the juice at a rate of 500ltrs per ton. The juice was settled for 48 hours and was racked into burgundian barriques (1st fill) for fermentation and maturation. The wine was left on the lees with regular “batonnage” for 11 months.
Lighter styles are often paired with curries and the like. This Viognier is different. We recommend medium bodied meals that are intense and complex. For example:
- Sesame encrusted tuna marinated in a blend of orange, lemon and lime juice spiced with sesame oil and balsamic vinegar – seared on a wood fired grill and served with griddled vegetables, or
- Free range duck breast smoked with Darjeeling tea and coriander leaves. Set on a cinnamon poached pear glazed with a gooseberry jus.
In both of these dishes, the fruit and floral aspects of the wine are complimented by the exotic and aromatic elements in the dish which are also highlighted by the spiciness from the oak fermentation; the fresh acidity freshens the palate, and yet the Lismore Viognier has the body to hold up against the weight of the duck or the tuna. It is also gorgeous with a well laid cheese platter.
