Sake Jozen Mizuno Gotoshi Hiyaoroshi (720ml)

Hiyaoroshi is a general term referring to sake that has been pasteurized once in the winter and then allowed to mature over the summer before distribution in autumn. The Japan Sake Brewers Association designates September 9th as the official start for Hiyaoroshi sales. (Essentially aged Namazume)

September 9th is known as Kiku-no-Sekku (“Chrysanthemum Festival”), where hundreds of chrysanthemums are displayed around various venues and chrysanthemum sake is served. The chrysanthemum (kiku) was brought to Japan from China during the Nara period. In 1183, it was adopted as the Imperial Seal of Japan, and during the Meiji period no one but the Emperor could use it. Nowadays it still represents the authority of the emperor and you can see it everywhere in Japan.

Aromas are forward, fresh, and fruity in the nose with notes of sweet melon, cherries, and hints of vanilla. Flavors on the palate evoke feelings of the season with pumpkin pie, roasted nuts, and stewed plums. This sake is medium-bodied and accented by medium acidity, showing classic Jozen minerality and a lingering dry finish. Additional 7 months of aging adds depth and roundness.

{Pairs with roasted poultry, baked ham, butternut squash ravioli, BBQ, and dishes with sweet spice.

Sake Sawahime Tokubetsu Honjozo

This inviting Honjozo is full of floral, quince, dried mango, anise and hazelnut aromatics. On the palate this sake has medium body and a smooth mouth feel.  Forward flavors of persimmon and black pepper with lively acidity gives this sake a beautiful balance.

Pair this with: Salmon teriyaki, chicken meatballs, glazed ham, spinach and bacon salad; served warm with Shabu Shabu

Sake Sawahime Yamahai Junmai (300ml)

From the Tochigi Prefecture.

This sake has aromas of gardenia, ripe kiwi, papaya, green peppercorn, aged comte cheese and notes of nutmeg, mushroom, toasted oat and yeast. This sake is bright, dry and lively with medium plus acidity, and full bodied on the palate with a long finish.

Sake Senjo Junmai Daiginjo (1800ml)

Juicy & Refreshing. Full of fruity flavors with clean sweetness. Brewed with Hitogokochi, the special sake rice harvested in Nagano, and natural water slowly filtered down the Japan Alps. In 1866, toward the end of the Edo period, Matsujirou Kurogouchi and his family started a small sake brewery currently called Senjo named after Senjo Ga Take, a 3000-meter peak in the Japanese Alps. Today Senjo Brewery strives to combine art with science and old skill with new technology by adding modern twits to the rich historical traditions of Sake brewing.


Pair with Deep-fried fish with sweet & sour sauce, Young sweetfish tempura (chiayu tempura), Caesar salad.

Salette Floc Gascogne Blanc NV

Salette Floc Gascogne Blanc NV  is made from  1/3 of Armagnac and 2/3 Colombard fruit juice

 Intense fruity and floral aromas. Round, fresh and fruity in the mouth.  Almond, jasmine, roses, honey, black fruit and condiments are characteristic notes.

The alcohol percentage is between 16–18 % vol. After blending, the Floc is kept for 10 months in the cellar of the producer and must be approved by a committee of experts before it can be sold under the appellation Floc de Gascogne.

It is used as an aperitif most often, but also as a dessert drink. It should be consumed while cool, and is suberb on ice.

Perfume of cherries, cocoa, tobacco and black pepper. On the palate it is complex and deep, elegant and robust at the same time, harmonious and with an excellent tannin.

Amarone della Valpolicella Classico is "the essence of the territory", structured but also fresh at the same time.

San Giorgio Ugolforte Brunello di Montalcino 2018

San Giorgio Ugolforte presents a dark core of red and black berry fruit layered with earth, leather, smoke, and herbs. Complex and elegant, the wine is full on the palate and firm in tannin structure. Refreshing acidity frames a graceful finish. Classic Brunello di Montalcino.


 Review:

This red is marked by cherry, plum, thyme, sage and loam aromas and flavors. Lively and firmly structured, featuring a saline undercurrent. An open-knit version, with nice equilibrium, fine energy and a long, resonant finish.

Moving to the 2018 Brunello Di Montalcino Ugolforte, its rich ruby hue is followed by aromas of cherry candy, wild raspberry liqueur, rosemary, and violets. On the palate, it reveals medium to full body, ripe tannins, black cherry fruit, crunchy acidity, and a hint of sage. It offers a bit of warming spice without being heavy and displays the transparency that is typical of the vintage. Drink 2024-2040.

Saumaize Michelin Pouilly-Fuisse Pentacrine 2022

 Saumaize Michelin Pouilly-Fuisse Pentacrine made from 100 percent Chardonnay.

The name Pentacrine is derived from a small marine star-shaped fossil found in some soils on the Vergisson rock - the emblem of the estate. The cuvee is a blend of grapes from five different parcels of the Vergisson rock planted on scratched limestone. It is vinified in large barrels (demi-muids) in order to enhance the freshness of the wine.

Tropical and citrus fruit aromas and mineral character are followed by complex citrus and apple flavors balanced by a refreshing acidity. A deliciously pure and fresh white wine.



Saumaize Michelin St Veran Les Creches 2023

Saumaize Michelin St Veran Les Creches is 100 percent Chardonnay

The vines for Les Creches are situated in Davayé and planted on limestone based soils with a good amount of soft chalk. It is a blend from grapes from two different parcels; one 40 years old and the other over 60 years. The older vine brings subtlety and depth, and the younger vine bring minerality and freshness.

Elegant and fruity nose supported by a good minerality. Round, rich, fresh and well balanced. Luscious honey and citrus flavors with hints of butter and a delicious citrus finish.

 

Saumaize-Michelin Pouilly-Fuisse Premier Cru Vers Cras 2023

Saumaize-Michelin Pouilly-Fuisse Premier Cru Vers Cras is made from 100 percent Chardonnay

2006 marked the purchase of part of the original sharecropping of the vines, including “Les Crays”, half of which had previously been returned to the owner.

 This vintage is made up of two small plots, one 50 years old, the other 30 years old, covering 24 ares. Density: 9,000 vines per hectare

Located on the southern slope of the Vergisson rock which climbs very quickly: 320M at the bottom and 390M in altitude at the top, its situation is very sunny with a lot of wind. A blue marl soil covered by the scree of the Vergisson rock, we find some iron oxide.

Hand-picked, crushed, pneumatically pressed, full fermentation in Burgundy French oak barrels (15% new). Aged for one year on fine lees. Bottled according to the lunar calendar by us, without filtration.

Nose with aromas of ripe fruit, with mineral notes. Generous palate with beautiful body. Finish with tension and salivation. Discreet in the first year, its minerality is very fine but with a lot of depth.

It is best enjoyed at 12°C with all meats in white sauce, Burgundy snails, fine fish and even certain strong cheeses.


Saumaize-Michelin Pouilly-Fuisse “Clos sur la Roche” Premier Cru 2023

Saumaize-Michelin Pouilly-Fuisse “Clos sur la Roche” is made from 100 percent Chardonnay.

Produced from the oldest parcel of the estate dating back from 1979 and planted on the slopes of the Vergisson Rock, "Clos sur la Roche" benefits from a south sun exposure. This beautiful Chardonnay offers abundant floral and white fruit aromas, toasty and buttery notes and brioche scents. Well-balanced and concentrated on the palate with a rich structure and refreshing notes of zesty lemon and mineral purity that brings a vibrant energy to the finish.

Complex aromas of soft citrus fruits and minerals. Densely packed and fresh, with intense, complex flavors of white fruit as well as a hint of spice. The finish is very firm, long but not dry.
