Freemark Abbey Sycamore Cabernet Sauvignon is made from 88% Cabernet Sauvignon, 7% Merlot, and the rest Petit Verdot and Cabernet Franc.

Wine Profile: Opaque dark ruby describes the color of this Rutherford wine. Black currant and Boysenberry notes dominate the aroma, with dark chocolate truffle, cocoa powder,  Worcestershire sauce, cremini mushrooms and forest floor adding to the complexity. The oak adds the ideal amount of complexity with aromatic cedar, cinnamon and clove. The wine has great depth of black fruit flavor, with a strong expression of sweet black cherry. This full-bodied cabernet sauvignon has resolved tannins yet firm structure, with good acidity. Lovely long finish!

Primary Vineyard: Sycamore Vineyard—Rutherford (100%): Small 24-acre vineyard located about 1.2 miles south of Bosche, right up against the Mayacamas Range, this vineyard has a rich clay loam. Sycamore Vineyard produces small berries reminiscent of mountain fruit berries, with intense extract of color and flavor. The color is very dark early in the fermentation, with flavors of black currant and black berry with a forest floor complexity.

From a vineyard closer to the Mayacamas Mountains and first made in 1980, the 2016 Cabernet Sauvignon Sycamore Vineyards checks in as 88% Cabernet Sauvignon, 7% Merlot, and the rest Petit Verdot and Cabernet Franc. It spent 27 months in 66% new French. It offers more black fruits, earth, tobacco, cedar, and gravelly minerality as well as a touch more burly, masculine style on the palate. Nevertheless, it's still beautifully balanced, has considerable elegance, and a great finish.

Deep garnet-purple colored, the 2016 Cabernet Sauvignon Sycamore Vineyards gives up powerful crème de cassis, dark chocolate-covered cherries, mulberries and baked plums scents with hints of lavender, camphor, pencil shavings and dusty soil. A co-fermentation of Dijon clones 113, 667, and 777, this wine expresses the volcanic soils of the Dundee Hills elegantly, yet powerfully. Upon arrival, the grapes were immediately de-stemmed into an open-top two-ton fermenter. Following a seven day cold soak, the wine started fermenting slowly at a cool temperature. To manage extraction, we utilized one to two punch-downs and one pump-over per day, with two rack-and-returns at the beginning and middle of fermentation. As fermentation neared the end, the must was heated to achieve a peak temperature of 94° F resulting in optimum extraction, and then we immediately chilled the wine to extend the time on the skins, while switching to one pump-over per day to limit harsh, seed-tannin extraction. After a total of 19 days on the skins, we drained and pressed the wine, keeping the free-run and press fractions separate. This bottling contains only the free run fraction. Following two days of settling, the wine was racked to barrel and aged for 11 months in 25% new French oak and one month in tank prior to being bottled unfined and unfiltered.

Vivid red. Displays fresh red/dark berry and pungent floral aromas, along with suggestions of cola, mocha and five-spice powder. Appealingly sweet and energetic on the palate, offering intense black raspberry, cherry-cola, spicecake and rose pastille flavors that tighten up slowly on the back half. Fullerton Three Otters Pinot Noir is made from 100% Pinot Noir - 7-40 years old

This Willamette Valley blend hails mainly from three different vineyards in the north, east, and south of the Willamette Valley, with a smaering from five of Fullerton's other sites. The soils of the vineyards represent the breadth and diversity of the Willamee Valley with both sedimentary- and volcanic-based soils. 

Blueberry and ripe strawberry with a dash of baker’s spice, bramble, and herbs. The palate carries the fruit forward elegantly with balanced tannins following. Intriguing complexity and depth—an impressive wine for all.

This wine comes from 100% destemmed rotator barrels fermented at ambient temperature reaching a peak temperature of 73° F. The rotator barrel spun twice daily during fermentation yielding a gentle extraction. After fermentation, the wine went through a three-week extended maceration, allowing the tannins to polymerize, soffening the wine. Aged for 12 months in French oak barrels and three months in tank, the wine was then bottled after filtration.
This wine is handled very gently in the cellar allowing the nuances of the delicate fruit to be preserved and the wine to be very approachable in its youth. We have a preference for pump-overs versus punch-downs for its smoother extraction and softening effect on the tannin. To retain freshness and verve we age most of the wine in tank. However, we softened up and rounded out about 25% of the blend in barrel. The result is a fresh, fruit forward, yet earthy and intriguing, Pinot Noir.

Serve this wine slightly chilled, and pair it with dishes of earthy mushrooms, like chanterelles and morels, light cuts of meat, charcuterie and cheese.

Gambellara Lessini Durello Spumante Brute is 100% Durella.

Color: Soft and bright straw yellow
Bouquet: A citrus fresh fruit bouquet
Taste: Slightly acid, fresh, with green apple hints

The grapes are collected and transported to the winery in small trailers to prevent the grapes from being squashed, then follows immediate separation of the skins from the stalks purifying of the must and long fermentation at 18 °C.

This is a Charmat method (The secondary fermentation didn't take place in the bottle, but in a vat, which makes it slightly different than the Champenoise method used in Champagne).

To serve with seafood starters, soups, egg dishes, shellfish, seafood and white meat. Very good as aperitif. The perfect match is with the "Baccalà alla Vicentina", the traditional dish of our land.

This single-vineyard Chardonnay is produced in the village of Clessé, in the heart of the Mâconnais region in Burgundy, from 45 year-old vines planted on the limestone based soils of the Mount Epin.

Harvest is made by machine on non-irrigated vineyard. The wine has been aged on fine lees for 10 months with the major part in a stainless steel vat and the remaining in new oak barrels made out of French oak of a high quality.
No use of sulfites during harvest and vinification.

Fresh, ample and full-bodied on the palate, the wine is perfect by itself as an aperitif and delicious during the meal with grilled fish tacos or a Pad Thaï.

Grand Veneur Chateauneuf Du Pape Vieilles Vignes is made from 50% Grenache, 40% Mourvedre, 10% Syrah

Matured in concrete vats (40%) and oak casks (60%)

It boasts an inky/purple color in addition to a gorgeous perfume of crushed rocks, jammy black fruits, charcoal and graphite. Blackberry aroma with an air of dates pressed in alongside – this is sweet-noted. It is easy to appreciate, a sleek and stylish start. The palate holds excellent fruit that runs well and has kick. Its tannins move round freely and a minted finale comes forward. Its dark fruit is tasty, darkens on the finish, where tar and char from its oak enter. It is all very much together, a bundle of harmony, and will gain local attributes as it ages.
An outstanding Chateauneuf du Pape which display the best of its terroir.

The vines are 50 to 100+ year old. They are planted on red clay soils covered with pebble stones.

Harvest is destemmed and crushed. Fermentation temperature is controlled at 30°C. Vatting period of 18 to 20 days. Matured in concrete vats (40%) and oak casks (60%).

The vineyards are located in the north of Châteauneuf du Pape. GRAND VENEUR «Vieilles Vignes» cuvee is produced from the older vines. Thanks to time and an organic growing, roots go very deep in the soil. Yields are naturally low and grapes highly concentrated.

Playing in the medium to full-bodied end of the spectrum, it’s flawlessly balanced and has terrific tannins, a stacked mid-palate, and a great finish. Grand Veneur Chateauneuf-du-Pape Rouge Les Origines is made from 50% Grenache, 30% Mourvedre and 20% Syrah

Matured in vats (grenache) and in oak casks (syrah and mourvèdre).

Deep and brilliant, purple-red colour. An exciting nose with aromas of black fruit (blackcurrant, cherry) spices and vanilla. This great aromatic complexity is found on the palate : the spices and ripe fruit appear with an elegant woodiness and harmonious tannins. The finish has good aromatic length and introduces a touch of liquorice and pepper.

A terrific Châteauneuf du Pape with great concentration and finesse.

Best between 2 and 20 years. Best to decant if young (less than 5 years old).

Soil type Extreme north of Châteauneuf du Pape. This plateau is made with a high quantity of red clay mixed with rocks. This area is considerated to be one of the best to produce rich and powerful red wines. By definition, LES ORIGINES will always deliver a great complexity and ageing potential. Winemaking & ageing Harvest is sorted by hand, destemmed and crushed. Fermentation temperature is controlled at 30°C. Vatting period of 18 to 20 days. Guillemot-Michel Vire-Clesse Charleston is made from 100 percent Chardonnay.

This cuvée is produced from hundred-year old vines that the great-grandfather planted after he returned from World War I. The family wanted to honor his memory and vinify these vines the same way he did, in old demi-muids.
Charleston is a deep and complex wine that gently express itself in the glass, offering juicy white fruit flavors and a lengthy finish.

Charleston is vinified and aged for one year in demi-muids of over 10 years old. During the following harvest, the wine is racked and placed in vats for another 6 months of aging before bottling.

Fish in white sauce, poultry in creamy sauce, hard cheeses.

The everyday Pinot Noir, juicy, ripe cherry and berry fruits. Fine tannins and refreshing accidty, supported by dark cherries, raspberries, black pepper, and dark cocolate add drinking fun. A pleasant companion all day long.

Pair with handmade Pasta with game, boar or hare tomato sauce. Lasagna, Parmigana, or a veggie pie. Also delcious with a grilled rack of lamb.

The Cabernet Sauvignon Casey’s Lakeview is similarly inky bluish/purple to the rim. Tasting like blood, this wine is dense and rich with lots of chocolate, espresso, earth and spice. It is deep, full-bodied, and again, a masculine style of wine that needs at least 4-5 years of cellaring and should keep for 25 or more years.

Lakeview Vineyard is the winery’s mid-block vineyard planted to a combination of clone 6 & 337 Cabernet Sauvignon on 101-14 rootstock. Excellent drainage from the rocky and chalky soils plus plenty of sunlight throughout the day produces wines of bold character with mouth filling flavors.

Organic farming methods are used to produce this Cabernet Sauvignon Casey's Lakeview vineyard. Vines are 17 years old. Ageing in French oak barrels (85% new) for 20 months, then 12 months in bottle prior to release. Non-filtered.

 Heritage School Julies Creekside Cabernet Sauvingon is made from 100 percent Cabernet Sauvignon.

The Cabernet Sauvignon Julie’s Creekside Vineyard is an impressive, opaque purple colored wine that is super-concentrated and extracted with relatively sweet tannins, a touch of chocolate and espresso, a full-bodied mouthfeel and pure, dark, primordial fruits. This is a big, masculine, concentrated wine set for long-term aging. Saying that, it has a certain accessibility, but won’t hit its prime for at least another 8-10 years and keep 25-30.

Hickinbotham Revivalist Merlot is made from 100 percent Merlot. 

The Merlot for this red wine was sourced from vines planted in 1989 and 1976 at 220-245m altitude on a western facing aspect on the estate. During harvest, we hand-picked, de-stemmed, whole berry sorted, then 100% gently crushed. We then cold soaked, with native fermentation, and pumped over daily with a minimum of 21 days on skins. Basket pressed with light pressing included in free run, heavier pressings kept separate and not included, drained directly to barrel. The wine was racked and returned three times during maturation for 15 months, aged in fine-grain Bordeaux coopered barrels of which are approximately 25% new.

Deep ruby. Lush cherry-cola, blackberry and mocha qualities on the deeply perfumed nose, which is complemented by suggestions of candied rose and vanilla. In a round, generous style, offering sweet dark berry and fruitcake flavors that are supported by an undercurrent of juicy acidity. Pliant tannins frame an impressively long, sappy finish that strongly repeats the cherry and floral notes. 50% new French oak.

Light yellow with a pale straw hue. A classic nose of lemon, fresh stonefruit and melon. The palate is clean and fresh with mineral characters underpinning ripe pineapple and lime flavours. This wine will age beautifully over the next 4-5 years.

This non vintage wine sparkles to the tune of a well balanced blend; predominantly 3 year old Shiraz aged in old French oak barrels allowing wonderful smooth integration of fruit and a rich weighty texture across the palate. This is blended with a touch of younger vintage Shiraz to bring ripe juicy varietal fruit characters to the finished wine.
Deep crimson color with brick red mousse and a fine bead. The aroma displays ripe plums, earthy notes and spice. Mouthfilling flavors of plums and prunes with hints of liquorice. Soft, creamy with a persistent cherry, chocolate and spice finish.




 

Johann Michel Cornas is 100% Syrah

This Cornas is a blend from 2 different vineyard sites: 
- 60% of the final blend is from vineyards located on a hillside (16 year old vines on the "coteau"), planted on sandy soils, decomposed granite and some rocks, giving the structure, spiciness and licorice flavors to the blend.
- the other 40% of the final blend comes from the bottom of the slope (40 years old vines on the "pied de coteau"), planted on sandy soils, bringing acidity and balance to the wine.

Expressive, deep, rich, silky and juicy. Well structured and round, it displays red fruit, leather, black cherry, liquorice and black berry aromas.

"Bright and intense both in color and in aroma. Hyper-fresh, searching berry fruits, this is electric. Rounded, with plump berry fruits that are concentrated and fresh. The tannins are intense too, grippy and strict on the long finish. This is almost painful to taste at this stage, but should be excellent in time. Vines with an average of 35 years of age, from lieux-dits Saveaux, Patou and Les Côtes, all destemmed and then aged in two- to five-year-old demi-muids. - Matt WALLS"
