Babylon's Peak winery, situated on the highest weathered granite slopes of the Paardeberg Mountain, is privately owned by the Basson family who has passed down the tradition, passion and art of winemaking over four generations. Predominantly low-yield dryland bushvines are selected to produce these excellent wines with distinctive character.

The Chenin Blanc grapes were picked from very old dryland bushvine vineyards. The vineyard grows on weathered granite soils, contributing to the flavor of the grapes and mineral character of the wine. Production is limited to 5 tons/ha.
The grapes were harvest by hand at 22.1°B. The grapes were destalked and lightly crushed. Only the first 450 litres free-run juice per ton were fermented in stainless steel tanks at a cold temperature (10-12°C) for 21 days. The wines was left on the fermentation lees until bottling.

A crisp, fresh and fruity Chenin Blanc from low-yield dryland bushvines.

Beliere Bugey-Cerdon is made from 95% Gamay, 5% Poulsard (a local grape from Jura).

Spontaneous fermentation. An altogether preferable scenario to spontaneous combustion, and A LOT more fun to drink. This pink, semi-dry bubbly was made by spontaneous fermentation, otherwise known as methode ancestrale. Grapes are picked by hand (not just any grapes, these are the local Poulsard and Gamay grown on mountainous slopes in the shadow of the Alps), and fermented in chilled vats just reaching 5 or 6 degrees alcohol. The young and light wine is then bottled, along with its active yeast and considerable unfermented sugars. Under pressure of the cork, the wine continues to ferment, gaining a few degrees of alcohol but retaining a nice amount of sweetness. The bubbles, of course, are another result of fermentation under pressure. This one is so delicious and fun to drink, with a distinctly, well, grapy aroma and a fruitiness that calls out for celebration and jubilation.
This is also wonderful served with chocolate cake!

Produced from the "Ancestral method" (also used to produce Clairette de Die): Low temperature fermentation starting in the tank, light filtration that leaves active yeast in the wine, bottling of the wine with fermentation continuing in the bottle ("spontaneous fermentation in the bottle"), retaining some sugar (40 gr/liter at the end). Made from 95% Gamay, 5% Poulsard (a local grape from Jura).

Copper/rose hue and ripe soft aromas of orange, spice and flowers. The wine is full bodied with the texture of silk and flavors of orange custard, white peach, pear, apricot, toffee and orange peel.

The vineyards and their terroir are the essence of our wines. This is where everything starts and where we focus our efforts throughout the year. You can’t make great wine without great grapes.

The viticulture is essentially done by hand. Five people work full-time in the vineyards. They are supplemented by seasonal employees who work during bunch thinning and the harvest in order to bring out the very best in our vines. Working by hand and the attention each vine gets are fundamental. Pruning, de-budding, trellising, leaf removal and picking are thus carried out by hand with the utmost care.

We prepare the soil by using good old-fashioned ploughing. Organic compost is made from grape marc (the discarded stalks and skins).

As a way of protecting the plants, we only use phytosanitary products when necessary and within strict guidelines by staggering the treatments appropriately, to minimise the amount of chemicals used. We prefer to use as much as possible manual and organic techniques . Leaving natural grass cover, removing buds and leaves from the vines, preserving biodiversity around the vineyard: olive, almond and cypress trees, wild rosemary and capers.

In the spirit of respecting traditional techniques and the best elements of modern technology, cellar manager Andrew Hall and his winemaker son Romain Hall take family traditions very seriously.

To appreciate as well with duck breasts and figs. Served with a roquefort or a silton, it is marvellous. Simply as an aperitif with some dry fruit or grilled almonds. It's also a good compagnion for a classy cigars.

Often described as a Booker flagship, Fracture is one of the world’s great Syrah's. Only the softest Syrah in barrel makes the cut for this dense and powerful wine. The namesake pays homage to the calcareous soil in our vineyard, the limestone causes it to ‘fracture’. Deep and mysterious at first sight, the 2018 vintage is rich and velvety on your palate. There is an interesting balance of earth and fruit, with traces of sweet beets, dark plums and chocolate. Though this silky wine will pair with anything, our thoughts are going to salty popcorn by the fire or Dutch Gouda cheese with some black truffle mustard.

The 100% Syrah 2019 Fracture comes all from the Booker Estate Vineyard and is another pure, balanced, incredibly classy wine from this estate. Loads of darker fruits, ground black pepper, crushed stone, and scorched earth give way to a medium to full-bodied, powerful, concentrated Syrah that will benefit from 2-4 years of bottle age and cruise for 10-15 years.

Tasting Notes

Brunella is distinguished by a careful selection of grapes, perfect destemming, long macerations with submerged cap. The barrels for Brunella are specifically chosen by the winemaker.

Wine Production

Brunella is one of the most historic single vineyard sites of all of Castiglione Falletto, however it hasn’t ever been bottled singularly under the Menzione Geografica Aggiuntiva BRUNELLA until 2013. The Brunella vineyard occupies the western crest of the Villero hillside and complete surrounds the Boroli winery. The vineyard is a monopole—owned entirely by Boroli and is the most prestigious wine in the lineup. As it occupies the best exposed section of the Villero hillside, La Brunella expresses power, drive, complexity, and extraordinary length and ageability.

About the Vineyard

The Boroli family is a family of entrepreneurs, with roots in Piedmont dating back to 1831. The family started their winemaking business in1997, when Silvano and Elena Boroli felt an ardent desire to step away from the pressures of their publishing business and reconnect to nature. Silvano and Elena grew the company until their son, Achille, stepped in to run the wine-growing and production business in 2012.

With the 2012 grape harvest Achille decided to radically change the methods used in vineyards and wineries, aiming for the highest quality in Barolo and its crus. He cut production levels, updated the winemaking technology, and focused on low intervention methods to raise the quality of the Boroli wines be on par with the finest Barolo wines.

Castellare’s top wine, ranked in the Wine Spectator Top 100 on multiple occasions and recognised with the prestigious Gambero Rosso’s Tre Bicchieri and Bidenda’s Cinque Grappoli ratings. The company takes great pride in demonstrating the greatness of the Sangioveto variety, paired with Malvasia Nera, achieving a worldwide position of sixth place.

I Sodi di San Niccolo is produced solely with native varieties: 85-90% of Sangioveto and 10-15% of Malvasia Nera, I Sodi comes from the two best crus of the farm.

The word "I Sodi" was used by the Tuscan farmers to describe those grounds which had to be processed by hand, being too hard (in fact firm) or too steep to allow for the employment of the horses, unlike the "fields" that make the grounds more easily cultivable.

Super fragranced nose, patchouli, pot pourri, Turkish Delight, rose with caramelised red berries and a touch of smoke and incense - all quiet forward and expressive. The nose alone you could smell for hours such is its complexity and beguiling nature. Powerful and concentrated on the palate, this is broad and muscular, sinewy with depth and determination. Tannins are well integrated, really giving the support to the fruit and acidity, driving the flavours forward despite the clear weight and hold. Fragranced red berries continue on the palate with a touch of stone, graphite and matchstick. Rich and big on the mid palate, becoming more focussed towards the finish. Cleary well made with lots going on. Acidity is great, it's cool, clean, sleek and packed full of flavour. Charles Heidsieck Vintage Brut is made from 57% Pinot Noir, 43% Chardonnay.

A beautiful golden robe offers glints of green accentuated by a delicate, dynamic effervescence. The initial nose introduces intense toasted and smoky notes along with ripe fruit. When swirled in the glass, the nose takes on a heartier dimension with touches of apricot and vineyard peaches. The aromatic concentration, due to a heat wave of several weeks, is reminiscent of the summer sun. The attack is taut and decisive. the creamy texture, the crisp fruitiness and spiced notes of cinnamon, licorice and pepper are the hallmark of the House style.

Aged for eight years on the lees before disgorgement, the Champagne is deliciously toasty with acidity and fine dryness.

Disgorged in January of 2023, the 2013 Champagne Millésime Brut was the last vintage from the cellar master for Heidsieck prior to Cyril Brun. The 2013 Champagne Millésime Brut is a bright straw yellow color and is based on the crus of Les Mesnil, Avize, Averney, and Aÿ. It’s fresh with aromas of wet stones, fresh quince, and fresh jasmine flowers. It has a chalky and focused texture, with ripeness to balance it out, and a long, graceful finish. At this stage, it feels more forward with 57% Pinot Noir and the rest Chardonnay. A more mineral-tinged expression, it has a lot of charm and the promise of longevity over the coming two decades. Drink 2024-2044. It will be interesting to see how the Pinot shows itself over time. 8 grams per liter dosage.
