The Santenay Blanc is coming from a parcel that is 1.2 hectares in size (3 acres).
Tasting Notes:
A beautiful golden robe; a fresh nose, slightly roasted; on the palate, aromas of almonds and grilled hazelnuts, and as it ages, aromas of truffles.
Pair it with with a creamy dish, such as risotto or a hard cheese like Comté or Beaufort.
Shiny gold the wine is lively and crisp, with medium-bodied notes of melon, citrus blossom and flowers. Perfectly balanced between richness, fruitiness and freshness.
Excellent with seafood (scallops and fish) as well as poultry (chicken and turkey)
Bavencoff Bourgogne Blanc is made from 100 percent Chardonnay.
This Bourgogne Chardonnay is fresh and bright. The aromas are expressive with Honeysuckle, Broom and Mushroom. A nice balance between the acidity and the fruitiness, complementing the minerality. It will drink well during its youth but will gain some extra aromatic complexity after a few month in the cellar.

The wine offers a white gold or pale yellow color turning into darker gold with age. It boasts aromas of white flowers, (may, acacia) developing into notes of amber, honey and spices. On the palate it is mineral, harmonious and easy to like.

The wine displays a refreshing nose of lime, citrus fruits, flint, honey and a touch of dried fruit. The palate is full of flavors, with honeysuckle, citrus and some salinity with an excellent balance between acidity and roundness.

Named after our first-born daughter, Cuvée Katrina Eileen is primarily composed of fruit from a vineyard in the Western Hills of Yountville, where yields are miniscule. Castlebrae Sauvignon Blanc Marlborough is made from 100 percent Sauvignon Blanc.
This is a single vineyard wine made with fruit from Castlebrae vineyard, located at the mouth of the Awatere River. The vines were planted in 2007 and 2013 giving a nice mix of maturity.
The wine has vibrant notes of lychee, bell pepper and citrus characters on the nose. Fresh tropical and grassy characters fill the front palate, the mid palate is juicy and the wine finishes with a nice, sweet edge. The palate has a unique freshness that is due to the free draining soils found at the growing site.
Cazaux Vacqueyras Blanc Les Clefs d'Or is made from 50% Clairette, 30% Roussanne and 20% Grenache Blanc.
A wine with lively acidity, expressive aromas of fennel and white flowers. It is long and full in the mouth with minty and anisy aromas mixed with white peach flavors. Refreshing and mineral character.
Clairette grapes are green harvested to concentrate and harmonize aroma. Each grape varietal is hand picked separately. Pressing with skin contact at low temperature. Aged 12 months in stainless steel tank. (No oak)

Cazaux Vacqueyras Blanc Vieilles Vignes 50% Clairette, 30% Roussanne and 20% Viognier
The wine has a beautiful golden color.
The aromas are rich and
exotic with mango, almonds, toast, lemon, pineapple white flowers and
papaye. These aromas will develop to honey, butter and pear after ageing
for a few years.
The finish is long, citrusy and toasty.
Terroir: Slopes of sandy soil or grey limestone.
Yield: 25 -30 hl/ha
Age of the vines: 70 years old minimum. The oldest are around 90 years old.
The
grapes are pressed pneumatically after a few hours contact with the
skins.The must is kept at 20°c during the alcoholic fermentation to
optimise the aromas and respect the wine’s suppleness.
Barrel fermented an aged in 228-liter French Oak barrel for 12 months with regular stirrings of the lees.

The palate is filled with expressive black cherry, blackberry and dark plum, hints of spice box and sweet vanilla bean. The 2019 Heart of the Hill Cabernet Sauvignon is perhaps our most sophisticated bottling yet from this superlative site. The color is an impenetrable purple/black with almost no rim variation. The aromas are exotic and dusty: wild strawberries, black raspberries, dark chocolate, sandalwood, fennel and fresh violets explode in the glass. On the palate, the wine is dynamic with incredible precision and finesse, managing vibrancy alongside terrific structure. The tannins are fine and ripe, supporting deep flavors of currant, blueberries, black plum, fresh herbs and spice that broaden through a long, rich finish. Classy and age-worthy, this will continue to grow in the cellar over the next 15+ years.

Harvest decisions are made by the ripeness of fruit, sensory analysis, and the weather. From year to year decisions are driven by both flavor and physical maturity. We are looking for the moment where the flavors and balance of the grape hit true phenolic ripeness. Our team did over 6,000 miles to and from the vineyards in Steve’s truck during harvest as we sampled 2-3 times per week to ensure our picking decisions were spot on. From bud break to the barrel and finally, to bottle our goal is to stay true to our ideologies. Exacting winemaking, cellar, and lab practices drive our goals of making the best wine we can.
The art and science of winemaking is a continuous learning adventure. The true balance of winemaking is achieved when science and art collide creating a bottle of wine well worth drinking. That’s what excites us as a team. All of our flagship wines are made from only the best barrels that we painstaking select over several months.
