The 2021 Domaine Joseph Voillot Volnay Les Champans Premier Cru is from the domain’s largest premier cru holding, 4.2 acres whose vines date from 1934, 1971, and 1985. Champans is down-slope in the premier cru band, and its wine typically has more fruit and power than other Voillot Volnays.

‘The 2021 Volnay Les Champans Ter Cru has much more brightness and delineation than the Fremiets this year, with red cherries, wild strawberries and ust a touch of iodine and sous-bois. This is nicely focused. The palate is medium-bodied with sappy red fruit, fine structure, pliant tannins and a harmonious finish. Not the most complex Champans encountered from this address, yet it has class.

The 2021 les Champans is also a simply stunning example of this fine premier cru vineyard. The beautifully elegant nose wafts from the glass in a blend of red and black plums, cherries, spit-roasted quail, a complex base of soil, woodsmoke, coffee bean and a deft touch of vanillin oak. On the palate the wine is pure, full-bodied and shows off superb depth at the core, great soil signature, ripe, fine-grained tannins and a long, nascently complex and very promising finish. This is a touch more reserved on the palate than the Fremiets and will take a bit longer to blossom, but it is going to be stellar. 2034-2085.

The Domaine Joseph Voillot Volnay Les Fremiets Premier Cru is from a parcel that is up-slope, and the wine is very calcaire, or limestony; you literally taste the stone in this elegant, intensely perfumed wine. Pair with veal filet mignon, squab, beef steak and roast duckling.

I really like this terroir and the 2021 is an absolutely classic example of this fine premier cru, offering up a refined and pure bouquet of black plums, dark berries, coffee bean, a complex base of dark soil tones, a nice touch of new oak and plenty of upper register smokiness. On the palate the wine is pure, full-bodied and very elegant in profile, with a superb core, lovely soil signature, ripe, suave tannins and a long, vibrant and complex finish. The 2021 Gaja Rossj-Bass starts off with very, crisp, green fruit and much more Sauvignon Blanc dominant aromas of grassy, bright, fragrant green apple and green pepper - all very bright and cheerful. Then Chardonnay seems to take over in the medium-full bodied and pleasing creamy texture of the wine. This is balanced again by the tangy, juicy acidity of Sauvignon. This is very elegant blend of Sauvignon Blanc aromas and zestiness and the textural comfort of Chardonnay. The name Rossj is a nickname of Angelo Gaja’s second daughter, Rossanna.

Soil type DOMAINE GRAND VENEUR “Les Champauvins” stretches on 34 ha classified in Côtes du Rhône. The plots are located in the northern border of Châteauneuf du Pape, exactly from 3 meters outside the appellation. A small lane of rocks going through the rocky plateaux has been decided to be the AOC limit in 1936. Here, soils are made of red clay and rocks (pebbled stones of quartz). The quantity of rocks can be amazing as they can completely cover the soil (see picture). In summer and during the day, the rocks temperature will increase to 55°C. This accumulated heat will be get back to the vines during nights . Day after day, this unique phenomenon allow the grapes to reach a perfect maturity and produce a unique wine. Winemaking & Ageing Traditional, in stainless steel vats. Harvest crushed and destemmed. Fermentation in temperature controlled vats at 28°C. Eighteen-day vating period with “pigeage”. Grenache is aged in concrete vats, Syrah and mourvèdre in 4 years old barrelsntense, brilliant garnet-red colour. Guilhem Tournier Bandol Rouge Cuvee Luisa Jeanne is made from 95% Mourvedre and 5% Syrah.

The wine takes its name from a goddess, Luisa Jeanne.  It has a deep red color with dark brick hues, a very intense and complex nose with strong sensations of dark fruit, compote, spice, earth and garrigue, with a minty touch. Palate intense, complex and silky, full and opulent with olfactive sensations and a slightly mineral saline aftertaste accompanied by rich but ripe tannins wrapped in a fruity robe. Approachable, long, harmonious, elegant.

Late manual harvesting of left grapes, their selection according to ripeness, harvesting parcel by parcel, variety by variety, separate vinification. Long fermentation with natural yeasts to oxygenate the must, gentle extraction of color and tannins, decanting and dipping of the matoline cap to absorb the tannins and make the wine silky and expressive. Halter Ranch Vineyard Ancestor Estate Reserve is made from 60% Cabernet Sauvignon, 23% Malbec, 17% Petit Verdot,

Their flagship wine, Ancestor is their Bordeaux-style reserve blend, and an homage to the Ancestor Tree, the largest Coast Live Oak on record. The 2019 Ancestor showcases aromas of red currant and dark chocolate along with subtle hints of cinnamon and clove. The intensity and power here is very tightly held and it has a build of such precise tannins, which carry very intense and assertively ripe blackberries, dark cherries, ripe plums and blueberries. So much on offer here. This has a very bold, intense feel. Exceptional vintage. One of their finest. Try from 2028.

Kershaw Chardonnay Deconstructed Lake District Cartref CY96 is made from 100 percent Chardonnay.

Sourced from the western part of Elgin, known as the Lake District, this clone produces wines that are nervous, aromatic, elegant and sharp with slightly lower alcohol and finely balanced, the fruit profile being subtle with hints of citrus/orange peel and peach blossom and with time, some nutty elements. The Cartref soils, a mixture of decomposed granite, pebbles and quartz, adds delicacy and heightens the fruit intensity.

The inspiration for my Deconstructed Chardonnay stems from my belief that the Elgin region boasts credentials that make it world-class. To bolster these regional credentials, I have set out to prove that Elgin has both a signature grape, as well as specific ‘terroirs’ (meso-climates) that reflect intra-regional distinctions. To fully comprehend this, it is necessary to dig deeper into the DNA that make up our region. To elucidate this, I have decided to make these 3 Chardonnay wines, each selected from a specific vineyard and an individual clone. Importantly, this is an ongoing story that will unfold over the coming years.

Vintage notes:

Whilst 2017 experienced a cool winter to enable good vine dormancy, the rainfall was low and followed similar conditions felt in 2015 and 2016. Budbreak took place in ideal warm sunny conditions whilst flowering was a touch earlier than normal; strong blustery winds meant pollination took longer to complete. As a result, berry set was uneven leading to some smaller berries that despite a lower yield did have good concentration of flavours. Despite expecting an
early harvest an unusually cool December slowed down ripening whilst some January rain during veraison helped nourish the soils and more importantly, helped the vine focus on grape ripening rather than foliage & root growth. Harvest took place under blue skies in
mid-March. The net result of the drier year is that the grapes had decent natural acidity, achieved steady phenolic ripeness and plenty of intense fruit flavors.

Winemaking: 

Grapes were hand-picked in the early autumnal mornings, placed into small lug baskets and tipped directly into a press before being gently whole-bunch pressed up to a maximum of 0.6 bar or until a low juice recovery of 580 litres per ton was obtained. The juice gravity-flowed directly to barrel (no pumps were used at all) without settling. The unclarified juice had no enzymes or yeast added to it and therefore underwent spontaneous fermentation until dry, with malolactic discouraged. The wine rested in barrel for 4 months prior to judicious sulphuring and a further 7 months’ maturation in barrel before racking and bottling.

Kershaw Syrah Deconstructed Lake District Cartref SH22 is made from 100 percent Syrah.

The inspiration for this Syrah stems from my belief that the Elgin region has both a signature grape as well as particular terroirs within its demarcated boundary that reflect regional credentials. This Syrah was selected from a sub-region of Elgin from a specific vineyard and an individual clone.

Sourced from a single parcel in the Western part of Elgin, the 22 clone produces fuller, well-colored yet finely structured wines. They tend to be more concentrated as yields are low with more black fruit, black pepper and meaty notes. The Cartref soils, a mixture of decomposed sandstone, pebbles and quartz, add gracefulness and heighten the fruit intensity.

The grapes were handpicked under autumnal skies into small lug baskets and then manually sorted on a conveyor before the stems were removed. The destemmed berries fell onto a vibrating table in order to remove jacks and substandard berries before dropping uncrushed into a small 500kg conical hopper and forklifted into open-topped fermenters. The grapes underwent a 3-day maceration before spontaneous fermentation began. A gentle pigeage (punch-down of the cap) program was charted and the grapes remained on skins for 26 days. The wine was then racked to barrel under gravity and the remaining pomace basket-pressed. Malolactic then proceeded in barrel followed by a light sulfuring and 17-month maturation. No finings were necessary and the wine was simply racked and bottled unfiltered.

"The 2017 Kershaw Deconstructed Lake District Cartref SH22, matured 50% in new oak for 17 months, is a little more open on the nose compared to the SH9c and delivers a touch more red berry fruit, quite candied in style and suggesting strawberry pastilles. The palate is medium-bodied with a saline entry, fine definition and a mélange of red and black fruit laced with licorice toward the poised finish. Excellent.- Neal Martin"

La Spinona Barbaresco Secondine is made from 100 percent Nebbiolo. 

This single-vineyard Barbaresco comes from his 3.5 hectares on the cru of Secondine. It is the commune of Barbaresco below the zone of Rabaja Basa and Paje and is where Gaja’s San Lorenzo is located. It is 230 meters above sea level with a southern exposure.

Excellent with game, red meats, truffle dishes and aged cheeses.

Color: Deep ruby red with a hint of garnet in the reflections.
Bouquet: Bright bouquet full of cherries, raspberries, licorice and floral notes.
Taste: Elegant and refined with delicate, soft tannins. It is fresh, velvety and extremely well balanced.

Aromas of wild red berry, blue flower, crushed mint and oak-driven spice come to the forefront. Reflecting the nose, the full-bodied, polished palate features juicy Morello cherry, crushed raspberry, star anise and spearmint alongside lithe tannins. It's balanced, with bright acidity and closes on a note of bitter almond.

Le Macioche Brunello di Montalcino DOCG is made from 100 percent Sangiovese.

Brunello di Montalcino from Le Macioche is a singular wine. Produced from 100% organically managed mature Sangiovese vines planted in the early 1980’s, Le Macioche Brunello is fermented by indigenous yeasts in stainless steel tanks.  The wine undergoes malolactic conversion and ageing in 30HL Slavonian oak casks before being bottled unfiltered.  With a brilliant ruby core, and exceptional elegance complementing its ample power, this is as close to a Burgundian expression as Montalcino gets.

Le Macioche sits in the center of the Montalcino appellation, just about 5 minutes due southeast from Montalcino.  Nestled in a prestigious neighborhood among such prominent addresses as San Polo and Fattoria dei Barbi, Le Macioche is unique in that its four sections of Brunello vineyard, spread over 7.5 acres, are all exposed to the Southwest. This, along with the elevation of roughly 1,400 feet above sea level, ensures both exceptional ripening and constant ventilation throughout each growing season.  Such auspicious conditions have enabled Le Macioche to safely exercise organic farming practices with the 2018 vintage marking the estate’s full organic certification.

Brunello di Montalcino from Le Macioche is ripe and supple.  Aromas of dried berries, plum, and sour cherry mix with hints of oak, sweet spice, and leather. This powerful red wine is held in perfect harmony by an undercurrent of brilliant acidity and a structure of firm yet ripe tannins paired against. A substantial wine without ever feeling heavy. The finish is long, balanced, and complex.

Brunello di Montalcino is a wine that may be best enjoyed on its own as an object of contemplation and pleasure. Of course, it will also pair exceptionally well with a variety of hearty main course dishes ranging from the rustic to the refined. Meat is not mandatory, but wild game and fowl are traditional.

Sitting at 450 metres, Le Macioche is located just southeast of the town of Montalcino. Half of the estate’s six hectares of vineyards are registered for Brunello production. The 2017 vintage represents the first under ownership of the Cotarella family. An appealing mix of cocoa and balsamic herbs greets the nose. Mid-weight and juicy, the palate takes on accents of underbrush and there is great fruit purity and firmness of structure. The finish is savoury with just a hint of those drying tannins that mark the vintage.

The Opus One 2017 offers a harmonious aromatic balance of rich dark fruit, stems of roses, and earthy forest floor. The juicy entry offers a round, silky mouthfeel with just enough acidity to complement the satin texture. This seductive wine shows flavors of black cassis, black cherry and a hint of cocoa powder. Patz & Hall Hyde Vineyard Chardonnay is made from 100 percent Chardonnay.

The 2018 vintage is elegant, yet powerful and displays classic Hyde Vineyard traits of delicate white flowers, tangerine zest, and lemon cream. The wine has great acidity that leaves a white chalk/mineral note on the very long finish.

Paul Hobbs Beckstoffer Dr. Crane Vineyard Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon.

Grown on the west side of St. Helena, this distinctive cabernet sauvignon clearly displays its origins with a rich garnet hue and sophisticated aromas of cacao bean, crème de cassis, and sweet tobacco on the nose. Layered, with a superb structure, the wine offers impressions of blueberry coulis, black raspberry, and savory herbs like Herbs de Provence. Made in a definite herbaceous style, this Sauvignon Blanc also offers tropical undertones of gooseberries that add fruit to the palate. Well-balanced with zesty acidity; fresh & crisp.

Treated as reductively as possible. Juice settled for 2 weeks at -4 Celsius to give green lees contact. Blocks fermented separately to ensure a complex flavor profile after blending. After fermentation was completed, various wines were blended to obtain the best characteristics of each wine.

Sky Devil Formation is made from 100% Cabernet Sauvignon.

The 2018 Sky Devil Cabernet Sauvignon is an unapologetically bold, structured wine. There’s finesse to the nose that offers cherry, coffee bean, and cracked black pepper; the mid-body
is textured with full mouthfeel and the right amount of oak that results in flavors of toast and blackberry; the finish is firm with lengthy, evolving tannins. The barrel program for the 2018 vintage was 26 months in 100% new French oak. We bottled 392 cases unfined and unfiltered.  
 
Great with a New York strip steak. Good to drink now; cellared properly, ages well for 20 – 25 years.

Review:

This Cabernet includes small amounts of Merlot, Malbec and Petit Verdot in the blend. Aged 21 months in a majority of new oak, it tastes of toast and deliciously ripe red fruit, with substantial concentration, structure and intensity.
