Sourced from one of our highest elevation vineyards, the 2017 Rockfall Vineyard Cabernet Sauvignon features a true wildness that expresses the rugged growing site 2,000ft above the fog line. Elegant aromas of blueberries, cassis, graphite and black tea with complex undercurrents of baking spices. This wine balances power with elegance through to its savory palate with a generous structure and ample tannins. The structure of this wine allows for many years of cellar aging to continue to bring out nuanced flavors and complexity.

It is hard to imagine with the Lithology range receiving 298 points out of 300 for the three single-vineyard wines, that there could possibly be a wine above them. But there is, and it is our Estate wine. Blended several times very intently by masters of their craft Philippe Melka and Michel Rolland, this is the ultimate expression of our house’s work. Positive, full-bodied, and quite powerful, there’s the expected crème de cassis and blackberry from St. Helena Cabernets, with mineral, herb, subtle tobacco and vanilla, plum skins, and pie crust, purple flowers, forest-conifer notes, and very fine tannic structure. It is a magnificent, and magnificently elegant expression of this house, and when asked recently, Monsieur Rolland stated plainly to me, “oh yes indeed – this is the best one, the best yet…”

The flagship 2018 Cabernet Sauvignon Alejandro Bulgheroni comes from a selection made by winemakers Philippe Melka and Michel Rolland, mostly from Rutherford and Oakville fruit. Aged 20 months in 78% new French oak, it has incredible aromatics of black and blue fruits, spring flowers, and graphite to go with a massive, full-bodied, concentrated style on the palate that somehow stays graceful, weightless, and elegant. Alejandro Bulgheroni Lithology Beckstoffer Dr. Crane Vineyard Cabernet Sauvignon  99% Cabernet Sauvignon, 1% Cabernet Franc.

Here the Cabernet comes to us typically flawless, and the wines are as such. There is blue fruit, blueberries, black plums, blackberries, and cassis to the aromas, as well as stones, mineral, chocolate, fresh tobacco, and subtle herbs. It is incredibly full-bodied, but at the same time effortlessly drinkable, with ultra-smooth tannins and a positive, long, upturned finish. 70-75% new French oak is the norm for us with Dr. Crane, and those flavors are absorbed to become a vanillin complexity, sweetness, and length. An unbelievable wine.

You don’t see many Cabernet Franc-dominated wines from this site, but the 2019 Cabernet Franc Lithology Beckstoffer Dr. Crane Vineyard is certainly impressive. Offering more herbal, chocolate, gravelly earth, and espresso aromas and flavors, it has full-bodied richness and, as expected, is a powerful, opulent expression of this noble variety. The blend is 83% Cabernet Franc and 17% Cabernet Sauvignon, aged 20 months in 80% new French oak. It will benefit from short-term bottle age and drink nicely for 20 years.

Alejandro Bulgheroni Lithology Beckstoffer Las Piedras Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon. 

From a St. Helena vineyard planted by early Napa settler Edward Bale more than 150 years ago, and later serving as the estate vineyard for the area’s first winery built by Henry Pellet in 1860, the Las Piedras site always gives us our prettiest wine. When placed next to Dr. Crane and To-Kalon wines, the Las Piedras show a certain elegance, with a very graceful entry and finely detailed complexity. We produce it with at least 75% new French oak, so there is a floral, spicy, and vanilla accent to the intense red and black fruits, cassis, and black cherry liqueur. What distinguishes this bottling is the beautifully fine tannins, delicate texture, and stunning purity. (Less than 100 cases made.)

Heritage School Missiaens Hillside Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon. 

A steep, rocky site with red volcanic soils results in our most structured and concentrated wine. Planted in 1998 using 110R rootstock and clone 337 Cabernet Sauvignon our Hillside Vineyard produces wines as breathtaking as the views from its slopes. These tiny, dark blue berries ripen near the end of September thanks to cool afternoon temperatures allowing for increased hang time and developed flavors.

This limited release was specially selected and blended from the exceptional 2016 vintage in Paso Robles. It is both a tribute to Jerry's pioneering efforts in the region and our red wine portfolio's ultimate expression of Cabernet Sauvignon. VINEYARDS & CELLAR Beck Vineyard, in the Creston District of Paso Robles, is a unique, high elevation site that sits at 1,700 feet above the early morning fog line. Its calcareous soils and cooling afternoon winds are perfect for growing Cabernet Sauvignon. The Cabernet from this vineyard ripens early with excellent color, purity of fruit, and phenolic maturity. Incorporation of Cabernet Franc brings freshness to the blend, while the rare Bordeaux variety, Saint Macaire, brings density and a savory character. Petit Verdot and Malbec add structure, color, and a component of bright fruit. The hand-harvested grapes were held separate at harvest and berry-sorted into six-ton open top tanks for fermentation. Hand-harvested and field-sorted. From the Beckstoffer To Kalon Vineyard, the 2013 Coeur de la Vallée shows creamy tannins, beautiful blackberry and cassis fruit, and hints of blueberries, violets, forest floor and licorice. This is a blend of 75% Cabernet Sauvignon and 25% Cabernet Franc, and the black fruits are triumphant in this gorgeous wine. It should drink nicely for 25-30 years.

Morlet Family Vineyards Mon Chevalier Cabernet Sauvignon is made from 94% Cabernet Sauvignon, 4% Cabernet Franc, 1% Malbec and 1% Petit Verdot .

Located on the hillsides of Knights Valley, near Calistoga, this vineyard benefits from its proximity to Mount St. Helena, whose warm and windy climate is ideal for the long ripening of the Bordeaux red varietals. Handcrafted by using classical winemaking techniques, this special wine is dedicated to our son, Paul Morlet.

Dark red with a hue of purple. Intense and complex bouquet of red, black and blue berries intermixed with notes of blueberries, minerals (graphite, wet river rocks) licorice, fresh blond tobacco and a hint of lavender. Full bodied, the palate is reminiscent of the nose, with a richly tannic yet round frame and a great intensity. The hillside tannins and the classical aromatic complexity create a harmonious ensemble, leading to a very long and elegant finish. Built to age for decades, this collectible wine opens up after a few years of cellaring and is particularly representative of this special vineyard from the hillside of Knights Valley. The estate-grown 2016 Cabernet Sauvignon Mon Chevalier is a blend of 94% Cabernet Sauvignon, 4% Cabernet Franc, 1% Malbec and 1% Petit Verdot. Very deep purple-black in color, it charges forth with intense notes of crushed black cherries, black berry preserves and cassis scents with touches of spearmint, Indian spices, espresso and dried lavender plus a waft of roses. Full-bodied, the palate reveals incredible restraint, slowly revealing earth and black fruit layers framed by firm, grainy tannins and just enough freshness, finishing very long and spicy.

Moving to the top releases, the 2016 Cabernet Sauvignon Mon Chevalier comes from Knights Valley and was brought up in puncheons. A gorgeous bouquet of sandalwood, violets, loamy earth, and incense as well as some iron-laced black and blue fruits flow to a rounded, supple, incredibly textured Cabernet that has sweet tannins, a stacked mid-palate, and a great finish. It’s already terrific yet will keep for 20-25 years or more.

The 2019 Cabernet Sauvignon Howell Mountain is an incredible wine, and it flirts with perfection. Full-bodied and concentrated, it has flawless balance and elegance as well as just textbook Howell Mountain notes of blue fruits, cassis, violets, graphite, and background oak. I love its tannins, it has remarkable purity of fruit, and a great, great finish. It has some appeal today yet deserves 4-5 years of bottle age and should have over two decades of longevity.

Winemaker Sean Capiaux has crafted this Howell Mountain staple for more than two decades. In 2019, he's made a knockout! Explosive aromas of ripe, black fruit, wild mountain sage, turned earth and toasty oak. Our winemaking "style" is solely determined by this place or terrior we call "Paradigm." Winemaking is agriculture when you own your vineyards and are able to farm them to promote the very best Earth will give you. All of our selections of wines are made from five varietals on the estate. Every wine is 100% farmed and grown by us.

Complexity in our wines supported by luscious fruit and acidity is our hallmark. Our efforts during harvest and barrel cellaring concentrate on maintaining the freshness from the first day we handpicked each vineyard block. Simple winemaking protocols are employed while crucial “timing” oriented winemaking decisions rule each day.

Dark Cabernet color with beautiful aromas of black cherry, cassis, plus 5-spice, vanilla. Big, ripe and mouthcoating across the palate. The flavors are similar to the aromas with ripe fruit, berry/cherry pie, moderate tannins, and nice length. Riebeek Cabernet Sauvignon is made from 100% Cabernet Sauvignon.

An exciting new world style wine with upfront blackcurrant flavors. The black fruit is well-balanced with subtle French oak for a complex nose and an elegant and lingering follow-through. An exceptional example of a lighter style Cabernet Sauvignon that can be enjoyed young. Excellent with red meat dishes or veal.

Cold soaked overnight. Inoculated with selected yeast. Fermentation temperature was between 24 -26 degrees Celsius. Regular pump-overs were given to enhance colour and flavour extraction. Different batches of wine matured with French oak staves and 2nd and 3rd fill barrels were all blended together to perfection.

Served at room temperature, this Cabernet Sauvignon pairs perfectly with red meat dishes, especially classic recipes like roasted leg of lam, grilled lamb chops and beef kebabs.

Siegel Single Vineyard Los Lingues Cabernet Sauvignon is made from 100% Cabernet Sauvignon.

Viña Siegel Single Vineyard Cabernet Sauvignon is the result of our family's continuous search for quality wines with personality which faithfully reflect the best of our terroir. This wine comes from selected grapes from our "Los Lingues" vineyard in Alto Colchagua.

Located in the foothills of the Andes where the influence of the Andean winds result in an elegant Cabernet Sauvignon with great concentration of ripe red fruits, cassis and chocolate, and a balanced, richly structured, and long finish.

An intense violet color. Smells of cassis and is complemented with notes of mature red fruit and chocolate. A round and elegant wine with an excellent final persistence.

After carefully determining the moment for the harvest, the grapes are harvested by hand and later de-stemmed and marinated in cold temperatures for 5-6 days. Alcoholic fermentation is between 26ºC and 29ºC during which daily reassembly is implemented according to taste.Post-fermentation infusion lasts for two or three weeks. Once the blend is made, the wine is gently clarified and stabilized in cool temperatures if necessary.
