Our winemaking "style" is solely determined by this place or terrior we call "Paradigm." Winemaking is agriculture when you own your vineyards and are able to farm them to promote the very best Earth will give you. All of our selections of wines are made from five varietals on the estate. Every wine is 100% farmed and grown by us.

Complexity in our wines supported by luscious fruit and acidity is our hallmark. Our efforts during harvest and barrel cellaring concentrate on maintaining the freshness from the first day we handpicked each vineyard block. Simple winemaking protocols are employed while crucial “timing” oriented winemaking decisions rule each day.

Dark Cabernet color with beautiful aromas of black cherry, cassis, plus 5-spice, vanilla. Big, ripe and mouthcoating across the palate. The flavors are similar to the aromas with ripe fruit, berry/cherry pie, moderate tannins, and nice length.  Patrimony Caves des Lions is made from 65% Cabernet Sauvignon, 35% Cabernet Franc.

 With an inky ruby color, the 2020 Caves des Lions offers elegant aromas of chocolate-covered espresso beans with nuanced layers of blueberries, savory notes of charcuterie, pipe tobacco, and woodsmoke. In the far northwest corner of the Sonoma Coast appellation, near the town of Annapolis, the vineyard sits just five miles from the Pacific Ocean, and provides a poignant setting for producing pinot noir with elegance, great precision, and intensity.

The complexity and intensity here are simply unreal. Give this time, there's a lot of wine in the glass.

Pazo de Senorans Seleccion de Anada Albarino is made from 100 percent Albarino. 

Straw yellow with greenish tints, vivid and brilliant. High intensity and very expressive. Profusion of aromas with traces of mineral. Great volume and ample body leaving a lasting impression from beginning to end.

I think the 2014 Albariño Selección de Añada could be the finest vintage of this characterful long-aging Albariño, from a year with a more moderate 13% alcohol and very high acidity (and low pH) that make the wine fresher and more vibrant. It is developing very slowly and showing quite young after it spent over 30 months with lees in 1,500- and 3,000-liter stainless steel tanks. It has a pale color and an elegant nose with notes of freshly cut grass, white flowers and wet granite. The palate is vibrant with effervescent acidity, and it has a long, dry and tasty finish with an austere sensation, far away from the tropical notes of some past vintages. This is superb and should continue developing nicely in bottle. Bravo! It wasn't bottled until April 2023, and 14,000 bottles were produced.

Pio Cesare Ornato Barolo is made from 100 percent Nebbiolo.

Vineyards

The very first Single Vineyard Barolo produced by the Pio Family, for the first time in 1985. Great structure, power, concentration, with a very long life. Produced in small quantities.

Vinification

In stainless steel tanks at high temperatures. Maceration for 30 days. Ageing In large oak “botti” for about 30 months; a small amount in French oak barriques for the first 12 months.

Review:

Complex on the nose, offering a blend of ripe red berries, nutty minerals, orange-peel and spice. Some savory, almost meaty notes, too. Full, compact and intense, yet there’s a graceful feel to the palate, thanks to the really fine web of tannin. Super polish and promise here. Classy. Needs some time.

Poggio Nardone Rosso di Montalcino is 100 percent Sangiovese Grosso.

Intense ruby red color with garnet tints.
Intense and delicate aromas of fresh fruits with notes of cherry.
Dry red wine with a good strength and freshness, along with a nice aromatic persistence.

The 5 hectares of specialized vineyards in Montalcino are at an altitude of 350 meters above sea level and are surrounded by woodlands of ilex, oak and arbutus which are characteristic of Montalcino’s hillside habitat. The soil is predominantly composed of marl and limestone which renders this terrain particularly rich in mineral salts.

Pairs well with pasta prepared with meat sauces, mushrooms or truffles; complex rice, main courses of pork or veal with sauces.

Realm Cellars Bard Red Blend is made from a blend of 83% Cabernet Sauvignon, 7% Merlot, 6% Cabernet Franc, 3% Petit Verdot, 1% Petite Sirah.

The 2021 is the largest and most complex blend we've ever made with dozens of components from vineyards across the realm of Napa Valley. This vintage includes new vineyard sources from Calistoga, Rutherford and Oak Knoll AVA, allowing us to broaden our painter’s palette. The Bard is generally more approachable in its youth than some of our single vineyard bottlings, but we expect it to age for many years to come. This is our first time using a technical cork for this wine, which should guarantee consistency and improve longevity.
Blend: 83% Cabernet Sauvignon, 7% Merlot, 6% Cabernet Franc, 3% Petit Verdot, 1% Petite Sirah.

Rinaldi Panta rei Monferrato Rosso is a blend of 50% Barbera and 50% Cabernet Sauvignon.

This wine is quite tasty, smooth, silky and powerful.
It is loaded with dried red fruit notes from the appassimento of the grapes and it also has a lot of spicy aromas and flavors from the oak ageing.

Grown on limestone soils. 
The average age of the vines is 30 years old. 
10% of the wine is appassimento. Appassimento is an Italian term for drying harvested grapes, traditionally on bamboo racks or straw mats, for a few weeks up to several months to concentrate the sugars and flavors. This process is used in making Amarone, Recioto and Sforzato.
This drying method is not traditional in Piemonte but is popular in other part of Italy like in the Veneto region.
Thanks to this new method the wine is rounder and softer, boasts beautiful notes of red dried fruits.
Pantarei is aged 14 months in French oak ((the wood is Allier, medium toast) barrels and 6 months in bottle before release.

Robert Mondavi The Reserve Cabernet Sauvignon To Kalon Vineyard is made from 94% Cabernet Sauvignon, 3% Cabernet Franc, 3% Petit Verdot.

The story of Robert Mondavi Winery begins here, with the To Kalon Reserve. This tier represents the pinnacle of the wines produced by the winery. The 2021 vintage offers fresh black fruit with dark chocolate, dried herbs, and hints of vanilla and violet. Flavors of black plum and blackberry with red fruit and a hint of graphite on the finish. Elegant and plush with sweet, beautifully integrated tannins and a lengthy finish.

2021 Robert Mondavi The Reserve To Kalon Vineyard Cabernet Sauvignon is a beautifully crafted wine with impressive intensity, depth, and a balanced structure that carries the day. From the To Kalon Vineyard in Oakville, the portion owned by Constellation, comes this blend of 94% Cabernet Sauvignon, 3% Cabernet Franc, and 3% Petit Verdot. Pure blackberry fruit, cassis, graphite, and violet aromas leap from the glass, nuanced by fragrant, toasty new cedar wood. Robert Mondavi Winery Cabernet Sauvignon is made from 91% Cabernet Sauvignon, 5% Petit Verdot, 3% Cabernet Franc, 1% Malbec.

The 2021 Robert Mondavi Napa Valley Cabernet Sauvignon shows notes of plum, blackberry, licorice, chocolate, violet, and warm spice. Dark plum and black fruit carry through to the palate. Fresh and lively with plush tannins and a polished structure.

Flowering in the Duoro occurred in the last 10 days of May. The weather conditions provided for a perfect flowering season. The Romariz Vintage Port 2003 yielded wines of great color and supple tannins, with a vintage stamp being evident in most wines. Production: 8,000 cases. The Royal Shiraz – Cabernet Sauvignon borrows its name from a grand old hotel in Riebeek Kasteel. It is the oldest hotel in the Western Cape; a beloved fixture of the area.

Juicy and fruity, rich and ripe in style with blackberry, blackcurrant and spice flavors, subtle vanilla and black pepper. Smooth and well-balanced with a lingering finish of berries, spice and beautifully integrated oak.

Sainte Victoire Cotes de Provence Rose is made with 50% Grenache, 30% Syrah, 20% Cinsault

Bright, crisp, fruity rosé from Provence.

Sainte Victoire became its own AOC within the AOC Cotes de Provence in 2005. It is more demanding in term of yields, vinification and quality than the general AOC Cotes de Provence. Green harvest and in the cellar, using a sorting table in order to keep only the best grapes for the macerations.

A natural match to enjoy with salad, chicken, grilled salmon, just simply with an hamburger or on his own, colder, during a warmer summer day.

Hiyaoroshi is a general term referring to sake that has been pasteurized once in the winter and then allowed to mature over the summer before distribution in autumn. The Japan Sake Brewers Association designates September 9th as the official start for Hiyaoroshi sales. (Essentially aged Namazume)

September 9th is known as Kiku-no-Sekku (“Chrysanthemum Festival”), where hundreds of chrysanthemums are displayed around various venues and chrysanthemum sake is served. The chrysanthemum (kiku) was brought to Japan from China during the Nara period. In 1183, it was adopted as the Imperial Seal of Japan, and during the Meiji period no one but the Emperor could use it. Nowadays it still represents the authority of the emperor and you can see it everywhere in Japan.

Aromas are forward, fresh, and fruity in the nose with notes of sweet melon, cherries, and hints of vanilla. Flavors on the palate evoke feelings of the season with pumpkin pie, roasted nuts, and stewed plums. This sake is medium-bodied and accented by medium acidity, showing classic Jozen minerality and a lingering dry finish. Additional 7 months of aging adds depth and roundness.

Salvadori Chianti Riserva DOCG 2017 is made from Sangiovese 90% , Merlot 10

WINE MAKING AND AGEING: The ripe grapes are picked and vinified in red with maceration on the skins for about 8 -12 days. Fermentation at a controlled temperature of 28/29 ° C. Frequent pumping over and delestage to have a strong dissolution of the anthocyanins leaving an intense and persistent fruit. Refining until March in temperature-controlled vats, aging in large barrels for at least 24 months and short passage in wood, new Allier and Cher tonneaux, part of the mass.
TASTING NOTES: its appearance is a deep ruby red color, with a good consistency. The smell, of good intensity, persistent, is characterized by fruity notes of cherry, followed by slight spicy hints of black pepper in particular.
