Avennia Sestina Cabernet Sauvignon is made from 77% Cabernet Sauvignon, 17% Merlot, 6% Cabernet Franc.

The story of this wine - The Sestina is an ancient form of poetry from Medieval France. Just as a modern poet can fill this form with new expressions, Avennia uses the traditional Bordeaux blend to express Washington. Sestina is their vision for an old vine, complex blend where all of the components complement each other. This wine is designed for the cellar, so the emphasis is on structure, balance, and complexity.

Winemaker Tasting Notes - “Good deep ruby/garnet color, with aromas of black cherry, fresh black currant, dark mocha, cigar box, and graphite. The palate is lively and dense with mountain berries, mocha, vanilla honey, damp earth, and wildflowers. The finish shows a distinct chalky minerality and beautiful tension. "The Cabernet Sauvignon-dominated release from Peterson, the 2017 Sestina comes from the Red Willow, Bacchus, and Dionysus vineyards. Rocking levels of crème de cassis, sappy herbs, violets, and cedar pencil all flow to a full-bodied, incredibly pure, polished 2017 that offers flawless balance, ripe tannins, and a great, great finish. It's more approachable than normal yet is still going to evolve for 15 to 20 years. Avennia Valery Red Blend is made from 86% Merlot and 14% Cabernet Franc

Valery is named for the patron saint of wine in the St. Emilion region that inspired it.
We started with old vine Merlot from a stony block in the heart of the Yakima Valley and added complex, aromatic Cabernet Franc from the Horse Heaven Hills. The result is a balanced, complex wine with the elegance and ethereal perfume that this blend of two of Washington’s best varietals are known for.

The nose on this wine is very perfumed, almost exotic with notes of fresh violets, red plum, winter mint, fresh herbs and crushed limestone qualities. The palate is poised and balanced, with red fruits and mocha powder encapsulated in limestone. The finish lingers delicately, with the Cabernet Franc asserting a light tobacco and herb note, giving depth. A compelling wine that will continue to unwind for 7-10 years in the cellar.

Ruby red with soft purplish reflections. Rich and complex on the nose, very reminiscent of small fruits of brambles, black cherry and a very delicate hint of softwood. On the palate it is decisive, complex and extraordinarily persistent.

Review:

Complex aromas of ripe fruit, toffee, cedar and smoke. Medium body, round and creamy tannins and a fresh, juicy finish.

Babylons Peak Chenin Blanc is made from 100 percent Chenin Blanc.

Babylon's Peak winery, situated on the highest weathered granite slopes of the Paardeberg Mountain, is privately owned by the Basson family who has passed down the tradition, passion and art of winemaking over four generations. Predominantly low-yield dryland bushvines are selected to produce these excellent wines with distinctive character.

The Chenin Blanc grapes were picked from very old dryland bushvine vineyards. The vineyard grows on weathered granite soils, contributing to the flavor of the grapes and mineral character of the wine. Production is limited to 5 tons/ha.
The grapes were harvest by hand at 22.1°B. The grapes were destalked and lightly crushed. Only the first 450 litres free-run juice per ton were fermented in stainless steel tanks at a cold temperature (10-12°C) for 21 days. The wines was left on the fermentation lees until bottling.

A crisp, fresh and fruity Chenin Blanc from low-yield dryland bushvines.

Bachelet Bertrand Chassagne Montrachet Rouge is made from 100 percent Pinot Noir. 

The Chassagne-Montrachet appellation is originally better known for its white wines, but also produces high quality red wines. The complexity of the terroir allows both varieties to thrive side by side.

The wine is produced from vineyards located in the villages of Les Lombardes and Les Benoites that benefit from iron rich clay soils. A ruby garnet color, and an expressive nose of spices and red fruits that echo on the palate.

The Maranges appellation is the youngest of the Côte de Beaune family, making its debut in May 1989. It spans three villages: Dezize-lès-Maranges, Cheilly-les-Maranges and Sampigny-les-Maranges. Several hills and slopes make up the appellation; they face south/south-east, at an altitude of between 200 and 400 meters. This appellation produces mainly red wines comprising 95% of total production.

The Maranges 1ers Crus are spread over seven distinct terroirs: "Les Clos Roussots", which represents the second largest terroir of the appellation, spans the Cheilly-les-Maranges and Sampigny-les-Maranges areas.

The wine boasts a beautiful bright red color. The nose provides subtle harmony between red and black fruits, spices and vanilla. On the palate, this wine is both solid and fresh, harmonious and bold.

Barolet-Pernot Auxey-Duresses Blanc Les Clous is 100% Chardonnay.

A very bright color with some green reflections. On the nose we find a fresh and elegant wine with aromas of fruit and wood.
On the palate we have a round wine with a beautiful freshness and minerality.

Domaine Barolet-Pernot Pere et Fils is a small Estate located in Saint Romain. They currently have 14 hectares (34 acres).

Baron Aime Cremant de Bourgogne Brut is made from 40% Chardonnay, 30% Pinot Noir, 30% Aligote.

Light yellow with bright reflections. The nose is fresh and lemony with subtle floral aromas, apple and citrus fruits. The mouth is fresh, delicate, tight and precise with fine bubbles that stimulate the palate nicely.

A delicious aperitif and a great match with shellfish.

Review:

Golden straw color. Aromas and flavors of brioche, green and yellow apple, dried pineapple, and lemon oil with a supple, vibrant, finely carbonated, dry medium body and a smooth, engaging, medium-long finish displaying impressions of croissant with salted butter and tart pear jam, white tea, and grapefruit peel with no oak flavor. A lovely and racy apéritif that will pair splendidly with a cheese and bread course."

Bastgen Blauschiefer Riesling is 100 percent Riesling.

Bright, clean, fresh and zesty. Grapefruit like flavors. Fruity aromas and a nice minerality, typical of the Riesling grape grown on blue slate soil. Round, rich and a very long finish.

They meticulously tend 4.5 ha (11.11 acres) of which 80% is Riesling. The soil is made of slate. Their vineyards are located in Kesten and Brauneberg, on a steep terrace, and planted to 50-year old vines. Fortunately for Bastgen, they own part of the famous Brauneberger Juffer Sonnenuhr. The vines produce very small, ripe berries that are very tasty.

"Grosses Gewachs" Großes Gewächs: (great growth = Grand cru), a designation used by VDP members in all regions except Mosel and Rheingau to designate top-level dry wines from selected sites (the highest level of quality). Dry means dry on the palate. The maximum yield is 50 hl/ha, from a classified vineyard. The natural minimum density of must is around 90° Oechsle. The wines are produced using exclusively traditional production methods. The wines are tested and approved by a test body before and after bottling. Hand Harvest (no machine harvest). The wine must not be released before September the year after it was made.

"In spite of the abundant yellow fruit aromas (think Mirabelle plums more than peaches), this is a very cool and sleek style of Mosel GG with great herbal freshness. Although this has excellent concentration, it definitely needs time to give its best due to the bone-dry style. Quite a steely, tightly wound finish, but very long. Bavencoff Meursault Blanc is made from 100 percent Chardonnay.

Clear golden and green robe. Meursault shows a green golden color, leaning towards bronze as it ages. Limpid and brilliant, it exhibits silver highlights. The young wine is redolent of toasted almonds and hazelnuts in a floral and mineral (flint) setting. Butter, honey, and citrus fruits are also present. On the palate it is rich and ample with a nice balance between freshness and smooth nutty flavors. .

Aged in French oak barrels (50% new).

Noble and fine-textured fish or meat, blue cheeses and foie gras.

Bavencoff Pernand Vergelesses Blanc is made from Chardonnay.

The wine offers a white gold or pale yellow color turning into darker gold with age. It boasts aromas of white flowers, (may, acacia) developing into notes of amber, honey and spices. On the palate it is mineral, harmonious and easy to like.

Aged in new oak barrels (Allier).

Sushi, fresh-water fish in white sauce, and for pasta or a seafood risotto.

Bavencoff Montagny Blanc is made from 100 percent Chardonnay.

This Montagny presents a typical robe of a Burgundy Chardonnay: A pale yellow color with discreet green reflections. The color will change to golden yellow with age. On the nose, it develops delicate honey and vanilla aromas. On the palate, this wine is full-bodied, it offers a slightly oily texture typical of the great whites of Burgundy, rich and fresh flavors (vanilla, honey, golden apple, toast). The finish is long and mineral.

This wine goes perfectly with veal in sauce, scallops in butter and herbs, and most fish. Also to drink with hard mountain cheeses: Comté, Beaufort.
