Hiyaoroshi is a general term referring to sake that has been pasteurized once in the winter and then allowed to mature over the summer before distribution in autumn. The Japan Sake Brewers Association designates September 9th as the official start for Hiyaoroshi sales. (Essentially aged Namazume)
September 9th is known as Kiku-no-Sekku (“Chrysanthemum Festival”), where hundreds of chrysanthemums are displayed around various venues and chrysanthemum sake is served. The chrysanthemum (kiku) was brought to Japan from China during the Nara period. In 1183, it was adopted as the Imperial Seal of Japan, and during the Meiji period no one but the Emperor could use it. Nowadays it still represents the authority of the emperor and you can see it everywhere in Japan.
Aromas are forward, fresh, and fruity in the nose with notes of sweet melon, cherries, and hints of vanilla. Flavors on the palate evoke feelings of the season with pumpkin pie, roasted nuts, and stewed plums. This sake is medium-bodied and accented by medium acidity, showing classic Jozen minerality and a lingering dry finish. Additional 7 months of aging adds depth and roundness.

This unpasteurized sake is exciting and lively with a nose full of citrus, apple blossom and shizo. The palate is equally as bold featuring fresh persimmons, marshmallow and slightly underipe stone fruit. The finish is clean showing soft minerality.

This organic natural cider from Astigarraga in the Basque Country is produced from freshly pressed juice that is fermented by native yeasts in large wooden casks (kupelas) for a minimum of 4 months. The cider is uncarbonated and unfiltered.
A typical golden color, intense, deep and fruity aromas, the cider is medium-bodied and fresh on the palate with tangy flavors and a slight fizz.
Pairs with cheese, quince paste, shellfish, grilled beef. Serve chilled.

Sun Bee evokes warm summer days by infusing natural mango flavors into a blend of California white wines. Winemaking Notes The grapes are handpicked in small baskets late August and are gently pressed as whole clusters. After a settling of 24 hours, the juice is inoculated with selected Champagne yeast and ferments in stainless steel tanks at low temperature. Once the fermentation is over, the wine ages on the fine lees until the spring of the following year. The blend is then put together and cold-stabilized prior to bottling. The bottling occurs in the spring when the cellar temperature is conducive to a second fermentation in the bottle. The now sparkling wine will age on the yeast for over 24 months. At disgorging, a small amount of dosage liquor is added in order to balance the natural acidity.

A tribute to the family patriarch, Henry Trione, this deep red wine is an artful blend of the five classic Bordeaux varieties: 35% Cabernet Sauvignon, 34% Merlot, 13% Petit Verdot, 13% Cabernet Franc and 5% Malbec. Cabernet Sauvignon forms the base structure and Merlot contributes fruit flavors and velvety texture; the Malbec, Cabernet Franc and Petit Verdot add depth, color and spice. We harvested the fully ripe grapes from select blocks on three Trione ranches in Alexander Valley, just ahead of early rains.
Winemaker Notes:
Aromas of black currants, blackberry pie and warm spices are the wine’s first impressions. On the palate Henry’s Blend is soft and supple, a seamless integration of ripe fruit, French oak and fine-grained tannins. Delicious now, the solid structure and abundant fruit suggest this wine will age well for 6–7 years with proper cellaring.

The 2018 La Joie displays a brilliant violet core with a thin rim of bright ruby. Generous fruit-for- ward aromas of ripe black currant and black cherry are followed by earthy notes of fresh conifer, dried mushroom, black olive, dusty clay, anise and clove. The palate is rich and structured; possessing similar flavors of the nose, refined tannins, well-balanced acidity and a complex, luscious finish.

Blackberries, black mushrooms, violets, flowers, and dark tobacco. Black truffle, too. Full-bodied, yet in check and pretty. The fine tannins frame the wine perfectly. Really long and focused. Seamless. Elegance with power. This will age incredibly well, but already so gorgeous to try. 76% cabernet sauvignon, 9% merlot, 7% cabernet franc, 5% petit verdot and 3% malbec. Try after 2026, but attractive now.

The wine is held together by a fine mesh of grape and subtle oak tannins, intertwined with pure Coonawarra cabernet fruit. It’s chiselled in its dimension, and you might miss it, as it has such great drinking pleasure. Fruit purity, lovingly handled equals total seduction.

After 20 years of marketing Napa Valley and its wines, Karen Cakebread launched her own project in 2008 with two major goals in mind: to create beautifully structured wines that reflect the vineyards from which they come, and to be involved in every aspect of making the wines.Karen started ZIATA, named in honor of her mother, Mary Annunziata, in 2008 with three varietals: Cabernet Franc, Sauvignon Blanc and Pinot Noir, which she chose for their food-friendly qualities. She hired Anne Vawter, a protégée of Heidi Barrett, as winemaker and sourced grapes from sustainable sources, working closely with the grape growers through the growing season, knowing that efforts made in the vineyard would create better wine than those manipulated in the cellar.
