Long Shadows Feather Cabernet Sauvignon is made from 100 percent Washington State Cabernet.
Acclaimed Napa Valley vintner Randy Dunn has a reputation for producing world-class Cabernet Sauvignon. He brings more than four decades of winemaking experience to the Columbia Valley to produce Feather, his only wine made outside of California.
Tasting Notes: Deep crimson colored with pure and expressive Cabernet Sauvignon character. Generous aromas and flavors of dark fruits, violets, coffee and toasted herbs combine with a textured mid-palate to deliver a big, yet focused, wine with polished tannins and persistent finish.
Winemaking: Grapes were hand-harvested at the peak of ripeness, then lightly crushed and fermented in small stainless steel tanks. Once fermentation was underway, the cap was pumped over aggressively to extract color and structure. As fermentation neared completion, pump overs were handled more gently to further extract color and flavors without imparting harsh tannins. The finished wine was aged 22 months in 90% new Vicard French oak barrels (Randy's cooper of choice at Dunn Vineyards as well).

Long Shadows Saggi Red is made with 58% Sangiovese, 30% Cabernet Sauvignon 12% Syrah. Among Tuscany's oldest and most prestigious wine families, Ambrogio and Giovanni Folonari teamed with Allen Shoup to produce a wine that showcases Washington State's terroir with plenty of Italian character. Saggi (meaning "wisdom") is a stunning blend of two outstanding Washington Sangiovese vineyards. Candy Mountain Sangiovese gives the wine its dark fruit flavors and appealing notes of anise. Dick Boushey's Yakima Valley Sangiovese, planted in 1992, adds vibrancy and liveliness. Because Cabernet Sauvignon has the potential to overtake Sangiovese, the Folonaris work closely with Sagemoor Vineyards to carefully select blocks of Cabernet they know from experience deliver elegant character and refined tannins. Intense, fresh and fruity bouquet, reminiscent of a tangy red fruit tart (wild strawberry, blueberry), slightly sweet yet underpinned by more concentrated, jammy and citrus notes. The aromatic complexity comes through after a few swirls in the glass giving us a medley of spice, warm cinnamon and peppers. Fleshy attack dominated by ripe, crunchy, plump red fruit that brings depth and creaminess. The fruity structure is gradually elongated by a chalky, mineral freshness that creates a lingering sensation of lightness and harmony on the finish.

Roederer's 2014 Brut Vintage is beautiful, offering up aromas of pear, mirabelle plum, red berries, warm biscuits and smoke. Full-bodied, layered and elegantly muscular, it's seamless and complete, with terrific mid-palate depth and amplitude. Framed by bright acids and enlivened by a pinpoint mousse, it concludes with a penetrating finish. The blend is 70% Pinot Noir, emphasizing Verzy, and pressure is a touch higher than in its more ethereal Blanc de Blancs counterpart. As I wrote of its 2013 predecessor, this is a wine that puts many prestige cuvées to shame.

Lucien et Andre Brunel Chateauneuf-du-Pape Les Cailloux Blanc is made from 70% Roussanne, 20% Grenache Blanc, 10% Clairette.
Les Cailloux Blanc displays a pale gold color in its youth and evolves into deep gold after a few years of aging. It has floral scents of honeysuckle and jasmine with hints of honey. On the palate, white flowers and honey are joined by minerality and viscosity on the finish. The wine’s surprising complexity grows more well-rounded as it evolves in the glass.
This historic estate was established in the 17th century when André Brunel’s family purchased a vineyard plot from the Bishop of Avignon. André took over the reins of this estate in 1971, and later his son Fabrice joined the winemaking team in 2012, keeping the family legacy alive by pursuing quality with the highest regard and respect for the environment.
Châteauneuf-du-Pape is notorious for its large, round pebbles that absorb the sun’s energy, radiating warmth throughout the night, allowing the grapes to achieve ideal ripeness and incredible complexity. “Les Cailloux” gets its name from the pebbles.

Inviting aromas of grapefruit and lime zest, Meyer lemon and honeydew harmonize with wild white flowers and stone on the nose. The palate is refreshed by brisk acidity, making way for a wave of fresh pears lemon zest, subtly framed by a layer of stone and light oak spice.

Lastly, and a wine that will be a candidate for perfection in 4-5 years, the 2019 Châteauneuf Du Pape Centenaire reveals a deep ruby/purple hue as well as extraordinary notes of black cherries, licorice, iron, nori, and peppery garrigue. As with the base 2019, the estate did an incredible job with the tannins, and this wine is flawlessly balanced, with ultra-fine tannins, no hard edges, and the sheer class to evolve for 25+ years. This is a perfect example of power with no sensation of weight or heaviness. The blend in 2019 is 84% Grenache, 10% Mourvèdre, and 6% Syrah, and it wasn’t destemmed and was brought up mostly in concrete tanks, with just 6% in very old barrels.

A deep red in the glass introduces aromas of pure cherries and plums accented with spice, graphite, eucalyptus and licorice. Warm and dry character with firm tannins balanced by a fresh and gentle acidity. A unique soil composition with blue clay translates in a wine with a powerful elegance.

The wine is clarified with vegetable gelatines and follows anicrobic filtration.
It is ideal to pair with meats; red meat, poultry, small game, oily fish, semi-cured cheeses, spicy dishes and hot dishes such as beans or potatoes Rioja style.
After its primary fermentation, the wine is placed in barrels where it undergoes malolactic fermentation and is aged for a minimum of 12 months. It is then bottled for at least another 12 months.

This wine is a response to our quest to find the perfect wine, one that combines structure, complexity and balance. It is the result of a careful selection of grapes not from the vines but from the appropriate clusters, those that naturally produce three or less clusters and which are 60 or more years of age. Vines situated on slopes and terraces of limestone and clay soil, well exposed to the sun. These grapes are harvested in small boxes at the very best moment, then inspected on the selection table and vinified in small groups at a controlled temperature. After alcoholic fermentation they are macerated to extract their full potential. The resulting most is then settled in new French and American oak barrels to undergo malolactic fermentation. This second fermentation ensures the wine gains in complexity and aromatic intensity, it also stabilises its colour.
Fully ripened and concentrated fruit aromas with balsamic and spicy mineral nuances, notes of blackberry and blueberry preserve wrapped in creamy oak, caramel and milky coffee tones. The palate is concentrated, unctuous in the centre, balanced, sweet, with fine tannins. Very long finish, expressive, clearly marked with the character of the soil.
Hiru 3 racimos is a complex wine and so is its pairing with food. We must consider two options, either drink it in light sips so that the wine itself is the star of the feast, or serve with solid dishes that can match its vigour. An Iberian pork loin with roasted peppers, steak with mushrooms and plums, wild boar stew or pheasant in port are dishes that blend incredibly with this characterful wine.

After its primary fermentation, the wine is placed in barrels where it undergoes malolactic fermentation and is aged for 18 months in French (70%) and American (30%) oak barrels, then aged minimum 18 months in bottle before release.

Upon entering the bodega, bunches undergo a manual selection and then individual grapes are sorted based on their weight. Following this double selection process, they are de-stemmed and crushed before undergoing fermentation and then aceration in stainless steel tanks for a total of 8 days, obtaining better color extraction as well as much more complex and tannic wines, suitable for prolonged aging.
After its primary fermentation, the wine is placed in barrels where it undergoes malolactic fermentation and is aged for 18 months in French (70%) and American (30%) oak barrels, then aged minimum 18 months in bottle before release.

Excellent with red or white meats, all types of game, roasts, oily fish, rice with meat and cheese. Within Rioja cuisine it is perfection accompanying peppers stuffed with cod, artichokes with ham, migas pastoriles and trotters

Elegant and driven, pairing muscularity with drive and nuance. Fresh pink citrus, pomegranate and cranberry dominate the palate, with energy and detail. The tannins are at once savoury and zesty and the wine lingers forever with detailed notes of oregano, thyme, tarragon and curry leaf.

Luis XIV Fondillon Oro 50 years NV is made from 100 percent 100% Monastrell (Mourvedre). Only 24 9 liter cases produced.
The wine is produced in the village of Cañada, in the subarea of Alto Vinalopó in the province of Alicante. Made from 100% Monastrell planted on traditional dry land as bush vines, at 550-580 meters above sea leval and enjoying a Mediterranean climate with great marine influence due to the easterly winds.
Fondillon 50 years is mahogany in color with orange tile rim, medium layer and great density. On the nose, it has a very deep aroma of old wood, black tea and carob. In the mouth, it has a sweet entry balanced by a rich high acidity. Its aromas are long, almost eternal and very intense. It tastes like old mahogany, a very old barrel and bygone times.

"The NV Fondillón Luis XIV has the subtitle Edad Superior a 50 años (over 50 years old), and it's a dark mahogany, bottled from a single barrel that has the specific profile of a very old wine greatly concentrated by age, which tends to make it similar to other very old and concentrated wines, be it a Mediterranean rancio or a very old Moscatel. It has notes of bitter chocolate, coconut and iodine, carob beans (algarroba) and some bittersweet sensations. It's dense and concentrated, and the palate is pungent, with very intense flavors and a bitter twist in the finish. This has 16.3% alcohol, 6.45 grams of acidity and 34 grams of sugar, but it comes through as very dry. The wine is long and extraordinary, but it just doesn't have any Fondillón character after decades of concentration by evaporation. The price is ludicrous. "Fondillón is an extraordinary treasure of Alicante, a rare product, made from late harvest, non-botrytised grapes, unfortified, but with a final alcohol of no less than 16%. Intense, aged, but not sweet (deliciously not more than 45g/l). Fab with cheese or dark chocolate. The wines have to be a minimum of 10 years; this release is more than 25 years. Our respect for historical viticulture and enology leads us to minimal intervention crops and preparations. We reduce treatments as much as possible, seeking a balance between the vines and their environment
The unique volcanic soil composition of this site is exhibited in this Cabernet’s mineral texture and intensely structured palate. This latest release from the exceptional 2018 vintage presents a deep purple rim surrounding an opaque garnet core with an abundance of aromas emerging from bakers’ chocolate and dark cherry to crème de cassis to tapenade. Both graceful and bold on the palate, the broad tannins are balanced by pulsing acidity that brings tension and freshness throughout. Notes of boysenberry are interspersed with accents of sweet thyme against a backdrop of crush rock minerality, adding to the long finish and layers of complexity.
Filippino Elio Barolo Riserva is made from 100 percent Nebbiolo.
This 100% Nebbiolo offers a fruity, floral and spicy bouquet of red roses, raspberry, cinnamon and cocoa. It is generous, enveloping and elegant in the mouth, yet intense and full-bodied.
The grapes undergo a soft crushing and destemming leading to a clear must. This must ferments in steel tanks at a controlled temperature of 26°C and macerates for 20-25 days. After racking, the wine undergoes a lengthy maturation in oak barrels, which is continued with a lengthy bottle-ageing. Bottle-ageing confers the wine’s final character, at which time the wine is sent to market and from there to consumer tables.
