Gessinger Zeltinger Sonnenuhr Riesling Beerenauslese is made from 100 percent Riesling. 

This deep yellow-colored wine offers a quite aromatic nose made of mirabelle, ripe apple, almond cream, date, ether oil, and earthy spices. It proves nicely complex and delicately oily on the otherwise focused and delicately racy palate, and leaves a subtly unctuous and still quite sweet feel of honeyed dried fruits, starfruit, kumquat, and almond cream in the precise and persistent finish. Some fresher elements of citrusy fruits and grapefruit already lighten up the aftertaste and hint at the greatness to come. This beautiful dessert wine is still really in its infancy but will develop into quite a beauty at maturity, once the candy floss driven sweetness will have receded into the background.

The Riesling Beerenauslese remains on the lees for several months to add a creamy texture to the mineral notes and to enhance the mouth-feel and drinkability.Zeltinger Sonnenuhr Riesling Beerenauslese Alte Reben was made from botrytized fruit hand-picked at a whopping 150° Oechsle from old ungrafted vines, spontaneously fermented and vegan. Fermentation with preferably wild yeasts gives this wine a unique and authentic taste, reflecting the extreme vineyard sites of the Mosel Valley. A cool temperature allows a slow fermentation which can continue for as long as the wine and the vintage requires.

Ghost Hull Cabernet Sauvignon is made of 100 percent Cabernet Sauvignon. 

Aromas of blackberry, elderberry and ripe plum are accentuated by notes of mocha, fresh tarragon, vanilla and oak. The palate is full-bodied and offers a lovely balance of acidity and tannins accompanied by rich flavors of dark fruit and black currant, ending with a juicy and lingering finish

Gimenez Mendez Alta Reserva Sauvignon Blanc is made from 100 percent Sauvignon Blanc. 

Gimenez Mendez Sauvignon Blanc shows a very pale hue, almost crystal clear in color. Intense and herbal bouquet in harmony with fruity notes of guava and green apple, mango and maracuja. The wine is full and ample on the palate with a very firm structure. Dry, crisp and lively in the mouth.

Sauvignon blanc grapes are hand harvested very early during some mornings of February. Banches are destemmed and delicately crushed. With a quick press, fresh and very aromatic juice are obtained. Juice is fermented in stainless steel tanks during 15 days at controlled low temperatures, between 14 to 16 °C .Once fermentation is finished lees are kept and stirred for 1 month to get a creamy texture. Then a carefully clarification is necessary. The wine is filtered and stabilized without cold, and finally bottled to keep the freshness. No oak.

Ideal to serve with very spicy seafood, sushi or salads, as well as white meats with sweet-sour sauces, paté. Serve chilled.

Delicate and slow fermentation with selected yeast between 18 to 25 C during 12 to 15 days. Post maceration during 8 days. American and French oak aging during 9 months. Finally a blend is produced with wines of the same variety obtained from different plots to achieve the GIMENEZ MENDEZ Alta Reserva profile.

A small lane of rocks going through the rocky plateaux has been decided to be the AOC limit in 1936. Here, soils are made of red clay and rocks (pebbled stones of quartz). The quantity of rocks can be amazing as they can completely cover the soil (see picture). In summer and during the day, the rocks temperature will increase to 55°C. This accumulated heat will be get back to the vines during nights . Day after day, this unique phenomenon allow the grapes to reach a perfect maturity and produce a unique wine. Winemaking & Ageing Traditional, in stainless steel vats. Harvest crushed and destemmed. Fermentation in temperature controlled vats at 28°C. Eighteen-day vating period with “pigeage”. Grenache is aged in concrete vats, Syrah and mourvèdre in 4 year old barrels. Intense, brilliant garnet-red colour. It reveals lovely fruit, loads of body and a heady bouquet of ground peppers, raspberries cherry liqueur, currants, and spice box. Full-bodied and dense, it tastes more like a “baby Châteauneuf” than a Côtes du Rhône. A complete wine, rich and elegant, thanks to the harmony of all the elements which make it up.

Graviere La Rouge Cuvee les Terrasses is made of 70% Merlot and 30% Cabernet Sauvignon

Deep red color with a narrow purple rim. Attractive aromas of ripe, juicy cherry and blackberry over spice, integrated toasted aromas. The palate is balanced and full-bodied with supple tannins, displaying rich cherry flavors combined with gentle toasting characters and a touch of spice. The finish is lasting with a bitter almond aftertaste.

Average age of the vines is 25 years. 
 Upon arrival at the winery, only the best grapes were selected using a sorting table.
Skin contact maceration during 2 weeks in temperature controlled vats. 
75% of the final wine was aged in stainless steel tanks with French oak staves and blended with 25% of wine aged in barrels.

Serve with red, white meats, poultry and fine cheeses.
