Caymus has a signature style that is dark in color, with rich fruit and ripe, velvety tannins – as approachable in youth as in maturity. We farm Cabernet grapes in eight of Napa’s 16 sub-appellations, with diversification enabling us to make the best possible wine in a given year. This Cabernet offers layered, lush aromas and flavors, including cocoa, cassis and ripe dark berries.

Double Diamond by Schrader Oakville Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon. 

The 2021 Cabernet Sauvignon stands to outshine the award-winning 2019 vintage with even deeper concentration and complexity. On the nose, the wine leaps from the glass with ripe blackberry, cassis, black cherry, and red plum, with a lovely herbaceous undertone. The palate expresses juicy red and black fruits with hints of black tea, damp earth, vanilla bean, lavender, and just a touch of flint. With fine-grained tannins and mouthwatering acidity that lingers through the long finish, this wine is ready to drink upon release but will cellar well for years to come.

Double Diamond is sourced exclusively from a complement of prime vineyard estates. Sourced from the same famed vineyards as its beloved inspiration Schrader Cellars in Napa Valley’s world-renowned Oakville AVA, including our To Kalon Vineyard.

Review:

The 2021 Cabernet Sauvignon is cut from the same cloth, with plenty of richness and depth, yet it stays slightly more focused and tight on the palate, with medium to full-bodied richness as well as beautiful darker currant, cassis, darker chocolate, graphite, and hints of flowers. It's concentrated and has beautiful mid-palate density, ripe yet building tannins, and a great finish. It's another undeniably delicious, hard-to-resist Cabernet Sauvignon from the talents of winemaker Thomas Rivers Brown. Give bottles a decant if drinking any time soon and enjoy over the coming 10-12+ years.

Force Majeure Cabernet Sauvignon Red Mountain is made from 100 percent Cabernet Sauvignon. 

The estate Cabernet Sauvignon is grown primarily along the southwest ridge of the vineyard. The vines produce small berries with bountiful flavor, concentration and intensity, but also a good degree of finesse, excellent structure and layers of complexity that will continue to develop during extended bottle aging for those who want to cellar and age their wines. The wine is powerful, elegant, full-bodied.

Another gem is the 2019 Cabernet Sauvignon Red Mountain Estate, a deep, concentrated, powerful Red Mountain Cabernet Sauvignon that I suspect will be up there with the legendary wines from this terroir. Beautiful cassis, graphite, lead pencil shavings, and damp earth notes give way to a full-bodied effort that has a liqueur of rocks-like minerality, flawless balance, building yet polished tannins, and a great finish. Hide bottles for 4-5 years, and it will evolve for 25-30 years if properly stored. Best After 2026.

Hickinbotham Trueman Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon. 

Trueman represents Cabernet in Clarendon at its best. Its purity, its elegant style, its supple, polished nature ... it’s a wine of its own.Distinct in character, this is not like Cabernet from the Vales below or the hills to the east. Deep garnet/purple, the 2012 Cabernet Sauvignon Hickinbotham Vineyard has a classic nose showing pronounced fresh blackcurrant and blackberry highlighted by cloves, menthol, pencil shavings and earth notes. Medium to full-bodied, taut and muscular, the palate has grainy tannins, nice freshness and a long finish.

Howard Park Abercrombie Cabernet Sauvignon 100% Cabernet Sauvignon.

The 2018 Abercrombie reflects the highs that can be achieved in a superb vintage when thoughtful and deliberate winemaking combine with exceptional vineyards. The color is a vivid, deep ruby, tingeing purple and betraying the wine's youth. The bouquet evolves in a measured fashion as the wine slowly aerates, filling the glass with textbook Cabernet perfume of powerful dark fruits, rubbed bay leaf, cedar, coffee beans and vanilla. Intensity and purity of fruit is the standout feature, and this transmits seamlessly to the palate, where the profound structure and effortless length also take centre stage. This is really fine with such polished and manicured fruit and tannins that deliver a thoroughly refined and beautiful palate with sweet dark fruit, from currants to blackberries. Long, long finish. Hard not to drink now. But one for the cellar. Try after 2025.

Inglenook Rubicon  is made from 93% Cabernet Sauvignon 7% Cabernet Franc.

Since its inaugural vintage in 1978, Rubicon has been the Estate's premier red wine, reflecting the soul of the property and expressing Francis Coppola's wish to create a Bordeaux-styled grand wine, that is, "a wine that can please contemporary taste, but with a historical aspect [that defines] our vineyards at their zenith."

Rubicon was named after the small river crossed by Julius Caesar in 49 B.C., declaring his intention to gain control of Rome, thereby launching a civil war among opposing factions. Over time the phrase "crossing the Rubicon" has come to signify any irreversible action with revolutionary intent or the outcome of which holds great risk. True to its uncommon depth, Inglenook's Rubicon continues to be a testament to the finely tuned rendering of a risk well-taken.

2016:

After four years of drought, a winter with average rainfall was welcome, as it provided ample soil moisture for a strong start to the 2016 growing season. Average late-spring temperatures and limited precipitation minimized the risk of frost during mid-May bloom, ensuring average yields. June closed with a heat spell, slowing vine canopy growth at the ideal time. Harvest of the blocks contributing to the 2016 Inglenook Rubicon blend occurred under optimum conditions from September 6th through September 27th.

Ideal harvest conditions endowed the 2016 Rubicon with the three elements associated with a truly great wine from the Rutherford appellation: complexity, balance, and elegance. The aromas are intense and focused with top notes of creamy, sweet vanilla, and black licorice wound around a core of exquisitely ripe black cherry and crème de cassis. This refinement extends directly to the palate, where the wine is both broad and deep with sensuous, silky tannins. Supremely balanced in terms of both opulence and complexity, ripe black fruits and an ultra-smooth texture provide an impressive crescendo to a very long finish.

Review:

The 2016 Cabernet Sauvignon Rubicon is a wine of total precision and class. Translucent and energetic, with distinctly mid-weight structure, the 2016 is a wine of reserve, tension and breeding. Shy at first, the 2016 has a lot to offer, but it needs a number of years in bottle to be at its most expressive. Cedar, tobacco, licorice and wild cherry add the closing nuances.

Kinsella Estates Heirloom Cabernet Sauvignon  is made from 100% Cabernet Sauvignon

Intense was the first word that came to mind. Purely focused tannin weaves its way through the core of this wine. Has a savory characteristic that we have found in past vintages (2014 to be specific) with a slight licorice note on the exceptionally long finish. While this vineyard has been described as “feminine” in the past, that is certainly not the case for this bigger, bolder vintage!

La Ronciere Licanten Cabernet Sauvignon is made from 85% Cabernet Sauvignon, 8% Syrah, 7% Cabernet Franc.

 Intense aromas of black fruits, notes of dark chocolate, and roasted coffee. The palate is round with polished, juicy tannins and a finish that leaves a lasting impression.

Hand-harvested and field-sorted. An additional sorting occurs at the winery before the grapes are fermented in temperature-controlled micro-fermentation tanks. Aged in French oak for 10-12 months. : Diverse soils derived from metamorphic rock. Includes Licorellas (same as Priorat) and Lutitas rock complemented with a series of alluvial and granitic soils. Quartz and mica are both abundant in the soil profile.

Review:

Married with 8% Syrah and 7% Cabernet Franc, this very well-priced Cabernet Sauvignon uses grapes from three different soil types - granite, schist and sandstone. Mint and mountain herb aromas are a prelude to a fresh, elegant, grassy palate with stony intensity, sinewy tannins and layers of bramble and blackcurrant leaf. 2025-35

Long Shadows Feather Cabernet Sauvignon is made from 100 percent Washington State Cabernet. 

Acclaimed Napa Valley vintner Randy Dunn has a reputation for producing world-class Cabernet Sauvignon. He brings more than four decades of winemaking experience to the Columbia Valley to produce Feather, his only wine made outside of California.

Tasting Notes: Deep crimson colored with pure and expressive Cabernet Sauvignon character. Generous aromas and flavors of dark fruits, violets, coffee and toasted herbs combine with a textured mid-palate to deliver a big, yet focused, wine with polished tannins and persistent finish.

Winemaking: Grapes were hand-harvested at the peak of ripeness, then lightly crushed and fermented in small stainless steel tanks. Once fermentation was underway, the cap was pumped over aggressively to extract color and structure. As fermentation neared completion, pump overs were handled more gently to further extract color and flavors without imparting harsh tannins. The finished wine was aged 22 months in 90% new Vicard French oak barrels (Randy's cooper of choice at Dunn Vineyards as well).

Linear and precise, the 2016 M by Michael Mondavi opens with expressive aromas of quince, plum, juniper, cassis, blackberry & dark roasted coffee beans. With time and swirls of air, notes of dried rose petals, coriander, cinnamon and clove develop. This wine enters the palate with subtle tannins at first, and soon broadens into a silky expanse of vanilla bean, cocoa, roasted dates, black cherry, and orange blossom tea. The evolution of flavors continues with candied figs, bramble-berry, and cocoa covered strawberries. Morambro Creek Cabernet is 100 percent Cabernet

Deep purple in color. A rich elegant nose of cassis with overtones of vanilla and coffee. Lush, ripe palate dominated by black fruits, cherry and chocolate. Full bodied with savory, integrated fruit tannins and persistent finish.

Winemaking at Morambro Creek is very traditional and labour intensive. Oak maturation takes place using 35% new French barrels. This blend was put together using select barrels from our family  estate that best demonstrate the intensity of our fruit balanced by integrated oak.

"From the small Padthaway region three hours' drive east of Adelaide, this is a full-bodied Cab that, despite the region's warm climate, avoids being bombastic. Dark and deep with a hue of deep bright ruby red. Intense and complex bouquet of red cherry and blackberry intermixed with notes of minerals (graphite, wet river rocks), licorice, fresh blond tobacco and a hint of fresh blackcurrant. Full bodied, the palate is reminiscent of the nose, with a richly tannic yet round frame and with an outstanding finesse. The tannins from both bench and foothill locations create a harmonious ensemble, leading to a long, seamless and elegant finish. Built to age for decades, this collectible wine will open up after a few years of cellaring and is particularly representative of this special side of St. Helena. Morlet Estate features the interaction of the loamy, well drained and rocky volcanic soil, the typical sunny mountain climate and the low-interventionistic Morlet winemaking approach.

More masculine, backward, and austere, with a Chateau Latour-like character, the 2015 Morlet Estate gives up darker fruits, crushed rock, and ample lead pencil-like notions to go with a full-bodied, concentrated, structured feel on the palate. With building tannin and obvious minerality, it’s going to handsomely reward patience.

Mt Monster Cabernet Sauvignon is 100 percent Cabernet

Winemaking: Our Cabernet is fermeneted in static fermenters at controlled temperatures to retain the varietal aromatics. Once complete the wine is left for 7-1- days on skins to aide in the extraction of soft fleshy tannins and build wine structure. French and American oak has been used sparingly to ensure maximum fruit expression is retained in the final wine.

Tasting notes: Deep purple in colour. Classic aromas of lifted blackcurrant, blackberry and mint on the nose. Flavours follow through of sweet berry-fruit accented by fresh muddled mint. Elegant, structured palate with big velvety tannins.

Pazo de Senorans Seleccion de Anada Albarino is made from 100 percent Albarino. 

Straw yellow with greenish tints, vivid and brilliant. High intensity and very expressive. Profusion of aromas with traces of mineral. Great volume and ample body leaving a lasting impression from beginning to end.

Siegel Gran Reserva Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon. 
Pre-fermentative cold maceration for 5 days, with alcoholic fermentation occuring at 27-29 degrees C to better extract polyphenols from the wine. Post-fermentative maceration for 2 to 3 weeks. Once the wine has been blended it is smoothly clarified. Aged in French oak barrels for 10 to 12 months.

The grapes for the Gran Reserva wines are the product of a careful selection of Siegel's best vineyards in the Colchagua Valley, harvested by hand, and revealing a strong expression of the land.

Deep ruby red with aromas of cassis, red fruits, black pepper, black cherries, tobacco, cinnamon and chocolate. On the palate it is highly concentrated with juicy notes of red fruits and spices. Structured & complex from the oak aging.

Siegel Special Reserve Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon.

Our Special Reserve wines represent the union of tradition and innovation in two generations. The grapes are sourced through careful selection of our best vineyards. Their ripe and round tannins clearly express the terroir of Colchagua. Siegel Special Reserve Cabernet Sauvignon has been aged for 12 months in french oak barrels, lending it structure and complexity. The wine is deep ruby red and presents aromas of Cassis, red fruits, black pepper, black cherries, tabacco, cinnamon and chocolate. On the palate it is highly concentrated with juicy notes of red fruits and spices.

Then part of the wine is decanted into barrels for 10-12 months. The rest of the wine finishes its malolactic fermentation in stainless-steel tanks. Once the wine has been blended it is smoothly clarified.

This beautiful wine opens with aromas of cassis, blackberry, and earthy plum on the nose, with a touch of cedar that elegantly underlies the rich dark fruits on the nose. The wine is rich and full bodied on the palate, the acidity is supple, supporting the layers of plum, dark cherry and dusty minerality. Alongside these you have a touch of espresso bean and slight vanilla. The smooth tannins follow through to drive the finish, giving longevity to the palate.

A classic balance between generous red and black fruits and firm tannins shows in this full-bodied wine as it unfolds black cherries, blackberries, oak char and black pepper. It's grippy in texture—perfect for a steak or lamb chop.

The Serpent's Back is the most refined of these three Cabernets, but it has plenty of Calistoga punch.
