Beliere Bugey-Cerdon  is made from 95% Gamay, 5% Poulsard (a local grape from Jura).

Spontaneous fermentation. An altogether preferable scenario to spontaneous combustion, and A LOT more fun to drink. This pink, semi-dry bubbly was made by spontaneous fermentation, otherwise known as methode ancestrale. Grapes are picked by hand (not just any grapes, these are the local Poulsard and Gamay grown on mountainous slopes in the shadow of the Alps), and fermented in chilled vats just reaching 5 or 6 degrees alcohol. The young and light wine is then bottled, along with its active yeast and considerable unfermented sugars. Under pressure of the cork, the wine continues to ferment, gaining a few degrees of alcohol but retaining a nice amount of sweetness. The bubbles, of course, are another result of fermentation under pressure. This one is so delicious and fun to drink, with a distinctly, well, grapy aroma and a fruitiness that calls out for celebration and jubilation. 
This is also wonderful served with chocolate cake! 
8% ABV.

Produced from the "Ancestral method" (also used to produce Clairette de Die): Low temperature fermentation starting in the tank, light filtration that leaves active yeast in the wine, bottling of the wine with fermentation continuing in the bottle ("spontaneous fermentation in the bottle"), retaining some sugar (40 gr/liter at the end). Made from 95% Gamay, 5% Poulsard (a local grape from Jura).

Bernard Cote Rotie Coteaux de Bassenon is made from 94% Syrah and 6% Viognier.  
The harvest is destemmed, cooled and placed in thermo-regulated stainless steel vats. It will stay there for 3 to 4 weeks with daily pumping over and punching down during the alcoholic fermentation.
Wine was aged in French Oak barrels for 18 months (20% new)

The wine comes from a tiny parcel in the commune of Tupin et Semons, located in the extreme south of the Côte Rôtie appellation. Made from old vine Syrah and a small percentage of Viognier, this cuvee offers a deep red color with purple hues, and a fragrant nose of candied red fruits with some roasted notes. A wine of great finesse and a delicate, long, silky finish.

Pair with beef stew, marinated red meats and sweetbreads.

Vineyard- El Mirador Vineyard in Rivadavia, 2,132 ft. Elevation. Soil composed of mostly sand.

Ageing & Vinification- Wild Yeasts with 25 days maceration , 12 Months ageing in 100-year-old foudre.

Review:

Sour cherries, blueberries and spice box on the nose. Medium-to full-bodied with firm tannins. Savory and fleshy on the palate with some structure, leading to a flavorful and fruity finish. One of the best bonardas out there. Try after 2023.

Deep cherry red in color with a garnet rim. On the nose, it is intense and elegant, with a base of ripe fruits that blends with the subtle tertiary aromas of sweet spices and cocoa. On the palate, it is balanced, full-bodied but with sweet and pleasant tannins, with a long and very persistent aftertaste.

Boekenhoutskloof Syrah Swartland is made from 100 percent Syrah. 

Grapes for our Boekenhoutskloof Syrah are picked from selected parcels of the finest Syrah, grown at our Swartland farms, namely Porseleinberg and Goldmine, close to the small town of Riebeek-Kasteel. These vineyards were planted on the rocky bedrock of decomposed Mica-Schist, a unique terroir, finding its expression in our concentrated and structured wines made from this Rhône grape.

The nose is perfumed, forthcoming and fresh, offering an array of rich dark fruits with a spicy, floral, even feral character, derived from complex aromas of dark berries, plums, violets, black olives, star anise and potting soil. The black fruits and earthy character of the nose follow through onto a dark, brooding palate with flavours of wild berries, brambles, liquorice, tobacco, cloves and black cardamom. The mid-palate is concentrated, deep, dense and slightly dusty, with dry, very fine cocoa-powdery tannins lending structure. The wine is very precise, with a medium to full body, a tight, grainy texture and vibrant acidity to balance. Blackberries, blueberries and notes of garrigue and dark chocolate linger on a savoury finish.

Using fruit from two exceptional Swartland sources – Goldmine and mostly Porseleinberg – this foudre-aged Syrah is fresh, subtle and intensely aromatic, as schist Syrahs often tend to be. Complex, floral and refined with remarkable freshness and palate length. Drink: 2020-2028.

Bressia Profundo is made from 50% Malbec, 30% Cabernet Sauvignon, 10% Merlot and 10% Syrah

Profundo began during the era of “assemblages” in Argentina; wines from various grapes combined in different proportions, achieving a singular, complete wine with great definition.

The Malbec, the Cabernet Sauvignon, Merlot & Syrah come from Lujan de Cuyo vineyards 3,100 feet above sea level. Planted 6,500 plants per hectare.

Intense red color with purple tones. Delicate strawberry, blackberry aromas intertwined with chocolate, tobacco, dulce de leche and vanilla nuances. Harmonious and elegant in the mouth with a long finish.

"The 2017 Bressia Profundo is half Malbec with 30% Cabernet Sauvignon, 10% Merlot and 10% Syrah from Agrelo, Luján de Cuyo and was aged in used American and French barrels. A rich purple in color, the complex nose offers violets and white pepper with hints of ripe plum, raspberry and blackcurrant with whiffs of mint and balsam over a bed of oak. Indulgent initially, the flow grows voluminous and gentle with delicate tannins enlivened by the juicy freshness. A nuanced red of ephemeral flavor. - Joaquín Hidalgo"

Cardinale Napa Valley Cabernet Sauvignon is made from 91% Cabernet Sauvignon, 9% Merlot.

Super structured and with minerality to spare, this Cabernet Sauvignon offers a real presence on the palate from start to finish. Generous notes of dark chocolate balance beautifully with a blue and black fruit flavor explosion, finishing with a subtle whisper of rose petal.

I feel this wine expresses the greatness of California and its hidden pockets where Cabernet can excel. The cold Pacific Ocean running the entire length of the state presents maritime influences – and with each small distance eastward the climate warms. Stony soils, south facing slopes and moderately warm conditions are the keys to producing dark, rich and good tasting Cabernet.

A small release from Caymus Vineyards, this wine is a California-appellation Cabernet Sauvignon – supple, dark and rich, bearing the signature hallmarks of Caymus. It is sourced from sites throughout the state which feature climatic conditions, soils and topography that are ideally suited to Cabernet. This project stems from excitement over California's diverse vineyard land, often in lesser-known areas, with the potential to produce exceptional Cabernet. 

Graviere La Rouge Cuvee les Terrasses is made of 70% Merlot and 30% Cabernet Sauvignon

Deep red color with a narrow purple rim. Attractive aromas of ripe, juicy cherry and blackberry over spice, integrated toasted aromas. The palate is balanced and full-bodied with supple tannins, displaying rich cherry flavors combined with gentle toasting characters and a touch of spice. The finish is lasting with a bitter almond aftertaste.

Average age of the vines is 25 years. 
Manual harvest from September 21th to October 7th 2015.
Upon arrival at the winery, only the best grapes were selected using a sorting table.
Skin contact maceration during 2 weeks in temperature controlled vats. 
75% of the final wine was aged in stainless steel tanks with French oak staves and blended with 25% of wine aged in barrels.

Serve with red, white meats, poultry and fine cheeses.

Cheurlin Thomas 'Celebrite' Blanc de Blancs Extra Brut

An elegant soft gold color with a refined ring of bubbles. The nose reveals fruity aromas of a complex wine. The mouth is fresh and balanced with a woody finish. A great character with a perfect balance.

Cuvee harvested on the south facing land. The limestone base of the seat is emphasized by a thin bed of Kimmeridgian marl leaving a grayish underground, earth colored by white marl, ground vineyards par excellence. The wine is matured in oak barrel and pipe, second fermentation in the bottle with a minimum of 18 months aging. Reflects the white varieties of the Barrois hillsides.

Dark an brooding in the glass, our 2019 Hommage Cabernet Sauvignon is bursting with ripe plums, black cherries and notes of cassis. On the palate the black fruits linger and mix with a hint of crushed cassia bark and toasted oak and are surrounded by strong, balanced tannins and notes of espresso and dark chocolate. This wine is bold and sensuous with a silky texture and lengthy finish.

Our Tenma Vineyard is located in the foothills of Mount St. Helena northeast of the town of Calistoga. These 40 acres of rugged land are part of an alluvial fan spilling out from the Palisades Mountains in the northeast corner of the Napa Valley. The rocky terrain here is well-drained with a very sparse topsoil which is a perfect combination for growing world-class Cabernet Sauvignon when combined with the climate of Napa Valley. The 2016 Cabernet Sauvignon Hommage is deep purple-black colored and reveals notes of crème de cassis, stewed plums and fruitcake with touches of licorice, Chinese five spice and hoisin with a waft of cedar chest. Full-bodied, opulent and boldly fruited with loads of berry preserves layers, it has a chewy backbone and earthy accents on the finish.

Clos Saint-Jean Chateauneuf Du Pape Vieilles Vignes is made from a Grenache, Syrah, Mourvedre, Cinsault, Vaccarèse and Muscardin, the Châteauneuf-du-Pape Vieilles Vignes is made from old vines located in and around Le Crau. The Grenache is aged in concrete for 12 months while the remainder is aged in demi-muid.

Domaine Jean Grivot Vosne-Romanee is made from 100 percent Pinot Noir. 

Domaine Jean Grivot is among the great names in Burgundian wine. Étienne Grivot and his wife Marielle took over from Étienne’s father Jean Grivot in 1987. The vineyards are densely planted and farmed organically “sans certification” while the aim in the cellar is for balance and clear expression of terroir. 

Jean Grivot’s 38.3 acres spread across 22 appellations with vineyards in the communes of Vosne-Romanée, Vougeot, Chambolle-Musigny, and Nuits-Saint-Georges. Besides the three grand crus, there are 8 premier crus including the much lauded Les Beaux Monts and Suchots in Vosne-Romanée. The grapes are completely de-stemmed and fermentation is spontaneous.

About the Vineyard:

Vosne-Romanée is from village-level parcels lying between the Vosne and the D974. Domaine Jean Grivot is one of the finest producers here and this wine is intended to be a classic expression of the village with red and black fruit perfumed with spice and violet nuances.

Wine Production:

The grapes are destemmed and maceration à froid usually lasts just a day or two. The alcoholic fermentation is spontaneous and malolactic fermentation occurs in barrel. Depending on the vintage, the proportion of new oak is around 25% for the village appellations. 

Tasting Notes:

The wine shows aromas and flavors of red berries, herbs, and purple flowers. The palate is rich with ripe fruit and medium weight with bright acidity and fine tannins. Aging in up to 25% new Burgundian pièce brings notes of vanilla, toast, and baking spices.

Food Pairing:

Red Burgundy might be the world’s most flexible food wine. The wine’s high acidity, medium body, medium alcohol, and low tannins make it very food-friendly. Red Burgundy, with its earthy and sometimes gamey character, is a classic partner to roasted game birds, grilled duck breast, and dishes that feature mushrooms, black truffles, or are rich in umami.

Review:

Ripe plum and blackberry fruit, with well-integrated spice and a silky, plump texture which is nicely balanced by plenty of freshness; a typical village-level Vosne, but one that goes beyond in elegance and finesse. This is a blend of grapes grown both above and below grand crus (Aux Champs Perdrix in the case of the former, Aux Réas and others the latter). The total surface area is 2.5ha. The fruit is destemmed and carefully fermented before ageing in 30% new casks.

The Domaine Joseph Voillot Volnay Les Fremiets Premier Cru is from a parcel that is up-slope, and the wine is very calcaire, or limestony; you literally taste the stone in this elegant, intensely perfumed wine. Pair with veal filet mignon, squab, beef steak and roast duckling.

I really like this terroir and the 2021 is an absolutely classic example of this fine premier cru, offering up a refined and pure bouquet of black plums, dark berries, coffee bean, a complex base of dark soil tones, a nice touch of new oak and plenty of upper register smokiness. On the palate the wine is pure, full-bodied and very elegant in profile, with a superb core, lovely soil signature, ripe, suave tannins and a long, vibrant and complex finish. Fine, fine juice. 2033-2080.

Chablis achieves its highly distinctive mineral character due to its cool northerly climate and its highly calcareous soil. The Domaine Louis Moreau Chablis Vaillons Premier Cru is a generous, fleshy and lively wine that displays a beautiful balance of minerality, fruitiness and elegance.

Chablis, with its steely character and fresh citrus flavor, pairs well with white fish and shellfish and its naturally high acidity can counterbalance cream-based sauces. Unoaked Chablis lends itself well to vegetables, starches, Comté, or fresh goat cheese.
