Tamarack Chardonnay is made from 100% Chardonnay.
Bright aromas of ruby red grapefruit, mango and stone fruit are found in the bouquet while on the palate, the bright acidity of this wine showcases flavors of guava, crisp Granny Smith apples and Asian pears. Combing the best of both cooperage techniques, the combination of aging in stainless steel highlights the fruit while the aging in neutral French oak provides an added complexity to the wine.
Aged 60% in neutral premier French oak and 3% in new premier French Oak 37% stainless steel.Dropped by gravity straight to the press, the juice is pumped directly to barrel or tank and chilled, inoculated with Chardonnay 3079 yeast, primary fermentation started and finished, secondary fermentation started but completed to preferred taste, typically around 50% completion. All fermentation is done in a 58 degree Fahrenheit barrel room.

It's going to need 3-5 years of bottle age, but it’s a classic expression of this terroir.

Thorn Clarke Shotfire Quartage is made from 58% Cabernet Sauvignon, 16% Cabernet Franc, 16% Merlot, 10% Petit Verdot.

The fruit was harvested at night. Fermentation was carried out in a variety of small capacity fermenters. After pressing the parcels were filled to French oak (12 months) for maturation. The wine was racked after six months and the parcels were blended to form the final wine.
Shotfire Quartage is based on the five traditional red varieties found in the Bordeaux region of France (Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot and Malbec). The Thorn-Clarke winemakers use at least four of the varieties to create the blend each year (occasionally, they can get over excited and use all five). The blend is a reminder to not only look to the future but also to keep an eye on the past and tradition.
Much like the previous vintage, the 2020 harvest has produced wines of immense quality but with very low quantities. Another dry winter and mild weather during the ripening period lead to great varietal flavours and excellent tannin structure. Upon harvest the bunches were few and far between and the berries themselves small. This led to fruit with intense flavor and color along with great power and balance.
This generous blend boasts a rich deep red-purple color. Aromas of blackberries, satsuma plum and anise fill the glass. On the palate, plush tannins are accompanied by rich notes of cassis and blackcurrant. Together they produce a wine with lavish density, complexity and length. A wine that can be enjoyed now or laid down to age for many years.
The Shotfire range honors a family pioneer who worked the Barossa goldfields in the late 1800's. He had the hazardous job of being a 'Shotfirer'; one who handled the explosives to be used in finding that rich vein of gold.
This Thorn Clarke Mt. Crawford Riesling is a fine example of Mount Crawford climate, soil and aspect combining to display a varietal bouquet of spicy floral characters. With fresh, crisp citrus notes and a long finish on the palate, this wine can be enjoyed with a vast array of foods. The winemaker recommends enjoying this with spicy tandoori chicken.
Mas la Plana is graceful and balanced despite its firm and dominant tannin profile. Bright crunchy acidity ensures a wine that will develop in the cellar for years to come. This polished red displays hints of its Mediterranean heritage with herbaceous bramble while holding true to brooding currant and loamy earth, reminiscent of old-world Cabernet Sauvignon.

Inviting mint, floral, cassis, clove and cinnamon nose. Juicy, lively and fresh on entry, with densely-packed soft black fruits, blackcurrant jam and spice. Textural and long with fine silky tannins and tidily-integrated acidity. Superb overall length and finish.

Toso Asti Spumante is made with 100 percent Moscato d' Asti
Sweet, aromatic, fruity and floral sparkling wine, moderate in alcohol, with fine sparkle and long lasting perlage. Of yellow straw color, it is a fine and elegant wine, ideal to celebrate every joyful event.
Toso Asti Spumante is made from Moscato grapes grown on hills in the South of Piedmont An early picking insures a higher acidity and a more floral bouquet. The grapes are crushed immediately to avoid any oxidation which might detract from the wine's aromas. The grapes are gently crushed and the juice is settled, centrifuged and filtered. The purified musts are placed in stainless steel tanks and held at near freezing temperatures which blocks completely any fermentation. This enables the producers to draw batches of fresh must whenever they decide to bottle. The batch of must is then inoculated with special yeast and fermented in an autoclave to retain the naturally produced carbon dioxide. The fermentation is stopped by a rapid chilling when the wine reaches the desired ratio of alcohol (standardly 7%) to residual sugar ( 3-5% ). The wine is then filtered, bottled and, at Toso, immediately shipped to ensure the freshest product possible.
Fresh, a floral bouquet, a sweet, fruity taste, Excellent as aperitif, best enjoyed with fruit, dried pastries and desserts in general.
Trefethen Family Vineyards Cabernet Sauvignon is made from 88% Cabernet Sauvignon, 6% Malbec, 6% Petit Verdot .
Dark fruit aromas of plum and black cherry are integrated with savory hints of cocoa, pepper and fragrant herbs. Bright on the palate, concentrated cherry flavors are layered with softer notes of vanilla and forest floor.

Here’s a wine that takes us to a vintage that excels in terms of general fruit clarity and precision. The 2021 Giusto di Notri is 80% Cabernet Sauvignon, 10% Cabernet Franc and 10% Merlot that ages in new oak (50% of the wine) with the other half going into second- and third-passage barrel. Intensity and depth are highlighted nicely here in a vintage that ended on October 16th (much later than 2020). This benefits complexity and aromas. The vintage also delivers more freshness and balanced tannins (without the sharper edges you get in 2020). This is a beautiful wine, one that's set up for long cellar aging.

The 2018 La Joie displays a brilliant violet core with a thin rim of bright ruby. Generous fruit-for- ward aromas of ripe black currant and black cherry are followed by earthy notes of fresh conifer, dried mushroom, black olive, dusty clay, anise and clove. The palate is rich and structured; possessing similar flavors of the nose, refined tannins, well-balanced acidity and a complex, luscious finish.

The wine is produced from grapes that grow in the highlands of the Mendoza River. Its second alcoholic fermentation with a prolonged contact with yeast brings complex aromas of stone fruits, such as white peach, and citrus aromas such as pink grapefruit and tropical pineapple. The Stone Corral Vineyard is planted on a southeast slope on the west side of the Edna Valley which has an east/west orientation opening up to the Pacific Ocean from Morro Bay and Pismo Beach. Approximately 120 to 300 feet above sea level, the climate is strongly influenced by the ocean providing ideal temperate growing conditions for Pinot Noir. Early spring warming, mild summer temperatures and late arriving cold fall temperatures and rain provide a long growing season for the development of rich color, concentrated and complex flavors. Soil profiles vary between blocks from sand, sandy loam, loamy sand, pebbly sandy clay loam, all fine angular blocky , including decomposing sandstone layers and numerous fossil rocks. The soils are well drained and marine in origin, resulting in an elegant Pinot Noir with extraordinary attributes.
This gem is a blend of a few precious, select barrels hailing from the finest blocks of Stone Corral Vineyard. Offers blue-toned fruit on the nose and a pretty bouquet of black raspberry, sandstone, marzipan and wild lupine flowers. Opulent, yet delicate on the palate, with velvety layers of cola nut, cherry, dried herbs and pecan sandie cookies.
