Opus One is made from 78% cabernet sauvignon, 8% merlot, 7% petit verdot, 6% cabernet franc and 1% malbec .

The Opus One is remarkably elegant and bright offering sumptuous aromas of fresh red and blue fruit, baking spices and vanilla, and a delicate fragrance of spring florals. The initial bouquet is augmented by more nuanced notes of sage, rosemary, and black olive. Juicy flavors of black cherry, blackberry and cassis flood the palate and creamy, fine-grained tannins deliver a delightfully round structure. Of the great European wine families, the Rothschilds are perhaps the best known. And Baron Philippe de Rothschild is perhaps the best known of this great family. At the age of 20, Baron Philippe took on the management of Château Mouton Rothschild from his father Baron Henri. But life was not only wine for Robert Mondavi: he broadened the American cultural palate by marrying fine wine to food, music, and the arts. The purity of fruit is really something else here, with currants and fresh flowers, such as violets and roses. Flower stems as well. Fantastic length and structure to the wine, with tightness and focus. Wonderful fruit. Graceful. A blend of 78% cabernet sauvignon, 8% merlot, 7% petit verdot, 6% cabernet franc and 1% malbec. Review:

An enticing aroma of violets, cherry blossoms, fresh blue and black fruit and great structure define this beautiful, age-worthy wine. Subtle layering of fruit and oak spices between firm, fine-grained and supportive tannins gives it a calm intensity. So elegant and polished. Hints of cinnamon and graphite accent blackcurrant and blueberry flavors that linger and grow in a long finish. Already attractive to drink, but best after 2029.

The nose leads with a bright pop of red fruit, including cherry and raspberry, followed by hints of cola and baking spices and a light herbal note. The palate shows darker fruit including blueberry and plum, and has a round mouth feel with firm, mouthwatering tannins. The finish brings a dark chocolate note and a long, lingering finish. 

Review:

Meaty and dark-fruited nose. Full-bodied with slightly chewy tannins. I like the bright acidity and definition of fruit on the palate here. Lifted and juicy. Delicious.

Grape varieties: Parellada 40%, Macabeo 30% and Xarel·lo 30%.
Harvest: Occurs in 3 stages. Macabeo within the first fortnight of September, Xarello during the second fortnight in September and Parellada within the first fortnight of October.
First fermentation and vinification: This is a "Methode Traditionnelle" with
soft pressing of the grapes to obtain 60% of the must (flower must). It is decanted and fermented with controlled temperatures of 18ºC for 20 days until it fully develops the primary aromas of the grapes.
Secondary fermentation: takes place in the bottle for 40 days at a temperature of 16ºC and final ageing for 20 months. Residual sugar: 7 gr. per litre.
Color: Pale yellow with green tones. Shiny and clear.
Aromas: Powerful in the nose, clean. Ageing aromas.
Taste: Soft and well structured, long aftertaste and good balance of acidity and sugar contents.
Gastronomy: It should be served chilled between 5ºC and 7ºC. A flute type glass is recommended. Excellent with pasta, red and soft meats and white fish.Painous is unique in that it is a Cava-Joven style sparkling wine, meaning, the wine receives the minimum aging of 9 months. This allows crisp, fresh aromas and flavors to be expressed. It is delicious for aperitif.

"Golden straw color. Aromas and flavors of brown butter poached pear, marzipan, lemon and apple, and floating in the pool with the grill going with a round, crisp, finely carbonated, dry medium body and an interesting, medium-length finish manifesting notes of dried apples, apricot jam, blanched almonds, and jasmine rice with no oak flavor. Layers of flavor from fruit to earth dance on the tongue for a classic expression of sparkling wine from Catalonia."

Paradigm Merlot  is made from 98% Merlot - 2% Cabernet Sauvignon.

Deep ruby color with aromas of black cherry and plum, a hint of cedar and soft touch of toasty French oak. Seamless and silky across the palate with a nice mouthcoating texture and nicely balanced acidity for many food pairings. Flavors are similar to the aromas, dark plums and cherries, pomegranate, spice and complimentary sweet vanilla toasty oak. Flavors linger making you want another sip.

Patricia Raquin Bourgogne Blanc is made from 100 percent Chardonnay. 

The animals shown on the label are dogs. The breed is called Borzoi, also called "Russian Wolfhound", which means "fast" in Russian. Patricia and Alain are proud owners of 2 Borzois and they designed this label so that the dogs will be guardian of the vaulted ageing cellar inside their house.

Patricia Raquin Bourgogne Chardonnay is made from grapes sourced in the Maconnais region. As it is located in a slightly warmer climate (as it is located 100 kilometers South compared to the Cote d'Or or Cote de Beaune), the wine tends to display more tropical notes, with elegance and freshness, with a touch less of minerality.

Patricia Raquin Chablis Vieilles Vignes is made from 100 percent Chardonnay.

Tasting Notes: Golden color with slight green hints. Very fresh nose with some white flower notes. Very light oak flavors on the finish with vanilla notes.

VINIFICATION: Alcohol fermentation in thermoregulated temperature (22°C) in stainless tank with fine lies remontage.
Very light filtration - vinification only with natural yeast (no yeast added). Aging in 500 liters barrels for 5 months.

VINEYARD: Kimerigian Marl

HARVEST: Harvest by hand.

Best over any white meat, fish and cheese. Also as pre dinner drink.

Pierre Olivier Brut Vin Mousseux NV is made from 100% Airen.

A value sparkling brut, made with Airen grapes from around the French/Spanish border (next to the Pyrenees). This is a new Kysela Project.

The bubbles are obtained using the Charmat method, named after Eugene Charmat, where the second fermentation takes places in a large, closed pressurized tank. It is different from the Methode Champanoise as the secondary fermentation doesn't take place in the bottle.

Pomerols Beauvignac Syrah Rose is 100% Syrah

Pink colored, firm in the style of a Tavel rosé, the wine shows strawberry aromas, candy notes on the nose and cherry and pomegranate flavors on the palate. The wine is silky, elegant, crisp and refreshing.

The Syrah is bled off after 8 hours of maceration.

Resonance Decouverte Vineyard Pinot Noir is made from 100 percent Pinot Noir.

Robert Mondavi Winery Napa Red Blend is made from 74% Cabernet Sauvignon, 13% Cabernet Franc, 9% Merlot, 4% Petit Verdot.

Robert Mondavi’s vision was to elevate Napa to the world stage. In celebration of his achievement, our Napa Tier wines are sourced from distinctive vineyards throughout the Napa Valley and truly emulate a classic Napa Valley style.

Nearly half of this year’s blend is sourced from the deep, well-drained soils of Oakville, which provides gorgeously dark, supple wines with fine tannins. Stags Leap District, Oak Knoll, Yountville, and Rutherford also find their place in the bottle, with the varying mesoclimates and soils of these vineyards integrating seamlessly into a 100% Napa Valley blend.

Romariz Vintage Port is made from Touriga Nacional, Touriga Franca, Tinto Cão, Tinta Roriz, Tinta Barroca

Deep inky purple color. Intricate nose with aromas of blackberries and logan berries, subtle hints of amber and spring blossom and delicate spice. A tight, well-formed palate with an abundance of dark berry fruit, rich chocolate and liquorice, culminating in a long finish. Firm, closely woven tannins that give the wine great structure and body. An elegant finely constituted Vintage Port which will drink beautifully now or age quietly in the cellar.

A vintage port is made from blended grapes, all from the same vintage year. Vintage ports are historically only declared every 3 out of 10 years. Romariz vintage ports age for up to two years in oak, then go unfiltered into the bottle for further aging.

Romariz White Port is a blend of wines from the Arinto, Boal, Codega, Esagna CAO, Folgasao, Gouveio, Viosinho, and Rabigato grapes grown in the Douro. This is aged in oak for three years. Aromas of fruit cocktail, round and full, orange-nutty undertone, strong flavored and sweet. Refreshing summertime drink on ice.

Rubus Cabernet Sauvignon Napa Valley is made from 100 percent Napa Valley Cabernet

Its long finish displays full mature flavors of blackberry, currant and chocolate with just a hint of toasty oak and black cherry. The tannins are refined and polished, allowing the fruit to be the focus.

Rubus Chardonnay Colchagua Valley is made from 100 percent Chardonnay.

Attractive yellow color with some green tones. Its intense varietal character reminds one ripe fruits like pineapple, with notes of melon and honey well harmonized with oak. In the mouth it is full, rich and buttery.

Grapes are harvested in the morning in order to avoid high temperatures.

At the winery, the grapes are gently pressed.
Alcoholic fermentation is held between 15º and 16º Celsius.
Then, 25% of the wine goes into American Oak barrels for 3 months.
After this, the blend is made, clarified, cold stabilized and filtered. Right before bottling, the wine goes through an on-line filtration system (plate and sterile membrane) to ensure microbiological stability

As far as the food pairing, it is delicious with pasta, fish, seafood and mild cheeses. It is also delicious on its own as an aperitif.

Aromas of gooseberry, lemongrass, boxwood, fresh celery and bready notes on the nose. The palate is dry to taste with juicy gooseberry and citrus flavors forming a light, refreshing medium bodied wine with a tart yet soft lingering finish.

Grapes are gently pressed, settled and racked to fermentation. Juice is cool fermented in stainless steel tanks for 21 days and left on the lees for 2 months prior to blending, light fining, filtering and bottling.

The perfect accompaniment to vegetable or light seafood dishes or to enjoy before a meal.
