Roland Champion Champagne Cuvee Aramis Brut is made from 70% Pinot Meunier, 20% Pinot Noir and 10% Chardonnay.
Very nice effervescence, fine bubbles - A nose spawn with notes of mature fruits such as quince and yellow fruits jelly. Aromas of biscuits and honey at the end of the palate, which remains supple, well structured, and with a beautiful length.
Black grapes from Verneuil and Vandière in the Marne Valley, argilo-limestone soil. Chardonnay grapes from Chouilly, “Grand Cru” from the famous “Côtes des blancs”, limestone soil and subsoil.

TASTING NOTES:
This is a classic, delicious Honjozo with crimini mushroom, almonds and lilac aromas. The first sip of this sake is full of stone fruit and minerals complimented by notes of caramel, cocoa and almond and finishes with plenty of umami.

TASTING NOTES: This fresh, subtle Honjozo has a lovely nose of cantaloupe, leek, fresh clay and pear. With just a hint of sweetness, the palate is light bodied with alluring flavors of burnt caramel, chalk and marsh-mallow and a classic Honjozo clean, dry finish.
The fanciful name "Otoko no Yujyo", represents a feeling for which the sake was made, to honor brotherly love, between comrades.

Winemaking Notes The grapes are handpicked in small baskets late August and are gently pressed as whole clusters. After a settling of 24 hours, the juice is inoculated with selected Champagne yeast and ferments in stainless steel tanks at low temperature. Once the fermentation is over, the wine ages on the fine lees until the spring of the following year. The blend is then put together and cold-stabilized prior to bottling. The bottling occurs in the spring when the cellar temperature is conducive to a second fermentation in the bottle. The now sparkling wine will age on the yeast for over 24 months. At disgorging, a small amount of dosage liquor is added in order to balance the natural acidity.

Rob and Danny harness an organic natural approach to the vineyard that exemplifies the beautifully, unique attributes of this site.
Linear and precise, the 2016 M by Michael Mondavi opens with expressive aromas of quince, plum, juniper, cassis, blackberry & dark roasted coffee beans. With time and swirls of air, notes of dried rose petals, coriander, cinnamon and clove develop. This wine enters the palate with subtle tannins at first, and soon broadens into a silky expanse of vanilla bean, cocoa, roasted dates, black cherry, and orange blossom tea. The evolution of flavors continues with candied figs, bramble-berry, and cocoa covered strawberries. Vintage Notes: A cool summer and early fall allowed a longer ripening season, helping benefit this years Cabernet Franc, as its natural spice was allowed to mature and become better defined.
Pearmund Cellars Cabernet Franc is made from100% Cabernet Franc. Known primarily as a blending grape in Bordeaux’s left bank. Its ability to grow and mature in Virginia makes it one of the States finest varietals.
Tasting Notes: A nose of cherries, raspberries and fennel. Peppery spice continues on the palate with notes of cocoa and sweet cedar wood, allowing for easy drinking. A hint of pepper will linger on the finish.
