Aging 18 months in French oak barrels (35% new for the 2020 vintage).After manual harvesting in crates and an initial sorting in the vineyard, the grapes are sorted again using the latest generation optical sorting system. Vinification is then carried out in stainless steel temperature controlled tanks however for some of the batches, malolactic fermentation is also carried out in new barrels.

Justin Isosceles Proprietary Red Paso Robles is made from 88% Cabernet Sauvignon, 6% Cabernet Franc, 6% Merlot.
Bright with a dark purple/black core and a lighter ruby purple rim showing slowforming, moderately stained tears on the glass. Attractively aromatic and complex with ripe black and red cherry, black currant, new book leather, cedar, tobacco, vanilla bean, licorice, and oak. Full-bodied on the palate with ripe complex cherry, cassis, and a subtle red berry fruit on entry, with vanilla and licorice baking spice leading into the midpalate, which shows complex savory notes of cedar, tobacco leaf, and leather. The very long, complex, and continually changing finish is a progression of sustained ripe cherry fruit accented by baking spice and oak notes, with smooth chewy tannins and balanced acidity, adding depth and freshness.

The 2020 Oakville Winery Cabernet Sauvignon exhibits aromas of cherry and raspberry with notes of fresh roses, vanilla, dust, and pencil shaving. The rhythmic structure between the granular tannings and the vibrant acidity allows the sensation of a long, refreshing finish. This Cabernet Sauvignon can be aged for a decade bringing all the earthy components of a classic Napa Cab.

This Junmai Daiginjo has a beautiful nose full of banana, melon and star anise. A big, expressive sake with aromas of ripe grapes, sour apple, cherries and well integrated umami. Wonderfully balanced with fresh flavors of mandarin, cream and steamed rice. The use of Omachi rice lends it's rich, earthy and broad character to the brew. The muroka (non-charcoal-filtered), nama (unpasteurized), and genshu (undiluted) brewing decisions give this sake a lively, forward, juicy and chewy expression — with lots of depth and body! It is utterly delightful in it's big, layered, fun nature.
