Babylons Peak Paardeberg Shiraz is made from 100 percent Shiraz. 

Babylon's Peak winery, situated on the highest weathered granite slopes of the Paardeberg Mountain, is privately owned by the Basson family who has passed down the tradition, passion and art of winemaking over four generations. Predominantly low-yield dryland bushvines are selected to produce these excellent wines with distinctive character.

A classic Shiraz with dark fruit, violets and white pepper. An elegant wine with ripe tannins and a lingering aftertaste.

The grapes were harvested by hand. The grapes were destalked only, no crushing was done. Cold maceration was done before fermentation started in open fermenters. The grapes fermented between 24-26°C for 5-7 days, after which the wine was taken to barrels where it went through malolactic fermentation. After malolactic fermentation was completed, the wine spent 14 months in 225 litre French oak barrels until bottling.

Pairs with rich and creamy meat dishes eg. oxtail and venison.

Bavencoff Pernand Vergelesses Blanc is made from Chardonnay.

The wine offers a white gold or pale yellow color turning into darker gold with age. It boasts aromas of white flowers, (may, acacia) developing into notes of amber, honey and spices. On the palate it is mineral, harmonious and easy to like.

Aged in new oak barrels (Allier).

Sushi, fresh-water fish in white sauce, and for pasta or a seafood risotto.

Beliere Bugey-Cerdon  is made from 95% Gamay, 5% Poulsard (a local grape from Jura).

Spontaneous fermentation. An altogether preferable scenario to spontaneous combustion, and A LOT more fun to drink. This pink, semi-dry bubbly was made by spontaneous fermentation, otherwise known as methode ancestrale. Grapes are picked by hand (not just any grapes, these are the local Poulsard and Gamay grown on mountainous slopes in the shadow of the Alps), and fermented in chilled vats just reaching 5 or 6 degrees alcohol. The young and light wine is then bottled, along with its active yeast and considerable unfermented sugars. Under pressure of the cork, the wine continues to ferment, gaining a few degrees of alcohol but retaining a nice amount of sweetness. The bubbles, of course, are another result of fermentation under pressure. This one is so delicious and fun to drink, with a distinctly, well, grapy aroma and a fruitiness that calls out for celebration and jubilation. 
This is also wonderful served with chocolate cake! 
8% ABV.

Produced from the "Ancestral method" (also used to produce Clairette de Die): Low temperature fermentation starting in the tank, light filtration that leaves active yeast in the wine, bottling of the wine with fermentation continuing in the bottle ("spontaneous fermentation in the bottle"), retaining some sugar (40 gr/liter at the end). Made from 95% Gamay, 5% Poulsard (a local grape from Jura).

Betz Family Domaine de Pierres Syrah is made from 100% Syrah.

With our long history of making single site syrah's in Washington, it made sense for us to venture into the Rocks District of Milton Freewater in the Walla Walla Valley to bring you our newest syrah, "Domaine de Pierres."

The Rocks AVA produces syrah that shows a distinct character, separating it from any other site in Washington State. One thing in particular that has drawn people here is the gallet stones present throughout the valley. They are very similar to the pudding stones that are found in Châteauneuf-du-Pape, and can be anywhere from golf ball size, to softball size or larger. Since we purchased the vineyard in 2014 we have been tilling the earth multiple times every season to expose these rocks. The gallet stones act like a heat sink, giving a little extra push to help ripen syrah in an area with marginal heat accumulation. 

In the glass, Domaine de Pierres stands out from our other syrah's because of its incredibly savory profile. Notes of roasted meat, fresh herbs, olive tapenade, tobacco and graphite are supported by dark fruit, espresso, and lavendar. The wine has a lower acidity and higher PH than our other wines, which contributes to a velvety, full bodied mouthfeel. Even in the cellar, we immediately noticed a difference in the color, aromatics and flavor that these syrah grapes were able to express. 

The other big reason that we are so excited about the wine from this particular AVA, is that the history of the Rocks is happening right now! Our vineyard, “Ancient Stones,” has only been planted there since 2007, and the beginning of the Rocks as a wine growing region only really started in the 1990's. There is a lot of energy and exploration going on, and it has been a fun experience for our team to be a part of it.  We still have so much to learn about this region and it is very exciting to feel like we are on the upward swing!

Intense ruby ​​​​color of high layer with garnet edge, clean and shiny. Intense nose that, from the beginning, transmits complexity, penetrating, with aromas of black fruits, blueberries and currants, undergrowth, roasted memories, toffee, coffee powder, liquorice, cloves, vanilla and lebanese cedar. Mouth with freshness and balance, with tannins ripe and creamy, which highlight its elegance, with a step harmonious and intense. Long and pleasant aftertaste, with a great variety of balsamic and spicy memories.

Review:

The old-vine component of the El Otero parcel, running to around seven hectares, supplies the fruit for this ageworthy Tinto Fino. After a frost-induced break in 2017, it's back with interest in 2018. Aged in new French oak, but not dominated by the wood, it's a finely judged red from Julio Sáenz with notes of blackberry and tangerine, filigree tannins and a long, textured finish. 2023-33

Boussey Monthelie Rouge Les Hauts Brins is made from 100 percent Pinot Noir. 

The vineyard for this wine is located in the North-Esat corner of the appellation (not too far away from Volnay) and it has a perfect South sun exposure. 

Boussey Monthelie Rouge shows a beautiful light garnet color.

It displays classic aromas for the appellation with dark fruit and peony. 

Excellent with beef and grilled vegatables.

Capezzana Ghiaie Della Furbia Toscana IGT  is made from Cabernet Sauvignon 40%, Syrah 35%, Merlot 25%.

In 1979 Ugo Conti Bonacossi created Ghiaie della Furba from vineyards planted among the pebble (Ghiaie) rich soils of the Furba stream.  Originally planted with clippings from the famed Chateau Lafite estate in Bordeaux, the wine was made from Cabernet Sauvignon, Cabernet Franc and Merlot until the blend was changed in 1998 with the addition of Syrah.  The inclusion of Cabernet Franc was slowly discontinued and today the blend includes Cabernet Sauvignon, Merlot and Syrah and is made only in the best vintages

Review:

This wine starts with pine needles and crunchy red fruit on the nose, with wet slate, cedar and tobacco leaf slowly emerging. The palate turns richer, with cherries, blackberries, dark chocolate, a little tar, coffee and sambuca. Tannins are very firm and the acid vibrant through a long finish.

Cardinale Napa Valley Cabernet Sauvignon is made from 91% Cabernet Sauvignon, 9% Merlot.

Super structured and with minerality to spare, this Cabernet Sauvignon offers a real presence on the palate from start to finish. Generous notes of dark chocolate balance beautifully with a blue and black fruit flavor explosion, finishing with a subtle whisper of rose petal.

Winery Notes:

Each year, we set aside the best barrels of our Cabernet Sauvignon from Napa Valley to produce Special Selection. Distinguished by extremely fine, velvety tannins and enjoyable upon release or with aging. A wine of structure with intense concentration of supple flavors and dark fruits. Special Selection is the only wine in the world honored twice as Wine Spectator magazine’s “Wine of the Year.”

Cazaux Gigondas Cuvee Prestige is made from 50% Grenache, 30% Syrah, and 20% Mourvèdre.

A blend of Grenache, Syrah and Mourvedre produced from the oldest vines of the estate and only in the years of highest grape quality. Aromas of prune, chocolate, spices, fruit brandy and plum. Rounded tannins and a long finish.

"Not yet bottled, the 2019 Gigondas Cuvée Prestige checks in as 50% Grenache, 30% Syrah, and 20% Mourvèdre, all from the older vines of the estate and vinified and aged in barrel. There are a tiny 700 cases produced. A terrific nose of red and black fruits, Provençal garrigue, and subtle spicy oak is followed by remarkable purity of fruit, silky tannins, and a great finish. it has a touch of modern character which is going to integrate with 2-3 years of bottle age, and it will have 10-15 years or more of prime drinking.."

Cazaux Vacqueyras Cuvee des Templiers is a  blend of 50% Syrah, 50% Grenache.

The Syrah vines are situated on the sandy, grey clay slopes of Vacqueyras near the estate. They are facing east west, so the sun warms the grapes early in the morning allowing a considerable synthesis of sugars. The sandy soil is poor giving a reduced yield. The resulting wine is very fruity with strong persistent aromas of red fruits, spices and violets brought by the Syrah. Intense black cherry, blackberry, blueberry and cherry flavors. Explosive fruit tannins give the sweet, creamy flavors structure and focus, bright and uplifting on the finish.

Enjoy this wine when young with grilled beef and bearnaise sauce, lamb and thyme. After 7-10 years excellent with game meats.

Cellier du Chateau de la Chaume Bourgogne Chardonnay is 100% Chardonnay.

Clear yellow color.
Aromas of white flowers, honeysuckle, leme tree and dried fruits.
The palate is rich and balanced, with good acidity and nice minerality.
Good length to the finish, pair with fish in creamy sauce, white meats and fine cheeses.

Cellier du Chateau de la Chaume Petit Chablis is made from 100 percent Chablis.

Color: Pale yellow
Bouquet: White flowers, honeysuckle, linden tree and dried fruits.
Palate: Very pleasant, balanced with tension and nice minerality

Drink as an Aperitif or pair with fish, shellfish.

Charles Smith K Vintners Powerline Estate Syrah is made from 100 percent Syrah.

Friendly, approachable and vivacious, yet also dark and mysterious. Black cherry, allspice, black ash, and orange blossom. Thyme and flint with ark fruit, cedar, kelp, black pepper, juniper, crushed rock, and tons of complex floral notes. Fear not, embrace it.

While just bottled a week before this tasting, the 2019 Syrah Powerline Vineyard certainly wasn't showing any worse for it, offering a stunning bouquet of ripe red and black fruits as well as white pepper, sandalwood, tobacco, and new leather. Pure, medium to full-bodied, and vibrant, with supple, polished tannins, this brilliant Syrah is going to keep for 10-12 years, if not longer.

Chateau Castegens Cotes de Bordeaux Castillon is made from 80% Merlot, 18% Cabernet Franc and 2% Cabernet Sauvignon.

The wine boasts an intense, deep and lively red color. The nose offers black fruit, blackberry, cigar box, licorice, some delicate and integrated oak flavors as well. The mouth is full of fruit flavors, spice and fine toasty flavors. The structure is rich, but the tannins are well integrated already. The finish is long and a slight mintiness give the wine a great length and some purity.

Pairs great with meat and vegetables on the grill.

Produced from 100% Chenin Blanc planted on clay and flint stones based soils.
Vinification: aged in stainless steel tanks with temperature controlled fermentation. Aged on the lees for 4 months. 
Kieselguhr filtration.
This sparking wine is fresh and fruity. Rich and easy to drink, which makes it a wonderful aperitif. For the aficionados this is an excellent food friendly wine. Its quality makes it a great alternative to Champagne.

"The two sparkling wines should not be missed. They’re both terrific examples of how good sparkling Vouvray can be. Both are 100% Chenin Blanc cuvees, with the non-vintage Chateau Gaudrelle Vouvray Brut showing lots of effervescence and plenty of flowery brioche, buttered citrus, melon and dried apricot notes. Chateau Vermont L'Ame Grand Vin de Bordeaux is made from 40% Merlot, 30% Cabernet Franc and 30% Petit Verdot.

L'AME de Vermont represents the culmination of 10 years of dedicated work, derived from select grapes of Chateau Vermont's best parcels, chiseled to be the ultimate extraction of their terroir and Spirit. This cuvée is the Winemaker's soul. It is a reflection of the requirements, precise work and desire to achieve perfection.

A rare and confidential wine, vinified and matured in new oak barrels. Fine wine, elegant and well-balanced, with vanilla notes coming from the oak aging and subtle scents of ripe black and red fruits. A beautiful structure and great aging potential.

Cheurlin Thomas 'Celebrite' Blanc de Blancs Extra Brut

An elegant soft gold color with a refined ring of bubbles. The nose reveals fruity aromas of a complex wine. The mouth is fresh and balanced with a woody finish. A great character with a perfect balance.

Cuvee harvested on the south facing land. The limestone base of the seat is emphasized by a thin bed of Kimmeridgian marl leaving a grayish underground, earth colored by white marl, ground vineyards par excellence. The wine is matured in oak barrel and pipe, second fermentation in the bottle with a minimum of 18 months aging. Reflects the white varieties of the Barrois hillsides.

Jubilation is our newest wine in the Colgin Cellars collection. Jubilation is our Cabernet Sauvignon-based wine created with a selection of barrels that display earlier drinking characteristics from our three hillside vineyards. As our vine age has matured and small additions have been made to our original holdings, we had the privilege of increasing our selectivity. Following the blending of our single-vineyard wines, we were fortunate to have a collection of barrels that conveyed the same elegance and complexity for which we are known, yet on a more supple, approachable frame. Jubilation is a wine ready to enjoy now, with the pedigree to age gracefully in the cellar, maintaining the Colgin Cellars’ hallmarks of perfume, freshness, and minerality. The inaugural bottling of Jubilation from the 2016 vintage was released in late 2020. Future vintages are destined for select members of the fine wine trade.

Collemattoni Brunello di Montalcino is made from 100 percent Sangiovese.

Color: brilliant red with burgundy reflects; Bouquet: penetrating with memories of wild black fruits, black cherry and noble wood; Taste: warm, dry and persistent

Coming from a parcel with 10-15 year old vines planted in sandy clay and marl soils.
Harvest is 100% destemmed with a soft pressing, fermentation in stainless steel tanks at controlled temperature of 28-30°C, pumping over for the first week of maceration followed by skin-contact maceration for 20-25 days with rack and return technique (delestage).
Malolactic fermentation completed.
Wine is slightly filtered before bottling.

Double Diamond by Schrader Oakville Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon. 

Barrels: 54% new French oak, 46% second-use Schrader Darnajou French Oak
 
The 2022 Cabernet Sauvignon offers concentration, lively acidity, and refined tannins that have become the hallmark of the 2022 vintage. The nose holds notes of black raspberry, toasted cedar, juicy plum, and pennyroyal mint—a Napa Valley Cabernet Sauvignon signature.
