Deep garnet-purple in color, the 2018 Cabernet Sauvignon Snake Oil needs a little swirling to reveal emerging notes of freshly crushed blackcurrants, blackberry pie and mulberries plus suggestions of tilled soil, cedar chest and Indian spices with a touch of roses. HARVEST NOTES 

The early half of 2018 brought us moderate temperature allowing for a long growing season.   We had a majority of our rainfall in February followed by a mild Spring.  Then summer brought consistent temperatures with little heat spikes.  This weather allowed for longer hang time and for the fruit to ripen at a slower rate.  The 2018 harvest at our estate began in late August and resulted in exceptional quality.

Siegel Reserve Red Blend 1234 is made from 50% Syrah, 30% Carmenère, 10% Cabernet Franc and 10% Petit Verdot.

Deep ruby color. Intense aromas of black fruits, white pepper, spices and a hint of clove. The blend of four varieties gives a complex, deep wine with juicy tannins, good volume and very balanced.

Pre-fermenting cold maceration for five days, alcoholic fermentation at 26-28 C to obtain color and structure. Post fermentation maceration of two to three weeks according wine tasting and then the wine is separated from the skins. The wine ends its malolactic fermentation in tank. Our Special Reserve wines represent the union of tradition and innovation in two generations. The grapes are sourced through careful selection of our best vineyards. Their ripe and round tannins clearly express the terroir of Colchagua. Siegel Special Reserve Cabernet Sauvignon has been aged for 12 months in french oak barrels, lending it structure and complexity. The wine is deep ruby red and presents aromas of Cassis, red fruits, black pepper, black cherries, tabacco, cinnamon and chocolate. On the palate it is highly concentrated with juicy notes of red fruits and spices.

Serve with red meat, braised stews, grilles pork and flavorful cheeses.

Pre-fermentative cold maceration for 5 days, with alcoholic fermentation occurring at 27-29°C to better extract polyphenols from the wine. Post-fermentative maceration for 2 to 3 weeks. Then part of the wine is decanted into barrels for 10-12 months. The rest of the wine finishes its malolactic fermentation in stainless-steel tanks. Once the wine has been blended it is smoothly clarified.

CONCHA Y TORO Cabernet Sauvignon Puente Alto Don Melchor is made from 92% Cabernet Sauvignon, 6% Cabernet Franc, 1% Merlot, 1% Petit Verdot.

Deep violet in color, intense, and with a great aromatic complexity of red fruits together with floral notes of violets and roses. On the palate, it is a tasty wine with a soft spell and a superb freshness, along with the elegance and power so characteristic of Puente Alto. It is a wine with a velvety texture, lush body, and a very long and persistent finish.

Deep and serious with black olives, blackberries, blueberries, tobacco leaf, sweet red capsicum, ash, dried meat and a hint of black chocolate. This is a more direct, full-bodied Don Melchor, filled with solid blackberries and wrapped by tight, fine-grained tannins. Long and deep. 92% cabernet sauvignon, 6% cabernet franc, 1% merlot and 1% petit verdot. Better after 2024.

Inglenook Cabernet Sauvignon Napa Valley is made from 95% Cabernet Sauvignon, 3.5% Cabernet Franc, 1% Merlot, 0.5% Petit Verdot.

A wine of considerable charm, energy and finesse, 2018 Cabernet Sauvignon is opaque ruby red in color, and opens with aromas of ripe cassis, blackberry, espresso and cedar. Although powerful below the surface, the wine is extremely focused and well-balanced, with silky tannins, ample freshness, and vibrant structure, that lead to a crescendo in the lengthy, polished finish.

Full-bodied with lots of layered fruit and round, creamy tannins. The palate shows lovely ripe-berry character with chocolate and hazelnut and a long, flavorful finish. Hints of black truffles. Plenty going on here with a firm framework that gives the wine form and interest. Try it after 2022.

As seamless and elegant as they come, yet also opulent and sexy, this remarkable Cabernet Sauvignon could come from nowhere else in the world. Drink it over the coming 2-3 decades.

This is the last vintage when this wine will come exclusively from Beckstoffer’s To Kalon vineyard. In the future it will come (more and more) from Morlet’s own new vineyard in Oakville—just across from To Kalon. A blend of 87% Cabernet Sauvignon and 13% Cabernet Franc, the 2016 Cabernet Sauvignon Coeur de Vallee has a very deep purple-black color and reveals compelling notes of minted blackcurrants, black cherries and wild blueberries with touches of sage, cigar box, tilled black soil and Indian spices with a suggestion of cardamom. Full-bodied and laden with densely packed, muscular fruit, it has a rock-solid frame of ripe, grainy tannins and seamless freshness, finishing very long with those To Kalon spices lingering with fantastic persistence. 250 cases produced, to be released in the fall of 2019.

The grapes for the Gran Reserva wines are the product of a careful selection of Siegel's best vineyards in the Colchagua Valley, harvested by hand, and revealing a strong expression of the land.

Dark an brooding in the glass, our 2019 Hommage Cabernet Sauvignon is bursting with ripe plums, black cherries and notes of cassis. On the palate the black fruits linger and mix with a hint of crushed cassia bark and toasted oak and are surrounded by strong, balanced tannins and notes of espresso and dark chocolate. This wine is bold and sensuous with a silky texture and lengthy finish.

Our Tenma Vineyard is located in the foothills of Mount St. Helena northeast of the town of Calistoga. These 40 acres of rugged land are part of an alluvial fan spilling out from the Palisades Mountains in the northeast corner of the Napa Valley. The rocky terrain here is well-drained with a very sparse topsoil which is a perfect combination for growing world-class Cabernet Sauvignon when combined with the climate of Napa Valley. The low grape yields of these old vines result in highly concentrated wines with an elegance and complexity rarely seen, even within the famous Napa Valley. The 2016 Cabernet Sauvignon Hommage is deep purple-black colored and reveals notes of crème de cassis, stewed plums and fruitcake with touches of licorice, Chinese five spice and hoisin with a waft of cedar chest. DAOU Vineyards Reserve Cabernet Sauvignon is made from  77% Cabernet Sauvignon, 23% Petit Verdot.

The 2021 DAOU Reserve Cabernet Sauvignon is emblematic of Paso Robles as a world-class region for Bordeaux-style wines. Intense purple-red hues foreshadow deep aromas of black fruit, pomegranate, tobacco, mocha, and bay leaf. Trailing notes of clove, nutmeg, and vanilla emerge as the wine opens up in the glass. The 2021 Cabernet Sauvignon Reserve is blended with 23% Petit Verdot, made entirely with free-run juice, and it will be matured for 16 months in 50% new French oak. Justin Vineyards & Winery Isosceles Reserve is made from 86% Cabernet Sauvignon, 6% Merlot, 4% Cabernet Franc, 3% Malbec and 1% Petit Verdot

Complex and very aromatic with black cherry, cassis, toasty vanilla, cinnamon, cedar, graphite, oak, dusty leaf notes, star anise and red licorice. Located on the hillsides of Knights Valley, near Calistoga, this vineyard benefits from its proximity to Mount St. Helena, whose warm and windy climate is ideal for the long ripening of the Bordeaux red varietals. Handcrafted by using classical winemaking techniques, this special wine is dedicated to our son, Paul Morlet.

Dark red with a hue of purple. Intense and complex bouquet of red, black and blue berries intermixed with notes of blueberries, minerals (graphite, wet river rocks) licorice, fresh blond tobacco and a hint of lavender. Full bodied, the palate is reminiscent of the nose, with a richly tannic yet round frame and a great intensity. The hillside tannins and the classical aromatic complexity create a harmonious ensemble, leading to a very long and elegant finish. Built to age for decades, this collectible wine opens up after a few years of cellaring and is particularly representative of this special vineyard from the hillside of Knights Valley. The estate-grown 2016 Cabernet Sauvignon Mon Chevalier is a blend of 94% Cabernet Sauvignon, 4% Cabernet Franc, 1% Malbec and 1% Petit Verdot. Very deep purple-black in color, it charges forth with intense notes of crushed black cherries, black berry preserves and cassis scents with touches of spearmint, Indian spices, espresso and dried lavender plus a waft of roses. Full-bodied, the palate reveals incredible restraint, slowly revealing earth and black fruit layers framed by firm, grainy tannins and just enough freshness, finishing very long and spicy.

Moving to the top releases, the 2016 Cabernet Sauvignon Mon Chevalier comes from Knights Valley and was brought up in puncheons. The 2018 Cabernet Sauvignon from Mt. Brave is fabulous. Inky, rich and explosive, the 2018 possesses tremendous depth and tons of personality. The brooding, backward wine is going to need quite a bit of time to unwind, but boy is it gorgeous.

Paul Hobbs Beckstoffer Dr. Crane Vineyard Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon.

Grown on the west side of St. Helena, this distinctive cabernet sauvignon clearly displays its origins with a rich garnet hue and sophisticated aromas of cacao bean, crème de cassis, and sweet tobacco on the nose. Layered, with a superb structure, the wine offers impressions of blueberry coulis, black raspberry, and savory herbs like Herbs de Provence. The weighty mid-palate unveils anise spice and a graphite mineral note that combines with a fresh acidity that extends the long finish.

The 2018 Cabernet Sauvignon Beckstoffer Dr. Crane Vineyard was aged in 70% new oak this vintage, as opposed to 100% as it normally is. Deep garnet-purple in color, it rolls out of the glass with perfumed rose hip tea, fragrant earth and incense scents, giving way to a core of kirsch, blackberry preserves and blackcurrant pastilles plus a touch of iron ore. Full-bodied, rich and seductive, it has exquisitely ripe, finely grained tannins and a refreshing backbone, finishing long and minerally.

Siegel San Elias Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon. 

Fresh and delicate cassis tones, a great structure. Draw the cork half an hour before serving and serve at room temperature.

Smooth and fruity on the palate, the wine goes well with pasta, salads.

Siegel Special Reserve Chardonnay is made from 100 percent Chardonnay.

This Chardonnay has a pale yellow color. On the nose is is complex with citrus and tropical fruit aromas balanced with notes from the oak aging. On the palate it has good acidity with a long finish.

VINIFICATION: Alcoholic fermentation occurs at 16-17 degrees C. When the alcoholic finishes part of the wine is kept on a pump-over program.

FINNING AND FILTRATION: Once the wine has been blended it is clarified and then undergoes cold stablisation and is later filtered through clay.

AGING: Aged in French oak barrels for 6 months.

Pairs well with fish like Tilapia, salmon and white meats.

Siegel Unique Selection Red is made from 45% Cabernet Sauvignon, 35% Carmenere and 20% Syrah

A deep violet color. There are aromas of cassis and cherries with hints of spices, chocolate and violets. This wine is characterised by its complexity and harmony, with a robust tannic structure.

After carefully selecting the optimum harvest date, the grapes are hand selected, then they are de-stemmed and cold macerated for 5-6 days. Alcoholic fermentation occurs at 26-29°C, during this period pump overs are performed daily at the winemaker’s discretion. Post-fermentative maceration occurs for 2 to 3 weeks. The wine is smoothly clarified. Cold stabilisation only occurs when necessary.
