Deceptively sweet aromas of strawberries, raspberries and rose petals. The flavors are dark, rich, lusciously mouthwatering, with cherries, boysenberries, tart plum skins, hints of leather, sweet pipe tobacco, and coffee beans. The tannins are firm, but not a bit edgy and the finish lingers with just a touch of anise. A truly lovely vintage.

Unlike traditional red blends, Red Phoenix is both barrel aged and barrel fermented, adding structure, balance, and a new dimension to a wine that is rooted in tradition and soars on the palate.

Tamarack Ciel de Cheval Vineyard Reserve holds dark and chocolate nauces, spiced with pretty notes of allspice and clove, this wine is round and rich, bursting with ripe berries, combined with an earthy complexity and a velvety finish.
Cabernet Sauvignon makes up half of this blend, with the balance Cabernet Franc, Petit Verdot and Merlot
The wine spent 22 months on 75% new French oak with the remaining 25% second vintage French oak. Select barrels from the best forests of Taransaud, Boutes, Quintessance, and Vicard cooperages.

Winemaking: The wine is on 40% new oak, mostly French and American oak barrels with a compliment of Hungarian oak barrels for 16 months.
Crushed gently and dropped by gravity into small 1.5 ton bins, cold soaked a minimum of 48 hours, then inoculated with a variety of yeasts, hand-punched and pressed directly to barrel, where the wine finishes both primary and secondary fermentation.Only after one year in barrel do the individual lots of wine that compose the Firehouse Red get blended.
Vintage: After two consecutive years of cooler vintages, normal harvest conditions were prevalent in 2012. Hot days, cool nights and plentiful sun stuck around all summer and throughout harvest. This weather allowed for leisurely ripening which permitted long hang times producing balanced and elegant wines.

The Tamarack Cellars Vineyard
Grapes are purchased throughout the Columbia Valley and are crushed, fermented and blended in a small winery located in a World War II firehouse complex at the Walla Walla airport.
All older vintage wines have been purchased from a single collectors cellar. Pictures can be requested before shipment.

Bourgogne Passetoutgrains is an Appellation d'origine contrôlée (AOC) for wine from the region of Burgundy.
Most Bourgogne Passetoutgrains is red, although rosé wine may also be produced. Unlike other Burgundy wines, which are
primarily produced from a single grape variety, Bourgogne Passetoutgrains is essentially a cuvée of Gamay and Pinot noir.
This is a quintessential bistro wine. Fresh and fruity, displaying red and black fruit flavors. Well balanced, good structure and silky finish with excellent length. Serve slightly chilled.
