Waterstone Special Select Cabernet Sauvignon Napa Valley Project C is made from 100% Cabernet Sauvignon.
The backbone of this Cabernet Sauvignon is derived from a vineyard in the Atlas Peak AVA of Napa Valley where soils are volcanic in origin and have limited water retention. The balance of fruit is sourced from Coombsville and Oak Knoll. The small berry clusters and intense fruit from low-yielding vines create a wine with full flavor and longevity.
This Cabernet delivers multi-layered aromas of ripe black cherries, toasted oak, dark chocolate, cardamom, vanilla bean, and cedar. A rich medium-bodied wine with plush rounded tannins and juicy blackberries and orange zest that linger on the finish.

The grapes for this wine were grown in the Oak Knoll District of Napa Valley, where soils are transitional from gravel to silty clay loam. The climate is moderate to cool with marine air until mid-morning and frequent late afternoon breezes that maintain cooler temperatures and ensure a longer growing season. Chardonnay from this region showcase flavors of crisp apple, mineral notes and tropical fruit with good acidity.
Aromas of lemon curd, sweet butter, brioche and sun-ripened peach mingle with notes of nutmeg and vanilla bean. The palate is creamy, with zesty lemon overtones and minerality persisting on the finish.

Named after our first-born daughter, Cuvée Katrina Eileen is primarily composed of fruit from a vineyard in the Western Hills of Yountville, where yields are miniscule. The extremely rocky soil of the vineyard produces concentrated clusters of perfectly ripened Cabernet Sauvignon. In German, the name “Katrina” represents purity and fittingly, this wine is made entirely from the Cabernet Sauvignon grape, providing a pure expression of this decadent varietal. It also reflects our daughter’s personality with flavors that are complex, unreserved and expressive.
Always a 100% Cabernet blend, our 2017 Cuvée Katrina Eileen is an opulent and mouth-enriching wine. Captivated by the inky-black color, luscious scents of dark espresso and cinnamon stick leap out, along with powerful elements of graphite and cassis. Remarkably rich and seamless, while boasting flavors of blueberry compote, dark chocolate and black raspberries, this is a compelling and luxurious wine focused upon velvety texture, silky tannins and incredible length. An intentional breadth on the palate and length in the finish are hallmarks of this wine.
Napa Bench Cabernet Sauvigon Napa Valley is made from 95% Cabernet Sauvignon, 3% Merlot, 2% Petite Verdot.
The wine is aged in French oak barrels for 16 months.

The pallet is fine grained tannin, long and refined with a high degree of Deliciosity! The finish lingers and invites a second glass. Deep garnet in color. Baking spice aromas of cinnamon and clove are intertwined with dark stone fruits, blackberry pie, vanilla, white pepper and notes of oak and rose. A full bodied palate presents layers of dark black cherry, coffee, blackberry, dark currant and notes of milky chocolate. Beautifully rounded with an unctuous velvety mouth-feel. This refined wine is a sensational expression of what a Napa Valley Cabernet represents with a long, smooth finish and fine grained tannins.
Cardinale Napa Valley Cabernet Sauvignon is made from 91% Cabernet Sauvignon, 9% Merlot.
Super structured and with minerality to spare, this Cabernet Sauvignon offers a real presence on the palate from start to finish. Generous notes of dark chocolate balance beautifully with a blue and black fruit flavor explosion, finishing with a subtle whisper of rose petal.

Black olives and graphite at the end. This potpourri of Napa cabernet character takes your palate on a tour of so many of the regions, including all the mountains, such as Howell, Veeder and Spring Mountain, as well as Atlas Peak, Stags Leap, Yountville and St. Helena. In this time of multimillion-dollar vineyard estates and celebrity winemaking consultants, when it seems that financial backing has replaced skill as the key to success in enology, it is rare that a simple idea can give birth to wines that stand out for flavor and balance, rather than pedigree alone. A collaboration between veteran winemaker Philip Zorn and longtime wine executive Brent Shortridge, Waterstone Winery was formed in 2000 when the two men were introduced and discovered a shared interest in creating luxury wines at affordable prices. Bringing together their previously established relationships with Napa Valley growers and vintners, the pair set out to develop balanced wines of varietal character through intelligent sourcing. Preferring to focus on the wine itself rather than the accumulation of land and facilities, Zorn and Shortridge own no vineyards themselves, nor do they own the facility where their wines are made. Dedicated winemaking, strong relationships with top growers and long-term grape contracts are the keys to Waterstone’s quality and success.

Intense in colour, flavour and aroma, our 2021 Carnival of Love Shiraz captivates the palate from the first sip. Powerful yet delicate, lifted aromas of red cherry, blackberry and turkish delight evolve, while subtle hints of mocha linger. Infectious chocolate cherry, fresh plum and liquorice add to the complexity, while creating a seamless structure and lingering finish.
TECHNICAL NOTES:
The grapes were grown on the Gateway vineyard in McLaren Vale. Barrel fermented and matured in 100% American oak, using 100% new barrels. The required Marquis Fruit Weight™ for the Love Series is 85% – 95%. The Actual Fruit Weight for 2021 Carnival of Love 88%.

Another sensational edition of the Mollydooker ‘Carnival of Love’ Shiraz from 2021 — and I am not the least surprised. I’ve had every edition of this wine for more than a decade. This bottling was as usual aged in all new American oak. On the nose this takes on dense black currant jelly, cigar box and shades of creosote with Arabica bean. The palate is soft and inviting with its plush texture and seamless mouthfeel as this effortlessly glides throughout the drinking experience. A joy to drink now so young, this will easily cellar for another ten years and potentially more. But why wait?

The Signature Cabernet Sauvignon has been a foundational wine for more than five decades.
