The Chenin Blanc grapes were picked from very old dryland bushvine vineyards. The vineyard grows on weathered granite soils, contributing to the flavor of the grapes and mineral character of the wine. Production is limited to 5 tons/ha.
The grapes were harvest by hand at 22.1°B. The grapes were destalked and lightly crushed. Only the first 450 litres free-run juice per ton were fermented in stainless steel tanks at a cold temperature (10-12°C) for 21 days. The wines was left on the fermentation lees until bottling.
A crisp, fresh and fruity Chenin Blanc from low-yield dryland bushvines.

Babylons Peak Cinsault is made from 100 percent Cinsault.
Medium to light bodied. Fruit driven with spicy undertones. Soft tannins and fine complexity. A fruit driven wine with lively light palate and lingering mouthfeel.

Babylons Peak Paardeberg Shiraz is made from 100 percent Shiraz.

Predominantly low-yield dryland bushvines are selected to produce these excellent wines with distinctive character.
A classic Shiraz with dark fruit, violets and white pepper. An elegant wine with ripe tannins and a lingering aftertaste.
The grapes were harvested by hand. The grapes were destalked only, no crushing was done. Cold maceration was done before fermentation started in open fermenters. The grapes fermented between 24-26°C for 5-7 days, after which the wine was taken to barrels where it went through malolactic fermentation. After malolactic fermentation was completed, the wine spent 14 months in 225 litre French oak barrels until bottling.
Pairs with rich and creamy meat dishes eg. oxtail and venison.
Babylons Peak Pinotage is made from 100 percent Pinotage.

Dark red color, with ripe plums and mocha on the nose. Dark fruit followed by spice on the palate. A well balanced wine with smooth integrated tannins.
The Pinotage is dryland bushvines, planted on the highest south-east facing granite slopes on the farm. Due to its unique terroir, this vineyard ripens slowly over a very long period. This results in very dark color, soft tannins and good flavor compounds. The baboons normally harvest their quantity first and we pick the rest.
The grapes were harvested by hand at 25,6°B.and destalked only. No crushing was done. Cold maceration was done before fermentation started in open fermenters. When the founding fathers of the Napa Valley carved out new sub-AVAs (American Viticultural Areas) in the 1980s, Soda Canyon Ranch was not yet on anyone’s map. The vineyard is neighbored to the northwest and west by the winegrowing districts of Stags Leap District and Oak Knoll District, respectively, which were among the early pioneers of California Cabernet Sauvignon to attain global fame. To the northeast and southeast—and further off the beaten path—were Atlas Peak and Coombsville, thought to be the next frontiers for the emerging wine-producing region.
With richness and depth of flavor, the 2018 Timeless Napa Valley is the embodiment of patience and attention to detail. Decades of experience at Soda Canyon Ranch allow winemaker Nate Weis and team to highlight the individual merits of each block. Combining the strongest lots from each resulted in a refined and harmonious bottling.
In 2018, the diurnal shift at Soda Canyon Ranch produced a darker, lusher fruit profile of Cabernet Sauvignon. Simultaneously, the overnight recovery periods resulted in expressive and refined Merlot, giving the wine a pleasant profile of bright, red fruit. With an extended harvest window, the signature, plush density and structure of Petit Verdot is also prevalent in the final blend. Cabernet Franc thrived in 2018 with its predilection for the cooler soils and the climate of blocks 5, 6, 16, 20 and 21—areas we call the Transition Zone and Hardpan Alley. The variety’s floral and tobacco-like aromatics are accentuated, and its more aggressive nature for back-end tannins tamed.
Once blended, the 2018 vintage rested in French oak barrels for 16 months, developing flavors of vanilla and baking spice. Velvety tannins dance across the palate of bright and lingering cassis. With a smooth finish, this is a comforting wine of elegance and depth—a sophisticated expression of the sedate summer.
Review:
This is a little old-school and shows lots of dark berry, chocolate and dried fruit. It’s full, dense and layered with fleshly sensibility. Velvety texture.

Babylon’s Peak is a private cellar located on the slopes of the Paardeberg Mountains between Malmesbury and Paarl.
Four generations have farmed here, passing down their winemaking knowledge and passion through the ages. Current winemaker Stephan Basson joined his father in 2003 and started making wine under the Babylon’s Peak brand. Stephan is a passionate and warm-hearted family man. He has dedicated his life to the wine industry and is passionate to keep the Basson legacy alive through the range of characterful Babylon’s Peak wines.
The name Babylon’s Peak is derived from the very high granite peak on the farm, which is known to local people as ‘Babylonstoren’ (in English, ‘The Tower of Babylon’). Some of the highest vineyards in the Swartland region are found here at about 700 metres above sea level. The Paardeberg area is characterized by decomposed granite soils and unique terroir which result in optimum soil expression and fruit purity. All the grapes used for the wines are carefully selected and treated before the wine is made in the traditional way. Being a private cellar, they have the opportunity to select and bottle only the best quality wines.
Clos Saint-Jean is a 41-hectare estate in Châteauneuf-du-Pape run by brothers Vincent and Pascal Maurel. Considered by many critics and wine-writers as the preeminent estate espousing the modern style of winemaking in Châteauneuf, this cellar is one of the oldest in the region, having been founded in 1900 by the greatgreat-grandfather of Vincent and Pascal, Edmund Tacussel. A short time after its founding and well before the AOP of Chateauneuf-du-Pape was created in 1923, Edmund began bottling estate wines in 1910.
The farming at Clos Saint-Jean is fully sustainable due to the warm and dry climate, which prevents the need for chemical inputs. Instead, Vincent and Pascal employ organic methods for pest control, mainly pheromones, to prevent pests from taking up residence in their vines, a process called amusingly enough in French, confusion sexuelle. The vines tended manually, and harvest is conducted in several passes entirely by hand.
Combe des Fous literally means, the hill of the fool. The hill, in this case, is located in the far southern reach of Le Crau which was left barren for many centuries because the layer of galets was so exceedingly deep that everyone assumed vines could never survive there. The fool in this situation is Edmund Tacussel, the great-great-grandfather of Vincent and Pascal Maruel who planted a Grenache vineyard on this site in 1905. That old-vine Grenache form the heart of this cuvée with a small amount of Syrah, Cinsault and Vaccarèse. La Combe des Fous is only made in the best vintages.

Pumps out heady raspberry, mulberry and blackberry compote notes that keep form and direction, thanks to a roasted apple wood spine and flanking ganache, garrigue and warm earth notes. Seriously grippy finish. Grenache, Syrah, Cinsault and Vaccarèse.

The 2020 Châteauneuf Du Pape La Combe Des Fous is a normal blend of 70% Grenache, 20% Syrah, and the rest Vaccarèse and Cinsault. Beautiful, full-bodied aromas and flavors of ripe black raspberries, violets, ground pepper, lavender, and herbes de Provence all emerge from this gorgeous barrel sample, and it shows the pure, fresh, yet still concentrated style of the vintage brilliantly.

Boussey Meursault Vieilles Vignes is made from 100 percent Chardonnay.
The grapes for Meursault Vieilles Vignes come from the parcels located in Meursault. They were planted in 1960 and 1970.
The wine has a beautiful golden-green color. The nose displays aromas of almond, hazelnut with an elegant oaky touch. In the palate, it is full-bodied with good length. Long and intense acidity. Great finesse, purity and elegance.
The Meursault Vieilles Vignes goes well with Foie gras, Fish in creamy sauce, Lobster or also by itself as an aperitif.
