"Starting off the 2019s, the 2019 Châteauneuf Du Pape (75% Grenache and the rest Syrah, Mourvèdre, and Clairette) was partially destemmed and brought up in a mix of foudre, demi-muids, amphora, and stainless steel. Checking in as equal parts Syrah and Mourvèdre, the 2018 Châteauneuf Du Pape XV will certainly be an outstanding wine. It sports a deep purple color as well as lots of black and blue fruits, leafy herbs, cracked pepper, and a touch of minerality. Medium to full-bodied, it has good balance, terrific purity, and outstanding length.

Alain Jaume Chateauneuf Du Pape Rouge Vieux Terron is made from 85% Grenache, 10% Syrah, 5% Mourvèdre
An intense purple color is followed by ripe red fruit aromas, such as sweet black cherry.
The palate reveals clearly the aromatic complexity: spices and black fruit are boasted with soft tannins. The finish is long with aromatic hints of liquorice and pepper. Red raspberries, star anise and hints of cinnamon.
It will accompany game, red meat or meat in sauce and strong cheeses.
Soil types
Châteauneuf du Pape vineyards are mostly located on plateaux. Stony-clay soil covered with large rolled stones. Some plots are more sandy.
Winemaking and aging
Harvest is destemmed and crushed. Fermentation temperature is controlled at 30°C. Vatting period of 18 to 21 days. Matured in vats (80%) and oak casks (20%).
Looking at his Chateauneufs, the straight 2011 Chateauneuf du Pape has surprising purity and freshness. Made from 55% Grenache, 30% Mourvedre and 15% Syrah, with the Grenache aged all in foudre and the Mourvedre and Syrah in barrel, it exhibits impressive aromatics of blackberry fruit, earth, mineral and underbrush-like qualities on the nose. Xavier Vignon, along with Philippe Cambie, are probably the two most highly renowned oenologists in Chateauneuf du Pape as well as some of the surrounding Cotes du Rhone regions. Vignon’s office and laboratory are next to the Auto Route A7, in the same complex as Chateau Husson. He is the consultant for such well-known domaines as Raymond Usseglio, Jerome Quiot, Beaurenard, La Nerthe, Mont Redon, Marcoux, Grand Veneur and La Gardine. I tasted through the new and upcoming Xavier Vignon releases. The blend of Xavier Vignon’s Chateauneuf du Pape can vary considerably. Vignon told me that it is a selection from nearly 120 different parcels in the appellation. Fashioned from the best fruit from old vines planted in the finest parcels is the Chateauneuf du Pape Cuvee Anonyme. Xavier Vignon is not going to release the 2007 Anonyme (his greatest Chateauneuf du Pape to date) until 2013 so readers have a chance of getting some of this production. I tasted three vintages of this cuvee with Vignon.
For the last 15 years, oenologist Xavier Vignon has become internationally known for being the winemaker of several of the best domaines in Châteauneuf-du-Pape and around (La Nerthe, La Vieille Julienne, Beaurenard, La Mordorée, etc.)
In 2002, some friends (who are wine importers) asked him if he can create his own wine. Choosing amongst the best wines he has made, he creates a blended Rhône with different vintages, and different appellations. His ideal wine, easy to understand, modern, powerful and a great value for money, 100% Xavier was born.
As this outstanding « non vintage table wine » meets a big success Xavier adds a complete range of prestigious Appellations, still selecting and buying the best wines of the greatest domaines he knows perfectly. In 2006, Importers from the UK, Australia, Canada, and Scandinavia order almost 100,000 bottles.
As Xavier Vignon wishes to keep his main work, which is to manage his laboratory, he associates with two partners in 2007, in order to be able to develop his "Xavier wines".
Cardinale Napa Valley Cabernet Sauvignon is made from 91% Cabernet Sauvignon, 9% Merlot.
Super structured and with minerality to spare, this Cabernet Sauvignon offers a real presence on the palate from start to finish. Generous notes of dark chocolate balance beautifully with a blue and black fruit flavor explosion, finishing with a subtle whisper of rose petal.

Lismore Estate Reserve Viognier is made from 100 percent Viognier.

Balance is the key to this wine. Viognier is an aromatic and generous varietal, it benefits from barrel maturation and lees contact with a fuller mouth feel and increased texture. This combined with the firm acid backbone and intense fruit will allow this wine to integrate beautifully and gain further complexity over the next 3-5 years.
Rich, lush and decadent. Viognier is a gorgeous variety. Honeysuckle, peaches and dried apricot with a lingering citrus finish. A clean fresh acidity supports the extravagance of the nose and the palate.
Viognier, a traditional Rhone variety is perfectly suited to Lismore’s cool-climate terrior. The vineyard block is on decomposed shale and one of the healthiest and well balanced on the farm. The entire team looks forward to the Viognier harvest and the beautiful amber tinged berries.
The grapes were picked at optimal ripeness and whole bunch pressed, slowly extracting the juice at a rate of 500ltrs per ton. The juice was settled for 48 hours and was racked into burgundian barriques (1st fill) for fermentation and maturation. The wine was left on the lees with regular “batonnage” for 11 months.
Lighter styles are often paired with curries and the like. This Viognier is different. We recommend medium bodied meals that are intense and complex. For example:
- Sesame encrusted tuna marinated in a blend of orange, lemon and lime juice spiced with sesame oil and balsamic vinegar – seared on a wood fired grill and served with griddled vegetables, or
- Free range duck breast smoked with Darjeeling tea and coriander leaves. Set on a cinnamon poached pear glazed with a gooseberry jus.
In both of these dishes, the fruit and floral aspects of the wine are complimented by the exotic and aromatic elements in the dish which are also highlighted by the spiciness from the oak fermentation; the fresh acidity freshens the palate, and yet the Lismore Viognier has the body to hold up against the weight of the duck or the tuna. It is also gorgeous with a well laid cheese platter.
