Cave Carod Clairette de Die

Cave Carod Clairette de Die is made from 75% Muscat Petits Grains and 25% Clairette. Clairette de Die is produced with the ancestral dioise method.
The grapes are rapidly pressed after the harvest and then placed in vats at low temperatures (replicating the process used by the Voconces in ancient times who kept the jars in the icy waters of their local rivers). The half-fermented must is bottled and fermentation continues in the bottle, giving a naturally sparkling wine. Disgorging occurs at least six months after bottling, while the wine still contains sugar and has reached an alcohol content of 7 to 9 %.

This is a sparkling wine with very fine bubbles, light in alcohol (8°), and containing residual sugar (incomplete fermentation). Clairette de Die has been known since ancient times (dates back to 77 A.D.). Clairette brings delicacy and lightness to the wine whereas Muscat gives its typical sweet flavor. The wine displays intense aromas, a refreshing balance of fruit and acidity with peach, orange and white flowers flavors.
This is an ideal wine for all desserts and ice creams, and is very interesting with foie gras. It is especially suitable for daytime meetings and cocktail parties.  A great breakfast wine!
Wine to be consumed young, to conserve the full fruity and floral flavors.  To be stored flat in a cool room away from light.

Hand harvested in small crates. The grapes are then pumped into tanks (full cluster, not destemmed).
It will stay in this tank for 15 days for the skin contact maceration and the Alcoholic fermentation.
They will also use the "rack and return" technique (delestage).
Then the wine is transfered into neutral French Oak barrels where the wine will complete the Malo-Lactic fermentation.

Review:

"While medium-bodied in frame, this densely packed Syrah heaves with luscious, almost pulpy, black-cherry and blueberry flavors. Its rounded, fleshy nature is amplified by sunny acidity and smooth, gentle tannins, but bright streaks of violet and crushed granite invigorate the midpalate. It's ready to drink now but should hold through 2026. Anna Lee C. IIJIMA"

Xavier Vignon Cotes du Rhone Rouge Cuvee Vieilles Vignes 2017

SALE!

Xavier Vignon Cotes du Rhone Rouge Cuvee Vieilles Vignes Organic is made from 50% Grenache, 40% Mourvèdre, 5% Syrah and 5% Cinsault.

The diversity of terroirs used in this blend allows this wine to combine freshness and balance.

We used Clay and limestone plots located on the hillside where old Grenache naturally express roasted hints. We could obtain in this wine empyreumatical hints without the use of barrels. These plots particular soils and orientation allowed grapes to reach an optimal level of ripeness while conserving a good acidity level.

We also integrated grapes coming from plots located on red rocky clay soils also named “garrigues”. These big red stone are restituting heat coming from the sun at night and bring power and structure to the wine.
Also the blend features vines coming from sandy clays, which are light and rather fresh soils: this allowed the wine to maintain a freshness and vivacity.

Bouquet of cassis, blueberries, lavender, cured meats, and graphite. It's deep, rich, medium to full-bodied, and has a great finish. The Mourvèdre keeps this tight and fresh.

Pairs with grilled beef rib - Veal Columbo - Pork ribs slightly spiced

Review:

The 2017 Côtes du Rhône Cuvée Vieilles Vignes is a smoking good Côtes du Rhône and offers full-bodied aromas and flavors of blackberries, black raspberries, cassis, lavender, and flowers. It's rich and concentrated, yet also elegant, weightless, and layered, with notable complexity. -Jeb Dunnuck 91-93 Points

"A blend of 50% Grenache, 40% Mourvèdre and the rest Cinsault and Syrah, the 2016 Côtes du Rhône Cuvée Vieilles Vignes offers a gorgeous bouquet of cassis, blueberries, lavender, cured meats, and graphite. It's deep, rich, medium to full-bodied, and has a great finish. The Mourvèdre keeps this tight and fresh, and I suspect it will age beautifully."

Charles Thomas Chateauneuf du Pape Rouge 2015

Charles Thomas Chateauneuf du Pape Rouge 60% Grenache, 20% Syrah, 10% Mourvedre, 10% Cinsault.

The wine is produced from vineyards located in the town of Orange. The soil is made of rolled pebbles and sand.
Charles Thomas Chateauneuf-du-Pape rouge displays a very deep garnet red color. On the nose it reveals a bouquet of small red berries and hints of spices. The palate is round, full and rich.

Right after harvest, the grapes are destemmed and sorted at the winery. Then, the grapes are gently crushed and goes into fermentation tanks for 15 days in controlled temperature tanks. It is then pressed slightly and matured for a few months in order to preserve the richness of the aromas.

Charles Thomas Châteauneuf-du-Pape is sourced from different grape growers in the AOC. The idea is to have a wine made with grapes coming from all the different soils type found in Châteauneuf. As a matter of fact, soil and subsoil can be very different.
To generalize, one can say there is limestone soil in the (rocky) western part of Châteauneuf-du-Pape; sand and clay soil covered with large stones on the plateaus; mixed sand, red and grey clay, and limestone in the northern part of the appellation; less stony soil alternating with marl in the east; and shallow sand and clay soil on a well-drained layer of gravel in the south. The large pebbles contribute to the quality of the vines and grapes by storing heat during the day and holding water. Our Charles Thomas Châteauneuf-du-Pape is using grapes coming from all these soil types in order to offer a broader approach to what this AOC is all about.

Game, duck, guinea fwl, pigeon, osso bucco, eggplant quiche and flavorful cheeses.

Product Description

Cave de Tain Les Hauts du Fief Crozes Hermitage Rouge 2010 is made from 100 percent Syrah.

Opaque ruby. Done in a fruit forward, modern style, this 100% Syrah produced by the 370 growers of the Tain Cooperative offers ripe dark fruited flavors, spice and light herbal notes and a soft, lush feel.  Light and fresh, it’s quite Burgundian in character. International Wine Review 91 Points

Situation: Northern Rhone valley, left bank.
Grape Variety: 100% Syrah.
Type of Soil: The soil is stony, warm and filtering. It is made up of fluvioglacial alluvium. Extremely dry in summer, it favours healthy and early maturing of grapes.
Yield: 35 hl / ha.
Production: 30,000 bottles
Vinification: This cuvée is a blend from the best terroirs of the AOC Crozes-Hermitage. The vines are at least 20 years old. Long maceration, 80% of the warm wine is run-off into French oak for 12 months.
Characteristics: Deep dense garnet color with purple tints. Harmonious and intense nose of candied fruits and toasty overtones, cocoa beans, liquorice and spicy aromas. The palate is powerful, smooth and elegant. Full-bodied wine with silky tannins and ripe fruit. Well-balanced and exceptional concentration due to good climatic conditions. The peppery finish is long and persistent. A racy wine with over 8 years ageing capacity.

The most backward and oaky of these offerings is the 2010 Crozes-Hermitage Les Hauts de Fief. While tannic, it also possesses Bordeaux-like notes of cedarwood, loamy soil, black currants and vanillin. This attractive, medium-bodied Crozes will benefit from 1-2 more years of cellaring. It should drink well for 6-8 years.

This cooperative located on the outskirts of the village of Tain l’Hermitage is one of France’s finest coops, producing some of the Northern Rhone’s most astonishing wines. They are reviewed below in the order in which I tasted them. I was knocked-out by the quality of their two cuvees of 2010 Hermitage. The Crozes-Hermitage selections are very strong in 2010 and above average to good in 2011. The 2010s rachet up the level of richness and intensity. The St.-Joseph cuvees are all strong efforts.-Robert Parker Wine Advocate #204 Dec 2012 89 Points

The Cave de Tain Estate

Cave de Tain was founded in 1933 by 100 winegrowers from the district of Tain l'Hermitage. Its first president Louis Gambert de Loche was a land owner and a great humanist, from whom the Cave de Tain purchased the Hermitage vineyards.

Today the Cave de Tain has 370 grower-members and a total vineyard area of 1,140 hectares, of which 1,000 hectares are A.O.C. wines. At the foot of the famous Hermitage hillside, the Cave de Tain produces and sells five appellation controlee wines:

  • Hermitage
  • Crozes-Hermitage
  • St-Joseph
  • Cornas
  • St-Peray

The volume of these five wines vinified by the Cave de Tain represents almost half of the total volume of all northern Rhone AOC wines produced. The Cave also produces single varietal vins de pays wines from Syrah and Marsanne grapes grown on the outskirts of the appellation areas in the northern Rhone hills.
