The 2021 Domaine Joseph Voillot Volnay Les Champans Premier Cru is from the domain’s largest premier cru holding, 4.2 acres whose vines date from 1934, 1971, and 1985. Champans is down-slope in the premier cru band, and its wine typically has more fruit and power than other Voillot Volnays.

‘The 2021 Volnay Les Champans Ter Cru has much more brightness and delineation than the Fremiets this year, with red cherries, wild strawberries and ust a touch of iodine and sous-bois. This is nicely focused. The palate is medium-bodied with sappy red fruit, fine structure, pliant tannins and a harmonious finish. Not the most complex Champans encountered from this address, yet it has class.

The 2021 les Champans is also a simply stunning example of this fine premier cru vineyard. The beautifully elegant nose wafts from the glass in a blend of red and black plums, cherries, spit-roasted quail, a complex base of soil, woodsmoke, coffee bean and a deft touch of vanillin oak. On the palate the wine is pure, full-bodied and shows off superb depth at the core, great soil signature, ripe, fine-grained tannins and a long, nascently complex and very promising finish. I really like this terroir and the 2021 is an absolutely classic example of this fine premier cru, offering up a refined and pure bouquet of black plums, dark berries, coffee bean, a complex base of dark soil tones, a nice touch of new oak and plenty of upper register smokiness. On the palate the wine is pure, full-bodied and very elegant in profile, with a superb core, lovely soil signature, ripe, suave tannins and a long, vibrant and complex finish. A blend of 87% Cabernet Sauvignon and 13% Cabernet Franc, the 2016 Cabernet Sauvignon Coeur de Vallee has a very deep purple-black color and reveals compelling notes of minted blackcurrants, black cherries and wild blueberries with touches of sage, cigar box, tilled black soil and Indian spices with a suggestion of cardamom. HARVEST NOTES
The early half of 2018 brought us moderate temperature allowing for a long growing season. We had a majority of our rainfall in February followed by a mild Spring. Then summer brought consistent temperatures with little heat spikes. This weather allowed for longer hang time and for the fruit to ripen at a slower rate. The 2018 harvest at our estate began in late August and resulted in exceptional quality.
Chateau Talbot Saint-Julien Grand Cru Classe is made from 69 % Cabernet Sauvignon, 26 % Merlot, 5 % Petit Verdot.
The wine presents a delicate and captivating nose of black fruits, fresh tobacco, peppermint and floral nuances. Ripe and juicy fruit flavors of black currants on the palate with well integrated velvety tannins and a beautiful refreshing acidity to the long finish.

Corinne Perchaud Chablis Premier Cru Fourneaux is made from 100 percent Chardonnay.
This is the south facing portion of the slope and very hot, heavy "Fourneaux" or "oven" effect.
The wine is expressive and vivacious with beautiful aromas.
Well-balanced, round and fruity wine with a fine minerality on the finish.
1er Cru Fourneaux is located on the Fleys village and faces the field. the plots are very steep and exposed full south on soil type Kimmeridgian consists of marl clay-limestone with shallow ground and a very stony ground. After a slight settling, the juice starts its fermentation in tank, then ¼ of juice is racked in barrels. Both wines perform their alcoholic fermentation and malolactic and their aging on the lees, separately. The two cuvées are blended six months after harvesting. The wine is then filtered and is bottled 15 months after harvesting. 2013 Conditions and Harvest The relatively high temperatures at the end of winter allowed an early bud vines in early March. With a hot, dry spring flower took place in good conditions. In July, a hailstorm located did some damage to our Fourchaume plot. July and early August, rainy and stormy brought the water needed by the vineyards. The dry and sunny weather of the second half of August brought the grapes to maturity. The harvest began on September 2 under cloudy skies.

Rigor and diligence were the key words for this emotional 2016 vintage!
The year starts with heavy rainfall and low temperatures, severely delaying the growing cycle. The month of May sees temperatures increase and the tropical atmosphere favors the development of mildew. Finally, the dry and sunny summer allowed our heavy soils to avoid maturity blockages linked to water stress. The 2016 harvest started in early September and ended 7 weeks later, a record!
In the cellar, the sanitary condition was very good, the wines developed freshness, complexity and fine, ripe acidity.
SITUATION
Fresh notes of mango and peach, enhanced by a sweet sensation, dominate the palate. The finish is long thanks to a lively acidity. It will go perfectly with white meats, firm fish and cheeses with character.

Hickinbotham Revivalist Merlot is made from 100 percent Merlot.
The Merlot for this red wine was sourced from vines planted in 1989 and 1976 at 220-245m altitude on a western facing aspect on the estate. During harvest, we hand-picked, de-stemmed, whole berry sorted, then 100% gently crushed. We then cold soaked, with native fermentation, and pumped over daily with a minimum of 21 days on skins. Basket pressed with light pressing included in free run, heavier pressings kept separate and not included, drained directly to barrel. The wine was racked and returned three times during maturation for 15 months, aged in fine-grain Bordeaux coopered barrels of which are approximately 25% new.

Complex and very aromatic with black cherry, cassis, toasty vanilla, cinnamon, cedar, graphite, oak, dusty leaf notes, star anise and red licorice. Wolfberger Alsace Grand Cru Riesling Rangen de Thann is made from 100 percent Riesling.
Mineral, spicy, minty with some eucalyptus notes, tropical fruits, grapefruit. Balanced and exotic in the finish, with long lasting flavors.
The Rangen Grand Cru is located in Thann, deep in the south of Alsace. Its particular soil is made of volcano-clastic rocks that drink up the heat of the day and send it back out again at night. The composition of the soil allows the roots of the vines to drink deeply from the mineral-rich sub-soil. Its southern exposure has the advantage of refreshing, drying winds in case of dampness. The high slopes are quite steep, reaching 68% in some places, requiring that the harvest be done by abseiling or roping down. Perfect for aging, these wines will reveal even more qualities after several years in the cellar.

Corinne Perchaud Chablis Premier Cru Vaucoupin is 100 percent Chardonnay.
The vineyard The plots are on the Vaucoupin Chichée village. They are very steep and facing south, their average age is 40 years. The total area is 1.45 hectares. The vines are planted on soil Kimmeridgian marl consisting clay and limestone with dominant clay. Winemaking After a slight settling, the juice is put in to achieve its fermentation tank alcoholic and malolactic. It follows a long aging on lees to bring a maximum of complexity of aromas and flavors. If necessary, we make a collage to bentonite to remove proteins and a passing cold which eliminates tartar crystals. Then we perform a tangential filtration is the filtration method most friendly to wine.

G.D. Vajra Barolo Coste di Rose is made from 100 percent Nebbiolo.
The Coste di Rose is a very seductive wine right out of the gate. Cherries and roses burst on the nose, with hints of amarena, red hard candy, wild berries, wet stone, mint and thyme. The palate is radiant and expressive, with all of the signature elements of Coste di Rose in nice evi-dence: the ethereal character, the saline, up-front tannic structure, and further whiffles of roses and cherries in the finish.

This wine shows a darker and more savory profile than Vajra’s Costa di Rose, its black-cherry flavors tinged with notes of licorice and tobacco. Scents of lavender and violet lend a delicate touch to the wine, which continued to gain verve and freshness with time in the glass.

The estate-grown 2016 Cabernet Sauvignon Mon Chevalier is a blend of 94% Cabernet Sauvignon, 4% Cabernet Franc, 1% Malbec and 1% Petit Verdot. Very deep purple-black in color, it charges forth with intense notes of crushed black cherries, black berry preserves and cassis scents with touches of spearmint, Indian spices, espresso and dried lavender plus a waft of roses. The 2018 Cabernet Sauvignon Kingly Vineyard is endowed with tremendous richness and concentration. It emerges from the best spots within Block 5, which is a bit more protected from the elements. The 2018 is a bit closed today, but it has a lot of promise. Time in the glass brings out layers of inky dark fruit and the savory, minerally notes that are such signatures. This potent Calistoga Cabernet needs time to shine, but it is impressive today just the same.

VINEYARDS: The vineyards are planted in Terroir of Kimmeridgian marls (calcareous clay with encrustation of oyster and mussel fossils) from the Jurassic time. Trellised vines are averaged around 30 years old and have a planting density of 8000 vines/ha. Tillage takes place in the rows until the bud burst, the rest of the year to natural grass covers. The Côte des Monts Damnés is located in Chavignol. Steep hillsides (declivity up to 70%), facing south, with an altitude that ranges from 650 to 980 feet.
VINTAGE: The grapes matured in cooler temperatures than in recent years, so the 2021 vintage is in line with other vintages that conform to the temperate climate of the Centre-Loire wine region.
VINIFICATION AND MATURATION: The grapes were handpicked and had a light cold static settling to eliminate the coarsest lees. Fermentation and aging took place in stainless steel tanks (88%) and 10 years old wooden vats (12%). After, the wine was aged on fine fermentation lees for 9 months.
Turley Kirschenmann Vineyard Zinfandel is made from 100 percent Zinfandel.
Organically farmed, own-rooted, head-trained and dry-farmed vines planted in 1915 in the silica-rich sandy soils of the east side of the Mokelumne River AVA. Marking the 10th vintage of this wine, bright ripe red fruits, raspberry preserves, and white pepper burst forth from the glass. Precise on the palate like a perfectly seasoned piece of meat, with more red berries and a sumptuously complex texture.
