Corinne Perchaud Chablis Premier Cru Fourneaux is made from 100 percent Chardonnay.
This is the south facing portion of the slope and very hot, heavy "Fourneaux" or "oven" effect.
The wine is expressive and vivacious with beautiful aromas.

1er Cru Fourneaux is located on the Fleys village and faces the field. the plots are very steep and exposed full south on soil type Kimmeridgian consists of marl clay-limestone with shallow ground and a very stony ground. After a slight settling, the juice starts its fermentation in tank, then ¼ of juice is racked in barrels. Both wines perform their alcoholic fermentation and malolactic and their aging on the lees, separately. The two cuvées are blended six months after harvesting. The wine is then filtered and is bottled 15 months after harvesting. 2013 Conditions and Harvest The relatively high temperatures at the end of winter allowed an early bud vines in early March. With a hot, dry spring flower took place in good conditions. In July, a hailstorm located did some damage to our Fourchaume plot. July and early August, rainy and stormy brought the water needed by the vineyards. The dry and sunny weather of the second half of August brought the grapes to maturity. The harvest began on September 2 under cloudy skies.

The Vineyards The plots are in Chablis located predominantly on the village of Fleys, but also on the common Chichée and Fontenay, their total area is 13 hectares. They are mostly north and north-west oriented. The ground floor is Kimmeridgian marl consisting clay and limestone. The oldest of of the vines is 35 years. Winemaking After a slight settling, the juice is put in stainless tanks to achieve its fermentation both alcoholic and malolactic. Ther is a long aging on lees to refine the flavors and develop complex flavors. If necessary, we make a collage of Bentonite to remove proteins and a passing cold which eliminates tartar crystals. Then we perform a tangential filtration method friendly to the wine. The wine is bottles between 14 and 21 months after the harvest.
Pairs well with Oysters or shellfish and Sole Meunière.
Review:

The 2021 Domaine Joseph Voillot Volnay Les Champans Premier Cru is from the domain’s largest premier cru holding, 4.2 acres whose vines date from 1934, 1971, and 1985. Champans is down-slope in the premier cru band, and its wine typically has more fruit and power than other Voillot Volnays.

A softly spicy and noticeably earthier nose blends notes of both red and dark currant with those of plum and violet. The supple, round and velvet-textured medium-bodied flavors seem quite forward though this impression contrasts with the compact and youthfully austere finale. Note that this is sufficiently firm to benefit from at least a few years of keeping.

The Domaine Joseph Voillot Volnay Les Fremiets Premier Cru is from a parcel that is up-slope, and the wine is very calcaire, or limestony; you literally taste the stone in this elegant, intensely perfumed wine. Pair with veal filet mignon, squab, beef steak and roast duckling.

I really like this terroir and the 2021 is an absolutely classic example of this fine premier cru, offering up a refined and pure bouquet of black plums, dark berries, coffee bean, a complex base of dark soil tones, a nice touch of new oak and plenty of upper register smokiness. On the palate the wine is pure, full-bodied and very elegant in profile, with a superb core, lovely soil signature, ripe, suave tannins and a long, vibrant and complex finish. Fine, fine juice. 2033-2080.

Chablis achieves its highly distinctive mineral character due to its cool northerly climate and its highly calcareous soil. The Domaine Louis Moreau Chablis Vaillons Premier Cru is a generous, fleshy and lively wine that displays a beautiful balance of minerality, fruitiness and elegance.
Chablis, with its steely character and fresh citrus flavor, pairs well with white fish and shellfish and its naturally high acidity can counterbalance cream-based sauces. Unoaked Chablis lends itself well to vegetables, starches, Comté, or fresh goat cheese.

The vines are planted on soil Kimmeridgian marl consisting clay and limestone with dominant clay. Winemaking After a slight settling, the juice is put in to achieve its fermentation tank alcoholic and malolactic. It follows a long aging on lees to bring a maximum of complexity of aromas and flavors. If necessary, we make a collage to bentonite to remove proteins and a passing cold which eliminates tartar crystals. Then we perform a tangential filtration is the filtration method most friendly to wine.

The Corinne Perchaud Estate
Corinne Perchaud and her husband Jean-Pierre Grossot began working in the Domaine in 1980, but the estate was originally founded in 1920. They are the third generation of winemakers at this family estate, located in the village of Fleys, in the heart of the Chablis appellation.

The Corinne Perchaud Vineyard
They farm 18 hectares (44.5 acres) of vines: 13 A.O.C. Chablis and 5 hectares Premier Cru. The wines are only tank fermented, except the Fourneaux that gets 25% barrel fermented wine added into the final blend. The owners take great care to produce exceptional Chablis wine by keeping the lively Chardonnay fruit and the unique mineral quality imparted by the Kimmeridgian soil, the fruity acidity and bouquet in perfect balance. The grapes are harvested by hand and gently pressed in a horizontal pressoir to ensure the fullest extraction and range of flavors and aromas.

Vintage Overview
2013 was a very good season with predominantly mild, dry days. Yields were generally low and this did result in some excellent parcels of fruit being harvested. Vine-balance was carefully monitored, resulting in fruit that demonstrates the vibrancy and fruit-derived characters that we strive for in our wines. By all accounts it was a textbook vintage.
Tasting Notes
Deep inky purple in color. Aromas of blackberry, mocha, mint and spices. Lush, ripe palate dominated by black fruits, cherry and chocolate. An expansive palate with black fruits and nicely balanced by oak.
Made with the greatest dedication and care, select parcels were matured in new and seasoned French and American oak for up to 20 months prior to being selected for this blend. Individual barrels from our family estate that best demonstrate the intensity of our fruit, balanced by integrated oak were selected for the final blend, which was then bottled with minimal filtration.
Pairs well with venison, ribeye steak, lamb.
Review:
70% Shiraz and 30% Cabernet Sauvignon. Fruit and oak combine here to produce a powerful, full-bodied red with coffee, toast, blackberry and rick plum flavours pouring through the palate. Reynvaan Family Vineyards was founded in 2004 by Mike and Gale Reynvaan in Washington’s Walla Walla Valley, with son Matt Reynvaan as winemaker, and has become one of the most sought-after names in the state for its Rhône-inspired, estate-grown reds. The Foothills Reserve is a barrel selection from the family’s high-elevation Foothills in the Sun Vineyard, planted in 2008 on loess soils over deep basalt in the foothills of the Blue Mountains.
Walla Walla Valley Syrah is prized for two very different terroirs: the basalt-cobblestone Rocks District, known for savory, meaty, olive-and-mineral character, and the wind-swept loess hillsides that lend structure, freshness and lift. A total masterclass, the 2021 ‘Foothills Reserve’ is a barrel selection wine that comes from the Reynvaan’s high elevation estate Foothills In The Sun Vineyard. The site is set on Loess soils with deep basalt deposits and I have been writing about the potential of this site for more than a decade. Today, wines from this high-elevation location are every bit as good as those from their Rocks District vineyard. Hoisin sauce, beef drippings, menthol, and shades of wild blackberry all combine on the nose. The palate is utterly seamless with serious tension, weight and mouth-watering acidity. It offers La Landonne levels of flavor complexity, yielding blood orange zest notes alongside red cherry candy, cigar ash, wet stone and pipe tobacco that all brilliantly meld together on the palate. Showing seriously good flavor and aromatic range, enjoy this simply stunning Syrah now and over the next ten plus years to come. Drink 2023-2037.

The 2021 Syrah Foothills Reserve (100% Syrah) is more powerful, with a darker core of black and blue fruits, ground pepper, smoked meat, and floral, rose petal-like nuances. Medium to full-bodied, concentrated, and nicely structured, it has velvety tannins, a broad, layered mouthfeel, and a great finish. Give it just a year or two and enjoy bottles over the following 15 years.

When the aroma of a pork chop rubbed with a mild spice and orange zest intersects with dark cherries and blackberries, we have a party. The party doesn't end on the palate, with Damson plum, blackberry and espresso flavors mixing it up with a meaty saline note suggesting blood pudding spiced with Calabrian chiles.
