Castelmaure Grande Cuvee Corbieres Rouge is made from 50% Grenache (30 year old) and 50% Syrah (30 year old)..
In the early 1990’s, Castelmaure began experimenting with a Prestige Cuvée of Corbières. This wine has become known as “Grande Cuvée” and is made with the help of the winemaking team of Tardieu-Laurent.
Vinification: destemming, pneumatic press, end of fermentation at 25 degrees C; two racking; aging in tank then in 220 Liter Bordeaux barrels for 10-12 months. Egg fining, slight filtration..
Deep and intense color, powerful aromas of dark berry fruit, prune and coffee nuances, and a persistent finish.
Vineyards: planted on 50% Schist and 50% limestone soils.

Fayolle Crozes-Hermitage Rouge La Rochette is made from 25-year-old vines planted on loess and red granitic soils. 100% Syrah.

Deep ruby red color.
The wine has plenty to offer with red and black fruit aromas, as well as a good minerality.
The finish is long, clean and juicy and offers some white pepper spiciness typical of the best Crozes-Hermitage.
Soil type is red brittle granite and white soil.
Hand harvested in small crates. The grapes are then pumped into tanks (full cluster, not destemmed).
It will stay in this tank for 15 days for the skin contact maceration and the Alcoholic fermentation.
They will also use the "rack and return" technique (delestage).
Then the wine is transfered into neutral French Oak barrels where the wine will complete the Malo-Lactic fermentation.

Xavier Vignon Cotes du Rhone Rouge Cuvee Vieilles Vignes Organic is made from 50% Grenache, 40% Mourvèdre, 5% Syrah and 5% Cinsault.
The diversity of terroirs used in this blend allows this wine to combine freshness and balance.
We used Clay and limestone plots located on the hillside where old Grenache naturally express roasted hints. We could obtain in this wine empyreumatical hints without the use of barrels. These plots particular soils and orientation allowed grapes to reach an optimal level of ripeness while conserving a good acidity level.
We also integrated grapes coming from plots located on red rocky clay soils also named “garrigues”. These big red stone are restituting heat coming from the sun at night and bring power and structure to the wine.
Also the blend features vines coming from sandy clays, which are light and rather fresh soils: this allowed the wine to maintain a freshness and vivacity.
Bouquet of cassis, blueberries, lavender, cured meats, and graphite. It's deep, rich, medium to full-bodied, and has a great finish. The Mourvèdre keeps this tight and fresh.
Pairs with grilled beef rib - Veal Columbo - Pork ribs slightly spiced

Xavier Vignon Rasteau Rouge is made from 70% Grenache, 20% Mourvèdre and 10% Syrah.
Almost black color with a deep orange hue, on the nose, the wine develop dark fruits aromas (black cherry), licorice, chocolate and mineral notes. The mouthfeel reveals an outstanding concentration with already silky tannins and a long finish.
Pairs with duck with orange - Tajine of lamb with apricots - Poached and salted duck - strong cheeses

Colombier Crozes-Hermitage Rouge Cuvee Gaby 2009 is made from 100% Syrah. Named in honor of Florent Viale's father, Gabriel, this selection of old plots sees new wood and has the stuffing to take it. Denser than the regular Crozes rouge, like a dry vintage port with blueberry, morello cherry and cocoa powder flavors, well-oaked with typical roasted meat nuances. Vibrant, elegant blueberry flavors. Long finish, hint of black pepper on the palate.

The Domaine de Colombier Estate
Domaine du Colombier is located in the Northern Rhone Valley, in the left bank of the Rhône River. The estate has been part of the family since the First World War. The owners gradually moved from a sharecroppers status to that of owners. Florent Viale joined his father in 1990 and decided to bottle part of their production in 1991. Now they sell 80% in bottle, 20% in bulk.
The Domaine de Colombier Vineyard
This 12 hectare (30 acres) Domaine spreads over the two communes of Tain l'Hermitage and Mercurol and is comprised of:
1.6 hectares (4 acres) of Hermitage
1.2 hectares (3 acres) of white Crozes-Hermitage
9.2 hectares (23 acres) of red Crozes-Hermitage.
Total: 12 hectares (30 acres)
The vineyard, located on stony hillside, is planted with old vines (50-55 years of age): Syrah for the red and Marsanne for the white. The grapes are harvested by hand.
Betz Family La Serenne Syrah is 100% Syrah
La Serenne is the most reflective of the site/vintage dynamic of our three single-site 2012 Syrahs. Lovers of this wine know that its source, the Boushey Vineyard, is the highest altitude of the three vineyards and is typically the latest harvested. This cool site was accentuated by the cooler season and the results reflect the seriousness of this vineyard and its care.
An extraordinary, nearly impenetrable black purple color leads to a concentrated, inky aromatic impression: smoky black cherry and wild blackberry dominate, but a litany of supporting aromas is already emerging: smoke, violet, mushroom, roasted meat, Chinese 5 spice and minerals. It has a full attack on entry and a big, rich mouthfeel that goes on and on.
2012 is our 13th harvest from this site and these rows. We continue to be impressed with the chameleon nature of this vineyard, in cool years and hot, in heat spikes and cool springs: it provides us with surprises and opportunities at every harvest. While the themes of deep black fruits and pliant structure always surface, the nuance of this vineyard and its care (thank you, Dick Boushey) make it some of the most satisfying fruit we work with every harvest.

The grapes are harvested very early in the morning to maintain freshness, the alcoholic fermentation occurs at 14-15°C. When the alcoholic fermentation finishes, one part of the wine is kept on a pump-over programme. Once the wine has been blended it is clarified, then undergoes cold stabilization and then later filtered through soil. On the bottling line it is filtered again through a sterile sheet and a membrane to ensure that it is micro-biologically stable.
Serve with shellfish, fish and sushi.
