Domaine Saumaize Michelin Macon Villages has a gently oaky nose with bittersweet fruit. Really ripe and fat, with tropical flavors cut by firm, fresh acidity. Fermented and raised in 100% wood.

The Domaine Saumaize-Michelin Estate
This family estate is owned by Roger and Christine Saumaize-Michelin and is located in the Village of Vergisson, the best of the five villages for Pouilly-Fuisse. The estate built new cellars in 1991 and uses 10 - 25% new oak per vintage.

The Domaine Saumaize-Michelin Vineyards
This 9 hectare estate is planted to 8.5 hectares of Chardonnay and half an hectare of Gamay for Macon Rouge. The vines are 40-45 years old of age on average. All of the wines are 100% barrel fermented and 100% M-L fermentation. Roger Saumaize makes about 3,800 cases of wine per year under three different appellations: Mâcon-Villages, St Véran and Pouilly-Fuisse.

Vinification Methods: Grand Cru Clos des Hospices dans Les Clos parcel is handpicked, like all our 1ers Crus and Grands Crus. We generally start picking in Grands Crus parcels first because the grapes ripen earlier thanks to their ideal exposure. We vinified Grand Cru Clos des Hospices dans Les Clos in stainless steel tanks for both alcoholic fermentation, activated with natural yeast for 15-18 days at low temperature (18°C) and malolactic fermentation, thanks to natural bacteria at 20°C for a few months.
Aging Methods: From vintage 2013, Louis decided that our monopole Grand Cru Clos des Hospices dans Les Clos will age only in tank, on fine lees, with minimum intervention, to let it express all its minerality and purity. Just before bottling, the cuvee will go through a light filtration and bottling. Generally, the bottling takes place 18-20 months after harvest.
Tasting notes: Grand Cru Clos des Hospices is located within Les Clos and it produces exceptional wines, displaying great generosity. Its nose is full and expressive, with a nice minerality that we find again in the mouth, confirmed by an elegant length in the finish.

Bertrand Bachelet Saint-Aubin 1er Cru En Remilly is made from 100 percent Chardonnay.
Saint-Aubin is situated in the heart of the Côte des Blancs, between Chassagne-Montrachet and Puligny-Montrachet; both white and red wines are produced here but Chardonnay remains predominant. The Saint-Aubin appellation covers a wide area, with an altitude ranging from 300 to 450 meters, and with very varied expositions and soils, which makes each climat unique.
Saint-Aubin En Remilly is located in the south-east of Gamay, a hamlet near the village of Saint Aubin and next to the Puligny-Montrachet et Chassagne-Montrachet appellations. This area benefits from a south-western exposition.
The wine offers a pale yellow color, with gold nuances; a mineral nose, a dense texture on the palate, bringing together substance and tension.
Perfect as an aperitif, pairs very well with firm-textured fish or with shellfish.
