Located in the south of the Mâconnais region, the Pouilly Fuissé AOP covers four communes. Its patchwork of Climats produces white wines that are well suited to fine cuisine. Our Pouilly Fuissé comes from vines nestling between the Roche de Solutré and the Roche de Vergisson. It combines the firm crispness created by the limestone soils with the smoothness derived from the more clay rich soils to produce a well rounded wine.
Fruity aromas of peaches, lemons and Granny Smith apples interwoven with lighter notes of jasmine and acacia. Mineral and buttery overtones subtly round off the bouquet. The palate is bright and crisp with a long, stony finish — an ideal aperitif and a natural match for shellfish, roast chicken and soft cheeses.
Saumaize Michelin Pouilly Fuisse Marechaude is made from 100 percent Chardonnay.
A beautiful Pouilly-Fuisse from "La Marechaude" parcel that Saumaize-Michelin acquired in 2013. Planted on clay and limestone slopes and hand harvested, this Chardonnay offers fresh and elegant notes of white flowers, crisp, citrus and exotic fruits. Powerful and mineral on the palate with a fantastic balance, finesse and freshness. The exceptional terroir brings minerality and juicy flavors of stone fruits, peach and melon supported by subtle toasty notes.

Saumaize-Michelin Pouilly-Fuisse “Clos sur la Roche” is made from 100 percent Chardonnay.
Produced from the oldest parcel of the estate dating back from 1979 and planted on the slopes of the Vergisson Rock, "Clos sur la Roche" benefits from a south sun exposure. This beautiful Chardonnay offers abundant floral and white fruit aromas, toasty and buttery notes and brioche scents. Well-balanced and concentrated on the palate with a rich structure and refreshing notes of zesty lemon and mineral purity that brings a vibrant energy to the finish.
Complex aromas of soft citrus fruits and minerals. Densely packed and fresh, with intense, complex flavors of white fruit as well as a hint of spice. The finish is very firm, long but not dry.

The Domaine Manoir du Carra Estate
Domaine Manoir du Carra is located in the small town of Denice, 5 km from Villefranche-sur-Saone, 45 km south of Mâcon and 40 km north of Lyon. The property dates back to 1850, and has been bequeathed from father to son for five generations. It is now owned by Jean-Noel Sambardier and his wife. Like many Beaujolais producers, part of their wine is sold to negociant, to which they sell at least 25% of their production each year.
The Domaine Manoir du Carra Vineyard
30 hectares (74.10 acres) total, divided along the North-South axis between Beaujolais A.O.C (10 ha= 24.70 acres) and Beaujolais-Villages A.O.C. (20 ha=49.40 acres). The Sambardiers own 50 vineyard plots. The vines are 50-100 years old. Yields are 55 hl/ha.

Wolfberger Auxerrois is made from 100% Auxerrois
Auxerrois blanc is thought to have originated in Lorraine, rather than near Auxerre in the Yonne. Recent DNA fingerprinting suggests that it is a cross between Gouais blanc and Pinot noir, the same ancestry as Chardonnay. The name Auxerrois blanc has actually been used as a synonym for Chardonnay in the Moselle region in France, which explains why there is also a longer name (Auxerrois Blanc de Laquenexy) for the grape variety.
This pale yellow Auxerrois Pinot Blanc shows an intense nose of fresh white fruits, rhubarb and spring flowers. Easy to drink and fresh on the palate, this wine ends on a fruity and crunchiness tast.
Alcoholic fermentation at 16°C followed by a short fermentation at 18°C allowing to keep some crispiness to the wine.
Then the wine was aged on the fine lees for 6-7 months. No Oak.
No Malo-Lactic fermentation.
Right before bottling, the wine was filtered using a tangentiel filtration system.
Quiche, grilled fish, rhubarb pie, mixed salad, and also fresh sheep milk cheese.

Dominus Napa Valley Red Blend is made from 88% Cabernet Sauvignon, 7% Cabernet Franc, 5% Petit Verdot.
The historic Napanook Vineyard, a 124-acre site west of Yountville, was planted in 1838. This vineyard was the source of fruit for some of the finest Napa Valley wines. Estate-bottled in the spirit of the Bordeaux châteaux, Dominus Estate is dry-farmed to allow natural stress and good concentration of fruit. Grape clusters are crop-thinned to allow sun and air to pass in between, helping to achieve full maturation and soften the tannins. Only 20% to 40% new French oak barrels are used in order to limit the extraction of oak notes. To express the unique terroir, the classic Bordeaux grape varietals of Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot are planted with different root stocks best suited for the varying soil composition of gravel, heavy clay and loam.

One of the legendary Dominus, the 2021 Cabernet Sauvignon is unquestionably in the same league as the 2018, 2016, 2015, 2013, 2010, and 1991, and to my mind, wine simply doesn't get any better. Sporting a dense purple hue as well as an incredible perfume of blackcurrants, crushed stone, cedar pencil, smoke tobacco, and baking spices, it s rich, full-bodied, and voluptuously textured, with ripe yet building tannins. It reminds me slightly of the 2010 (maybe the 2013), and I suspect it will have a similar evolution. Hide bottles for 7-8 years, and it will evolve gracefully for 30+ years. Hats off to the team of Christian Moueix and director Tod Mostero.

Capra Marco Sireveris Dolcetto d'Alba is made from 100 percent Dolcetto.
From Marco Capra's family estate in Piedmont, founded at Santo Stefano Belbo in 1945, "Sireveris" is a classic Dolcetto d'Alba. The grapes are grown at around 400 meters on limestone soils and hand-harvested in September; despite the name, which points to the fruit rather than the wine, Dolcetto finishes dry.
Deep ruby with violet highlights, it leads with ripe cherry and dark berry fruit and closes full and dry, with the gentle, almond-tinged bitterness that is the mark of the variety. An easy, supple, food-friendly red made to enjoy young.
