Faust The Pact Cabernet Sauvignon 2021

DAOU Vineyards Soul of a Lion is made from 80% Cabernet Sauvignon, 13% Cabernet Franc, 7% Petit Verdot .

The 2020 vintage presents an alluring profusion of black cherry, mulberry and Oregon blackberry aromas with notes of leather, cigar box and dark chocolate. Hints of desert sage and crème de menthe accent the rich fruit. The palate is silky and voluptuous, delivering loads of currant, cassis, black raspberry and ripe cherry. Notes of fig and baking spice are underscored by earthy tones of dates and truffle. Mature, ripe tannins yield a weighty, velvety texture integrated with a limestone minerality and subtle oak. A lengthy finish leaves lingering impressions of blackberry, plum and espresso with a touch of white pepper. A wine of immense staying power that will evolve favorably for many years to come.

Impressively dark in the glass, this bottling pairs intense purple fruit and flower on this nose with more roasted, umami-laden aromas. The elegant palate is a master class in tannin management, proving firm in structure yet soft in mouthfeel. Flavors of blackberry jam, cocoa, walnut and cracked pepper ride a lingering acidity into the finish.

Mordoree Chateauneuf-du-Pape La Reine des Bois is made from 80% Grenache, 10% Mourvèdre, and the rest equal parts Syrah and Vaccarèse .

This premium cuvee - whose name means "Queen of the Woods" - is from 65-year-old vines, planted on Villafranchian-era terrasses. Yield is 30 hl/ha.

Deep ruby red; opaque. Aromas of red fruits change to wooden touches of leather, black truffles and coffee. Fat, concentrated and full flavored with a very long liquoriced and fruity finish.

The 2022 Châteauneuf du Pape Cuvée De La Reine Des Bois is based on 75% Grenache, 10% each Syrah and 10% Mourvèdre, and the rest Counoise and Vaccarèse. It's not massive yet just exudes class and elegance, with both red and black fruits that give way to more spice, peppery garrigue, and leather, with classic background licorice and black olive notes. Medium to full-bodied, beautifully balanced, and elegant, with silky tannins, this brilliant Châteauneuf du Pape will evolve for two decades.

"Huge and powerful, but so fresh. This has great driving intensity, with even bigger, more structural tannins than the domaine’s other cuvée. Mordorée has been massive but overripe in the past; it's still massive but with this vintage the ripeness is more controlled, and it has transformed into something extraordinary. "This is a wine for the ages. Aromas of thyme, the blackest of cherries, licorice, bay leaf and spice are followed by outright delicious, plump fruit flavors. There's a whole lot of primary fruit, with ample structure to hang it all on, along with plenty of depth and intensity. The finish is near endless. It flat-out impresses, with remarkable intensity. "Incorporating 10% Petit Verdot and 2% Merlot from a mix of sites in the Columbia Valley, the 2018 Cabernet Sauvignon Père De Famille reveals a healthy ruby/purple hue to go with beautiful cassis fruits interwoven with notions of dried rose petals, violets, cedary spice, and chalky minerality. Medium to full-bodied, reasonably well concentrated, yet elegant and beautifully balanced, it opens up nicely with time in the glass and will benefit from 2-4 years of bottle age and keep for 20 years."

Long Shadows Feather Cabernet Sauvignon is made from 100 percent Washington State Cabernet. 

Acclaimed Napa Valley vintner Randy Dunn has a reputation for producing world-class Cabernet Sauvignon. He brings more than four decades of winemaking experience to the Columbia Valley to produce Feather, his only wine made outside of California.

Tasting Notes: Deep crimson colored with pure and expressive Cabernet Sauvignon character. Generous aromas and flavors of dark fruits, violets, coffee and toasted herbs combine with a textured mid-palate to deliver a big, yet focused, wine with polished tannins and persistent finish.

Winemaking: Grapes were hand-harvested at the peak of ripeness, then lightly crushed and fermented in small stainless steel tanks. Once fermentation was underway, the cap was pumped over aggressively to extract color and structure. As fermentation neared completion, pump overs were handled more gently to further extract color and flavors without imparting harsh tannins. The finished wine was aged 22 months in 90% new Vicard French oak barrels (Randy's cooper of choice at Dunn Vineyards as well).

Trefethen Family Vineyards Cabernet Sauvignon is made from 88% Cabernet Sauvignon, 6% Malbec, 6% Petit Verdot . 

This wine pairs well with fatty dishes, which will highlight its fine-grained tannins and herbal notes. Winery Chef Chris Kennedy recommends fire roasted dishes and grilled or braised red meats.

Howard Park Abercrombie Cabernet Sauvignon 100% Cabernet Sauvignon.

The 2018 Abercrombie reflects the highs that can be achieved in a superb vintage when thoughtful and deliberate winemaking combine with exceptional vineyards. Review:

This is really fine with such polished and manicured fruit and tannins that deliver a thoroughly refined and beautiful palate with sweet dark fruit, from currants to blackberries. Long, long finish. Hard not to drink now. But one for the cellar. Try after 2025.
