Michel Thomas Sancerre Blanc Silex is 100 percent Sauvignon Blanc.
Intensely aromatic and concentrated Sauvignon from the Silex soils, this is a wine of great concentration and excellent balance. Aromas of fresh herbs, with flavors of citrus, ripe gooseberry, apple and a hint of gunflint. A delicious apéritif and the classic match for goat cheese or asparagus.
The special bottling "Silex" is limited each year to between 400-500 cases. They grow grapes on three soil types: 40% Terre Blanche-Argilo-Calcaire, 40% Caillottes-calcaire, 20% Le Roc-Silex. This wine come from the hardest stone soil on the vineyard giving it pleasant notes of fruit and a very dry flavor: This wine is bottled using traditional methods without filtration, allowing for a authentic and natural taste to the wine.

The wine displays an exotic nose with a touch of smoke and licorice. On the palate, peach and watermelon dominate with citrus zest and chalk notes.
Aged on the lees for a few months (no oak). It goes well with seafood, fish, goats cheese.

Vines are 20-55 years old.
Terroir (soil type) is a blend of "Caillottes" and "Terre Blanche".
Everything is machine harvested (which means it is 100% destemmed).

The alcoholic fermentation is done in temperature controlled stainless steel tanks.
Right before bottling, the wine is fined with Bentonite (very light filtration with oenologic clay).

The Domaine Michel Thomas Estate
Michel Thomas and his son Laurent took over the estate in 1970 from Michel's father, who started in 1946. The total production is about 10,000-12,000 cases per year. They export 65-70% of their production, mainly to Japan and Russia.

Today they farm 40 parcels located in four villages, totalling 17 hectares (42 acres): 11 hectares Sauvignon, 6 hectares Pinot Noir. Inky purple-red in color with intense depth to the rim. Aromas of sweet rich fruit and lifted cedar oak fill the glass. Abundant blackberry, violets and cigar box roll through the profile adding complexity and interest. The palate is round and silky with dark plum, liquorice, briar and blackberry primary fruits. The rich, toasty oak, and fleshy rounded tannins complete the palate of this dense, flowing wine. This poised and powerful wine is drinking amazingly well but with it's density and presence will cellar impeccably well.
Selected parcels of estate fruit were de-stemmed into our open fermenters and seeded with yeast. The ferments were pumped over twice daily to maximise color, tannin and flavor extraction. The temperature controlled fermenters allowed the ferments remain in the 22-25 °C range giving amazing fruit expression in the wine. Each parcel was pressed after a minimum of seven days fermenting on skins. The wine completed both primary and ML fermentation in tank before being filled to American oak hogsheads (300Ltrs) to mature. Schwarz Thiele Road Grenache is made from 80 year old 100% Grenache vines.
Thiele Road is a dusty track that crosses Bethany Creek at the foot of the Barossa Ranges. It is home to Jason Schwarz's family's 70 year old, deep rooted Grenache vines that produce wines with complex flavours and plenty of character.
Bouquet: The nose is floral and expressive with raspberry and pepper.
Palate: Red fruits, spice and earth with beautiful balance and structure. Medium weighted with fine acidity. A wine built on complexity and packed with interest.
Planted in 1941. The gnarled, old vines continue to produce fantastic fruit and the quality out of the 2014 vintage was evident. The vines are handpicked, 10% whole bunch and the remainder de-stemmed and into an open fermenter. Before too long the wild yeast population on the grapes kicks off fermentation and that continues with daily gentle pump overs and hand plunging until fermentation is complete and the flavour profile is just right. The wine is then basket pressed and matured in seasoned French oak for 18 months before bottling. Not filtered or fined.
