Pago de las Capellanes Blanco O Luar Do Sil Godello Sobre Lias is made from 100% Godello.
Giving voice to Godello vines, to the geology of granite and to the fullness of sensations. This is our vision and we achieve it with careful winemaking on lees, so that the wine’s own matter provides balance and floral complexity, so that it shapes a fine and vigorous structure, a stimulating delicacy.
The wine pays homage to its landscape, clean, fruity aromas that caress the mineral cold. Leading us along small paths among white flowers, Godello Sobre Lías reveals light, truth and life.

Our winemaking "style" is solely determined by this place or terrior we call "Paradigm." Winemaking is agriculture when you own your vineyards and are able to farm them to promote the very best Earth will give you. All of our selections of wines are made from five varietals on the estate. Every wine is 100% farmed and grown by us.
Complexity in our wines supported by luscious fruit and acidity is our hallmark. Our efforts during harvest and barrel cellaring concentrate on maintaining the freshness from the first day we handpicked each vineyard block. Simple winemaking protocols are employed while crucial “timing” oriented winemaking decisions rule each day.
The 2015 vintage produced delicious concentrated wines in smaller quantity than normal. This black raspberry colored Cabernet has lovely open aromatics of black cherry, berry, and plum layered with a perfect balance of new and used French Oak.

My First comment tasting this wine is "wow!" It's delicious; our flagship wine at Paradigm and it delivers. Dense, deep, ripe aromas of black berry and black cherry-like fruit layered with caramel and toastiness from a nice mix of French Oak barrels. Flavors coat the palate with matching notes in a classic Cabernet Sauvignon presentation. One of our best Cabs to date!

Poggio San Polo Podernovi Brunello di Montalcino is made from Sangiovese.
Intense ruby red in color with garnet hues, clear and glossy. The bouquet exhibits typical aromas of violets and small red berries. Subtle nuances of forest undergrowth, aromatic wood, a touch of vanilla and jammy mixed fruit then give way to subtle hints of coffee. This Brunello is intense, persistent, broad and heady. Full-bodied and warm on the palate, with a densely-woven texture and robust body, it has a persistent finish with well-rounded tannins. The particular features of the terroir at San Polo produce a Brunello with a capacity for lengthy aging, while patient cellaring enhances the wine during ageing in the bottle.
Review:
Lovely purity of fruit with ultra fine tannins and depth, finesse and complexity. Black cherries, cedar and some flowers. It’s full-bodied with very fine tannins that drive the finish. Give it a year or two to open more, but already so enticing. Drink or hold.

The San Polo 2015 Brunello di Montalcino Riserva (with 8,000 bottles produced) is a textured wine with hearty fruit and touches of smoked meat and spice. At its core, the wine offers dark fruit, blackberry and ripe plum. The rich fruitiness of the wine cedes to campfire ash, mahogany and furniture wax. These results are sultry and even a bit flashy, with distant background tones of teriyaki and plum sauce. The wine is fermented in cylindrical oak fermenters and aged in oak for three years. We'll see this bottle hitting the market sometime after February 2021.

The 2016 Vigna Spuntali Brunello di Montalcino is the most brooding of the lineup from Val di Suga and is sourced from the southwest of the region on sandy soils. There are aromatics of black raspberry, licorice, menthol, sage, cinnamon, and iron-rich earth. Its Mediterranean influence is felt on the palate with ripe black cherry, dried herbs, and sun-baked earth. This is the fullest bodied and most savory of the Val di Suga lineup, with more roundness and grip. Its structure will benefit from cellaring for several years and will be great drinking over the next 20 years or more. 2026-2040.

The 2015 Vigna Spuntali Brunello di Montalcino is more introverted on first opening, with notes of black plum, licorice, dried Mediterranean herb, and sun-baked earth. On the palate, it offers a tart dried fruit character, with a building tannin structure that finishes with tomato leaf, and bitter herbs. The most rustic and burly of the wines in the lineup of the 2015 Val di Suga vintage, it will benefit from allowing some time in cellar to see how this matures and its tarriness develops. Drink 2026-2036

Plenty of spices and fresh herbs on the nose, such as dried rosemary and nutmeg, to match the underlying dried redcurrants and cranberries. Full-bodied with plenty of concentration, but still shows a very sturdy, tannin backbone and punchy acidity, to drive this through to a long finish. Drink in 2021.

Antica Vigna Amarone della Valpolicella Riserva is made from 65% Corvina, 20% Rondinella, 10% Corvinone, 5% Merlot.
Amarone DOCG has maintained unchanged its typicality, so that “the essence of the territory” of Valle di Mezzane and Cazzano di Tramigna powerfully emerges. Rich in color, firmly structured but with fresh notes.
WINEMAKING AND AGING:
Manual harvest early October with selection of the best bunches.
Drying: natural drying in fruit cellar for 3/4 months with a sharp drop in weight of around 30%.
Vinification: soft crushing of destemmed grapes in the months of January and February.

Timeless Notes:
Dark cherry in color, firm on the palate with a vibrant acidity underbelly. Thought lush on the palate the flavors are complex and elegant from entry to mid-palate with hints of currant and wild berries. The finish brings in a touch of tobacco and leather notes ,classic examples of this region, with more ripe fruit flavors that linger on long strain tannin finish. Complex with depth and elegance on the palate. This one is drinking now, but can handle more time in the cellar with ease. An excellent value in the Riserva category.
Minius is a wine with a very live yellow color with green reflections. Highlighted on the nose are the citrus and floral aromas, along with white fruits notes and herbs like fennel. It is soft and elegant in mouth that together with the acidity gives a fresh and persistent finish.
Strict and careful grape selection in the vineyard and winery before destemming. Cold maceration at 10ºC during 3-4 hours. Presing. Alcoholic fermentation begins at 16,5 ºC in stainless steel under an automatic temperature control. Stabilization of the wine in isotermic tanks, filtering and bottling. Resting in the bottle during 30 days prior distribution.
Pairs with apperitives, rices, grilled seafood, white fish in sauce, cheeses, poultries
The Valminor Estate
One of the newcomers, Adegas Valmiñor was founded in 1997 and is based in Rosal and boasts a new, ultramodern winery that produces 25,000 cases yearly of 100% Albariño "Valmiñor". (Note: “Adegas” means “bodegas” [winery] in the local Galician dialect). Owner, Carlos Gomez, makes about 3 different white wines, but Albariño is his speciality.
Carlos Gómez started Valmiñor in 1997 and headed up the project to build and open the new facilities in 2001. A trained executive with extensive experience in the wine business, Carlos founded Valmiñor and has since continued to expand the group's capacity to include Bodegas Ebano in Ribera del Duero in 2004, and more recently acquired a second Rías Baixas producer, Viñas o Torroxal. Today the group also includes a distribution company, as well as an agricultural services organization.
he winemaker Cristina Mantilla has been working as Valminor's winemaker since the very beginning in 1997. She obtained a Chemical Degree at the prestigious University of Santiago de Compostela and post-graduated in Oenology and Viticulture in Madrid. She started working in Rías Baixas but as her experience grows she also works beyond the Galician borders. In 97 Carlos Gómez founded the winery and Cristina Mantilla decided to join and give birth to a new and dynamic project with a very clear idea in mind.
Cristina has been the sole winemaker from the very first vintage of all the wines elaborated at Valminor and the bodega in Ribera del Duero, EBANO.
Cristina has furthered her carreer by producing white wine from 100% Loureiro grapes (skin contact versions) and she made the first ever Rosé style wine in Galicia. She is definitely a pioneer in making unique wines in Galicia.
The Valminor Vineyards
Galicia has a mild climate without dramatic changes in the weather, a soil rich in minerals and excellent conditions for maturing and it makes this valley the perfect place for growing quality varieties like Albariño, Loureiro and Treixadura.
Adegas Valmiñor owns 34 hectares in O Rosal, and uses purchased fruit from two prime growing areas: 40% Cambados and 60% Arbo fruit (a unique micro-climate that is a touch warmer than other areas). The Cambados region is located on the coast and provides acidity and freshness to the wine. Together the two fruit sources make a superb blend. Valmiñor means "minor valley" and today Valmiñor has built a new winery in O Rosal.
The Grade Cellar Kingly Project Cabernet Sauvignon is made from Napa Valley Cabernet Sauvignon.

Review:
The 2018 Cabernet Sauvignon Kingly Vineyard is endowed with tremendous richness and concentration. It emerges from the best spots within Block 5, which is a bit more protected from the elements. The 2018 is a bit closed today, but it has a lot of promise. Time in the glass brings out layers of inky dark fruit and the savory, minerally notes that are such signatures. This potent Calistoga Cabernet needs time to shine, but it is impressive today just the same.

Chavy-Chouet Bourgogne Rouge La Taupe is made from 100 percent Pinot Noir.
Chavy-Chouet's Pinot Noir is classified as humble Bourgogne Rouge, but the fruit for it comes from an excellent single-vineyard site near Pommard. La Taupe's parcel was once part of the Pommard AOC.
The wine is juicy with a great mouthfeel. It has classic Bourgogne Rouge aromas, with a candied cherry character as well as strawberry, raspberry and spice, yet the structure and length of finish reminds one of a Pommard - ripe & rich with a bigger body.
Average age of the vines: 70 years old.
Density of planting: 10,000 vines per hectare.

Very little intervention. Less pigeage (punch down of the cap) but some remontage (pump-over)
