"The flagship is the 2018 Châteauneuf Du Pape La Reine Des Bois and it’s 80% Grenache, 10% Mourvèdre, 5% Syrah, and the rest a mix of permitted varieties. Aged 20% in old barrels (this was raised in new barrels in the past) and the rest in stainless steel, it’s more backward and closed compared to the Voyageuse release and has ample blackcurrants, smoked earth, graphite, and peppery garrigue aromas and flavors. Medium to full-bodied, balanced, and textured on the palate, it has solid underlying structure yet still plays in the balanced, charming, elegant style of the vintage. It’s beautifully done and certainly up with the top wines. It should drink nicely for 10-15 years."

The Mordoree Estate
This is arguably the top estate in our Portfolio. Domaine de la Mordoree (woodcock), located in the town of Tavel, in the Southern Rhone Valley, is the most consistent producer of top quality wine in my entire selection. In 1986, the brothers Christophe and Fabrice Delorme decided to dedicate themselves to their passion for wine. They started their own estate with the objective to produce the best wines in each appellation while preserving the environment
The Mordoree Vineyard
The vineyard consists of 55 hectares (135 acres), on 38 different parcels, which provide with a rich, wide range of soils and climates. The soil is a mix of clay, chalk and sand with pebble stones. The improvements at the Domaine have been incredible: new pneumatic presses, new stainless steel vats, new destemmer, new vinification and aging plant, and aging in oak barrels for the top wines. All the grapes are raised by culture raisonnée which is very close to organic viticulture (intervention in the vineyard only when necessary). The yield is reduced in the vineyard by ébourgeonnage (de budding in spring) and vendanges vertes in summer (green harvesting). Oak aging for the top wines in special barrels like “jupille” for 10 months. No expense is spared at this Domaine to achieve quality.

It boasts an inky/purple color in addition to a gorgeous perfume of crushed rocks, jammy black fruits, charcoal and graphite. Blackberry aroma with an air of dates pressed in alongside – this is sweet-noted. It is easy to appreciate, a sleek and stylish start. The palate holds excellent fruit that runs well and has kick. Its tannins move round freely and a minted finale comes forward. Its dark fruit is tasty, darkens on the finish, where tar and char from its oak enter. It is all very much together, a bundle of harmony, and will gain local attributes as it ages.

The vineyards are located in the north of Châteauneuf du Pape. GRAND VENEUR «Vieilles Vignes» cuvee is produced from the older vines. Thanks to time and an organic growing, roots go very deep in the soil. Yields are naturally low and grapes highly concentrated.

Beliere Bugey-Cerdon is made from 95% Gamay, 5% Poulsard (a local grape from Jura).
Spontaneous fermentation. An altogether preferable scenario to spontaneous combustion, and A LOT more fun to drink. This pink, semi-dry bubbly was made by spontaneous fermentation, otherwise known as methode ancestrale. Grapes are picked by hand (not just any grapes, these are the local Poulsard and Gamay grown on mountainous slopes in the shadow of the Alps), and fermented in chilled vats just reaching 5 or 6 degrees alcohol. The young and light wine is then bottled, along with its active yeast and considerable unfermented sugars. Under pressure of the cork, the wine continues to ferment, gaining a few degrees of alcohol but retaining a nice amount of sweetness. The bubbles, of course, are another result of fermentation under pressure. This one is so delicious and fun to drink, with a distinctly, well, grapy aroma and a fruitiness that calls out for celebration and jubilation.
This is also wonderful served with chocolate cake!

Produced from the "Ancestral method" (also used to produce Clairette de Die): Low temperature fermentation starting in the tank, light filtration that leaves active yeast in the wine, bottling of the wine with fermentation continuing in the bottle ("spontaneous fermentation in the bottle"), retaining some sugar (40 gr/liter at the end). Made from 95% Gamay, 5% Poulsard (a local grape from Jura).

Schwarz Nitschke Block Shiraz is made from 100 percent Shiraz.
This Bethany vineyard was planted by Jason Schwarz's parents in 1968 and has been tended to by the hands of his family ever since. The vines are dry-grown and produce small crops of intensely flavored fruit.
A display of the purest blood-plum and black cherry, with cracked black peppercorn and streaky bacon over some seriously fine oak. Some subtle herbaceous qualities, nettle and thyme bring life to an otherwise immense nose. Very juicy on the palate, deeply flavorsome, long and with mouth-coating tannin for a very textured, very focused Barossa classic.
Slow cooked beef ribs, grilled meats, wild game and grilled vegetables.

Wolfberger Alsace Grand Cru Riesling Rangen de Thann is made from 100 percent Riesling.
Mineral, spicy, minty with some eucalyptus notes, tropical fruits, grapefruit. Balanced and exotic in the finish, with long lasting flavors.
The Rangen Grand Cru is located in Thann, deep in the south of Alsace. Its particular soil is made of volcano-clastic rocks that drink up the heat of the day and send it back out again at night. The composition of the soil allows the roots of the vines to drink deeply from the mineral-rich sub-soil. Its southern exposure has the advantage of refreshing, drying winds in case of dampness. The high slopes are quite steep, reaching 68% in some places, requiring that the harvest be done by abseiling or roping down. Perfect for aging, these wines will reveal even more qualities after several years in the cellar.
Pair with Serve with fish, seafood, sushi, sashimi, goat cheese, vegetarian food.

Bressia Lagrima Canela is made from 70 % Chardonnay, 30 % Semillon
Barrel fermented for 14 months in new French and American oak
Lagrima Canela means 'cinnamon tears'. This white blend shows an intense greenish-yellow wine with luminous golden highlights. It has fresh, elegant floral aromas, lent to it by its grape varieties, as well as melon, pear and toasty oak. Medium bodied with a creamy texture and outstanding depth and concentration.
Light gold colored with a perfume of candle wax, pear, melon, and toasty oak, on the palate the wine is medium-bodied with well-integrated oak, dry flavors, a creamy texture, and outstanding depth and concentration.
The classic Bressia white, this year comes 70% from Gualtallary and the rest from Agua Amarga, both areas in the Uco Valley. The blend is 70% chardonnay and the rest semillon and is aged between seven and eight months in barrels. It is a lovely wine, full of jam, white fruit and honey notes. The mouth is silky, but of great intensity, filling it with that unctuousness. A classic among Argentine whites that is already in its 11th vintage.

Corinne Perchaud Chablis Premier Cru Fourneaux is made from 100 percent Chardonnay.
This is the south facing portion of the slope and very hot, heavy "Fourneaux" or "oven" effect.
The wine is expressive and vivacious with beautiful aromas.
Well-balanced, round and fruity wine with a fine minerality on the finish.
1er Cru Fourneaux is located on the Fleys village and faces the field. the plots are very steep and exposed full south on soil type Kimmeridgian consists of marl clay-limestone with shallow ground and a very stony ground. After a slight settling, the juice starts its fermentation in tank, then ¼ of juice is racked in barrels. Both wines perform their alcoholic fermentation and malolactic and their aging on the lees, separately. The two cuvées are blended six months after harvesting. The wine is then filtered and is bottled 15 months after harvesting. 2013 Conditions and Harvest The relatively high temperatures at the end of winter allowed an early bud vines in early March. With a hot, dry spring flower took place in good conditions. In July, a hailstorm located did some damage to our Fourchaume plot. July and early August, rainy and stormy brought the water needed by the vineyards. The dry and sunny weather of the second half of August brought the grapes to maturity. The harvest began on September 2 under cloudy skies.
