This estate makes brilliant rosé, and the 2021 Côtes Du Rhône Rosé might be the best I've tasted from the vintage. Ripe raspberries, white flowers, and beautiful minerality define the aromatics, and it's medium-bodied on the palate, with a fresh, elegant, almost crystalline-like texture that keeps you coming back to the glass. Seemingly in between a Provencal rosé and a Tavel, it's going to be incredibly versatile on the dinner table. Don't miss it.

The Mordoree Estate
This is arguably the top estate in our Portfolio. Domaine de la Mordoree (woodcock), located in the town of Tavel, in the Southern Rhone Valley, is the most consistent producer of top quality wine in my entire selection. In 1986, the brothers Christophe and Fabrice Delorme decided to dedicate themselves to their passion for wine. They started their own estate with the objective to produce the best wines in each appellation while preserving the environment
The Mordoree Vineyard
The vineyard consists of 55 hectares (135 acres), on 38 different parcels, which provide with a rich, wide range of soils and climates. The soil is a mix of clay, chalk and sand with pebble stones. The improvements at the Domaine have been incredible: new pneumatic presses, new stainless steel vats, new destemmer, new vinification and aging plant, and aging in oak barrels for the top wines. All the grapes are raised by culture raisonnée which is very close to organic viticulture (intervention in the vineyard only when necessary). The yield is reduced in the vineyard by ébourgeonnage (de budding in spring) and vendanges vertes in summer (green harvesting). Oak aging for the top wines in special barrels like “jupille” for 10 months. No expense is spared at this Domaine to achieve quality.
Made from 50% chenin blanc and 50% chardonnay
It is an interesting experience as a sparkling wine for people who want to have a fine and elegant wine comparable to Champagne for a very good price.
This methode traditionnelle sparkling wine is aged for minimum 18-24 months in cave before disgorging. The dosage is 12 g/l residual sugar and the wine is aged for minimum 3 months after disgorging .

"The two sparkling wines should not be missed. They're both terrific examples of how good sparkling Vouvray can be. Both are 100% Chenin Blanc cuvees. Even better is the slightly richer, more honey and lemon-scented and flavored non-vintage Cremant de Loire. A blend of equal parts Chenin Blanc and Chardonnay aged for a minimum of 18 to 24 months in their cellars before disgorgement, this is a real beauty and a superb wine. Guillemot-Michel Vire-Clesse Charleston is made from 100 percent Chardonnay.
This cuvée is produced from hundred-year old vines that the great-grandfather planted after he returned from World War I. The family wanted to honor his memory and vinify these vines the same way he did, in old demi-muids.
Charleston is a deep and complex wine that gently express itself in the glass, offering juicy white fruit flavors and a lengthy finish.
Charleston is vinified and aged for one year in demi-muids of over 10 years old. During the following harvest, the wine is racked and placed in vats for another 6 months of aging before bottling.
Fish in white sauce, poultry in creamy sauce, hard cheeses.

"The 2019 Viré-Clessé Charleston is brilliant, opening in the glass with notes of buttered citrus fruit, pear, beeswax and vanilla pod. Full-bodied, layered and textural, with huge concentration, lively acids and a seamless, multidimensional profile, it's long and penetrating. It's one of the very best wines I've ever tasted from the domaine. Readers will remember that the Guillemot family's oldest parcel of vines dates back to 1918, and the idea behind this cuvée is to work the vines and make the wine in the same way as their grandfather—who planted them—did. Sainte-Marie Bourgogne Blanc Vieilles Vignes is made from 100 percent Chardonnay.
The wine has a perfect light yellow color with green hues. Nose of white flower, sweet spice and bitter orange. Fresh and delicious attack. It shows roundness and a slight buttery note with a very saline finish that makes you slightly salivate.
Excellent with Seafood, grilled fish, clams and oysters of course. Also great with goat cheese or Comté cheese.
Aged on lees for 6 months in stainless steel vats. Adjustment of sulphites at the end of MLF and before bottling. Filtration on earth then on 1.2µ cartridge after bonding with bentonite.Machine harvest, and direct pressing with a pneumatic horizontal press. Static settling. Alcoholic and malolactic fermentation in stainless steel vats with native yeast and bacteria.
