Deeply concentrated and penetrating with blackberry and black cherry flavors, this pale ruby rosé offers the zesty fruit character that rosé lovers demand alongside an intensity and structure craved by red wine drinkers. A touch more spry than the producer's more richly concentrated La Reine des Bois, it's a delicately spiced, pepper-edged rosé that can be enjoyed year-round.

Mordoree Tavel Rose Reine des Bois is made from Grenache
Nose: Steady rose, brilliant and cristal clear.
Aromas : very complex : from flowers, white fruits and red fruits (strawberries, pomegranate, rapsberry). Slightly mentho-lated
Palate : fresh, classy, elegant, very long.
Aging capacity : 8 to 10 years.
This wine comes from a parcel planted on a pebbled soil covered with stones, whose geology is typical of the grands crus from the Rhone Valley (a base made of marine molasse from the Miocene period covered with an alpine diluvium from the Villafranchian period). 100 % destemming, cold maceration during 48 h., pneumatic pressing, fermentation at 18° C.
To pair with: roasted and or spicy chicken, duck, goose, fish soup, white meat, seafood and a lot of fishes (tuna, John Dorry, red mulet, etc...).Quite all Asian cuisine. Dishes with garlic, dishes with tomatoes.

"A blend of 60% Grenache, 20% Syrah, 10% Cinsault and 10% Clairette, the 2022 Tavel La Reine des Bois is a touch darker in hue than its stablemate, the La Dame Rousse, but it's still not among the darkest of Tavels in the glass. That's perfectly okay, as the aromas and flavors are textbook for the appellation: crushed stone, flowering garrigue, ripe cherries and mouthwatering strawberries, all capped off by refreshing citrus-zest notes on the lengthy finish. A blend of Grenache, Syrah, and Mourvèdre brought up in tank, the 2019 Côtes Du Rhône La Dame Rousse is a big, rich, powerful Côtes du Rhône loaded with notions of smoked black cherries, licorice, scorched earth, and ample minerality. These all carry to a medium to full-bodied Southern Rhône that has terrific purity of fruit, ripe, present tannins, and a great finish. I love its balance and it’s going to deliver ample pleasure over the coming 4-6 years.

Perfumed notes of fresh boysenberry and black cherry are lifted by a cutting mineral edge in this rosé. Black fruit flavors are intensely ripe and penetrating, accented by shavings of black pepper and a firm, fine-grained grip of tannins. This solidly structured, thrilling wine should improve through 2023.

The Mordoree Estate
This is arguably the top estate in our Portfolio. Domaine de la Mordoree (woodcock), located in the town of Tavel, in the Southern Rhone Valley, is the most consistent producer of top quality wine in my entire selection. In 1986, the brothers Christophe and Fabrice Delorme decided to dedicate themselves to their passion for wine. They started their own estate with the objective to produce the best wines in each appellation while preserving the environment
The Mordoree Vineyard
The vineyard consists of 55 hectares (135 acres), on 38 different parcels, which provide with a rich, wide range of soils and climates. The soil is a mix of clay, chalk and sand with pebble stones. The improvements at the Domaine have been incredible: new pneumatic presses, new stainless steel vats, new destemmer, new vinification and aging plant, and aging in oak barrels for the top wines. All the grapes are raised by culture raisonnée which is very close to organic viticulture (intervention in the vineyard only when necessary). The yield is reduced in the vineyard by ébourgeonnage (de budding in spring) and vendanges vertes in summer (green harvesting). Oak aging for the top wines in special barrels like “jupille” for 10 months. No expense is spared at this Domaine to achieve quality.
Luis XIV Fondillon Oro 50 years NV is made from 100 percent 100% Monastrell (Mourvedre). Only 24 9 liter cases produced.
The wine is produced in the village of Cañada, in the subarea of Alto Vinalopó in the province of Alicante. Made from 100% Monastrell planted on traditional dry land as bush vines, at 550-580 meters above sea leval and enjoying a Mediterranean climate with great marine influence due to the easterly winds.
Fondillon 50 years is mahogany in color with orange tile rim, medium layer and great density. On the nose, it has a very deep aroma of old wood, black tea and carob. In the mouth, it has a sweet entry balanced by a rich high acidity. Its aromas are long, almost eternal and very intense. It tastes like old mahogany, a very old barrel and bygone times.

"The NV Fondillón Luis XIV has the subtitle Edad Superior a 50 años (over 50 years old), and it's a dark mahogany, bottled from a single barrel that has the specific profile of a very old wine greatly concentrated by age, which tends to make it similar to other very old and concentrated wines, be it a Mediterranean rancio or a very old Moscatel. It has notes of bitter chocolate, coconut and iodine, carob beans (algarroba) and some bittersweet sensations. It's dense and concentrated, and the palate is pungent, with very intense flavors and a bitter twist in the finish. This has 16.3% alcohol, 6.45 grams of acidity and 34 grams of sugar, but it comes through as very dry. The wine is long and extraordinary, but it just doesn't have any Fondillón character after decades of concentration by evaporation. The price is ludicrous. The grapes for this wine come vineyards in the villages of La Horra, Gumiel de Izan and Moradillo from 12 to 80 year-old vines.
Displaying a good vibrant deep cherry red color with fragrant, clear notes of cherry drop and violet there is a beautifully unadorned yet brooding quality to this; it feels deep, vinous and vibrant, flecked with bright red fruit notes, sweet earth and a darker, more spiced character on the finish.
