Corinne  Perchaud Chablis Premier Cru Fourneaux is made from 100 percent Chardonnay.

This is the south facing portion of the slope and very hot, heavy "Fourneaux" or "oven" effect.
The wine is expressive and vivacious with beautiful aromas.

The wine is then filtered and is bottled 15 months after harvesting. 2013 Conditions and Harvest The relatively high temperatures at the end of winter allowed an early bud vines in early March. With a hot, dry spring flower took place in good conditions. In July, a hailstorm located did some damage to our Fourchaume plot. July and early August, rainy and stormy brought the water needed by the vineyards. The dry and sunny weather of the second half of August brought the grapes to maturity. Made from 35 year old vines. The owners take great care to produce exceptional Chablis wine by keeping the lively Chardonnay fruit and the unique mineral quality imparted by the Kimmeridgian soil, the fruity acidity and bouquet in perfect balance. The grapes are harvested by hand and gently pressed in a horizontal pressoir to ensure the fullest extraction and range of flavors and aromas.

The vines are planted on soil Kimmeridgian marl consisting clay and limestone with dominant clay. Winemaking After a slight settling, the juice is put in to achieve its fermentation tank alcoholic and malolactic. It follows a long aging on lees to bring a maximum of complexity of aromas and flavors. If necessary, we make a collage to bentonite to remove proteins and a passing cold which eliminates tartar crystals. Then we perform a tangential filtration is the filtration method most friendly to wine.

The wine will be bottled 16 months after harvest. The relatively high temperatures at the end of winter allowed an early bud vines in early March. With a hot, dry spring flower took place in good conditions. In July, a hailstorm located did some damage to our Fourchaume plot. They are mostly north and north-west oriented. The ground floor is Kimmeridgian marl consisting clay and limestone. The oldest of of the vines is 35 years. Winemaking After a slight settling, the juice is put in stainless tanks to achieve its fermentation both alcoholic and malolactic. Ther is a long aging on lees to refine the flavors and develop complex flavors. If necessary, we make a collage of Bentonite to remove proteins and a passing cold which eliminates tartar crystals. Then we perform a tangential filtration method friendly to the wine. The wine is bottles between 14 and 21 months after the harvest.  

Pairs well with Oysters or shellfish and Sole Meunière.

Thierry Mortet Chambolle Musigny 1er Cru Beaux Bruns is made from a single vineyard. (0.55 acre). 30 years old vines, planted on clay, limestone and flint based soils.

The wine is produced from a single vineyard (0.55 acres) planted on clay, limestone and flint based soils. It shows a dark color, ripe black fruit and pepper aromas. Long and intense flavors. Smooth tannins, good length and red fruits on the finish. An elegant wine with a delicate, beautiful structure.

Patricia Raquin Santenay 1er Cru Beaurepaire is made from 100 percent Chardonnay.

The animals shown on the label are dogs. The breed is called Borzoi, also called "Russian Wolfhound", which means "fast" in Russian. Patricia and Alain are proud owners of 2 Borzois and they designed this label so that the dogs will be guardian of the vaulted ageing cellar inside their house.

The Santenay Santenay is coming from the Premier Cru called Beaurepaire. 

The Stone Corral Vineyard is planted on a southeast slope on the west side of the Edna Valley which has an east/west orientation opening up to the Pacific Ocean from Morro Bay and Pismo Beach. Approximately 120 to 300 feet above sea level, the climate is strongly influenced by the ocean providing ideal temperate growing conditions for Pinot Noir. Early spring warming, mild summer temperatures and late arriving cold fall temperatures and rain provide a long growing season for the development of rich color, concentrated and complex flavors. Soil profiles vary between blocks from sand, sandy loam, loamy sand, pebbly sandy clay loam, all fine angular blocky , including decomposing sandstone layers and numerous fossil rocks. The soils are well drained and marine in origin, resulting in an elegant Pinot Noir with extraordinary attributes.

This gem is a blend of a few precious, select barrels hailing from the finest blocks of Stone Corral Vineyard. Offers blue-toned fruit on the nose and a pretty bouquet of black raspberry, sandstone, marzipan and wild lupine flowers. Opulent, yet delicate on the palate, with velvety layers of cola nut, cherry, dried herbs and pecan sandie cookies.

When handling the wine, care is taken at all opportunities to avoid shear.

The result is stunning, with baked raspberry, strawberry, maple, and peppery bacon aromas comprising a spicy, exotic nose. Winemaking is agriculture when you own your vineyards and are able to farm them to promote the very best Earth will give you. All of our selections of wines are made from five varietals on the estate. Every wine is 100% farmed and grown by us.

Complexity in our wines supported by luscious fruit and acidity is our hallmark. Our efforts during harvest and barrel cellaring concentrate on maintaining the freshness from the first day we handpicked each vineyard block. Simple winemaking protocols are employed while crucial “timing” oriented winemaking decisions rule each day.

Dark Cabernet color with beautiful aromas of black cherry, cassis, plus 5-spice, vanilla. Big, ripe and mouthcoating across the palate. The flavors are similar to the aromas with ripe fruit, berry/cherry pie, moderate tannins, and nice length. Argot Pinot Noir Sonoma County is made from 100 percent Pinot Noir.

Everything you have come to expect from an Argot Pinot Noir, shone through the filter of a textbook-perfect vintage. We simply can not get over the quality of fruit this wine displays! Intense, yet fresh; fruity, yet spicy; brambly, yet juicy; immediate, yet lingering. A Pinot Noir that displays the variety’s natural come-hither attitude, while succinctly capturing its intriguing nature. There are not enough superlatives to describe this wine. Almost too easy to love!

NOTES Singularly great. 2018 was an all-time vintage for California’s North Coast, achieving rarely before experienced heights. A watershed vintage for both the vineyard, and appellation. Night harvested by hand on 9/16, whole-cluster pressed direct to barrel; no settling to ensure maximum lees contact. Barrel fermented on heavy lees. Malolactic fermentation. 16 months in French oak, 50% new. Finished 2 months in steel tank, low Sulphur during barrel elevage.

Review:

There are 225 cases of the 2019 Chardonnay Simpatico Ranch, which is from a cooler, higher elevation site in Sonoma. Lots of peach, tangerine, honeyed minerality, and toasted hazelnuts all emerge from the glass, and while I don't think it matches the 2018, it's a brilliant Chardonnay offering medium to full-bodied richness, nicely integrated acidity, and a great finish. It's beautifully balanced and is going to keep for at least 5-7 years."

Review:

The 2021 Chardonnay Simpatico Ranch needs a lot of swirling before it shoots from the glass with notes of lemon tart, orange blossoms, candied ginger, and fresh nectarines with hints of crushed rocks, struck flint, and nutmeg. The medium to full-bodied palate delivers amazing tension, with tight-knit citrus and spice layers and a fantastically well woven satiny texture, finishing long and layered. "We only get about 1.5 tons per acre here," said owner/winemaker Justin Harmon. "This comes from old vines on AXR rootstock."

“1752” is the name of the Damilano Barolo Cannubi Riserva, in honor of the year in which the historic bottle was first marked “Cannubi”. It still exists today perfectly conserved by the Manzone family in Bra, close to Barolo. The bottle is clearly marked as being of “1752” vintage, indicating that Cannubi historically precedes Barolo. 

About the Vineyard:

The Cannubi Cru is in found within one of the 6 core zones which comprise a UNESCO heritage site in Italy. A mixture of Tortonian and Helvetian calcareous marl gives the grapes intense aromas of cherry, plum and tobacco, rose and violet in sequence. Its low potassium and high calcium/magnesium content offer the wine a fine and polished touch. The vineyard is located at about 270 m. a.s.l. and has a south-east sun exposure. Barolo Riserva Cannubi 1752  It is a small plot of about 2 hectares of Nebbiolo vines, currently between 30 and 50 years of age.

Tasting Notes:

Garnet ruby red in color, the bouquet is intense and balanced, with notes of violet, red fruit, cherry and plum, spices,  liquorice, cocoa, leather and tobacco. Dry, robust, full-bodied, very persistent, rich and velvety

 Food Pairing:

This wine is excellent with typical piedmontes pasta (tajarin, ravioli); perfect with red meat, braised and roast meat, game and absolutely ideal with all types of cheeses.

Review:

The purity of this wine is pretty phenomenal with blackberries, strawberries, fresh flowers and licorice. Hints of tar. It’s full-bodied, yet composed and compact with ultra fine tannins and a long, flavorful finish. Very structured. Try after 2024.

Laird Sauvignon Blanc Napa Valley is made from 100 percent Sauvignon Blanc

Vineyard: 100% Big Ranch Road
Appellation: Oak Knoll District of Napa Valley and Rutherford
Varietal: 100% Sauvignon Blanc

15% of Big Ranch fermented in Neutral Oak barrels + 2% of Smith Ranch fermented in Neutral Oak Barrels.

This lively and prolific varietal thrives in alluvial deposits composed of gravelly sand and gravelly loam, with good water retention and moderate fertility. Our Napa Valley Sauvignon Blanc is crafted in an approachable, fruit-forward style that is typical of the varietal and expressive of its terroir.

Tasting Notes: Translucent gold color leads to notes of juicy ripe pineapple, jasmine, Kaffir lime and Juicy Fruit gum entice the nose. Balanced, yet vibrant body of acidity tantalizes the palate with pineapple, passion fruit and Charentais Melon; a refreshing layer of minerality hits your mid-palate. The elegant, floral finish opens into a complex balance of white peaches, nectarines.

Morande Black Series Chardonnay is made from 100 percent Chardonnay. 

Malleco represents the exploration of one of the most extreme valleys in Chile for wine production. A new wine frontier, an ideal terroir to produce high-end Chardonnay in Chile, with a different style from other outstanding origins such as Limarí –which offers wines with marked minerality– or Aconcagua Costa –which delivers sharp acidity and great power. The Traiguen area in the Malleco valley produces wines of great tension and fruity austerity, as well as complexity, balance and finesse. A very typical style of Chardonnay marked by elegance, verticality on the palate and subtlety on the nose and mouth.

The wine offers a bright pale yellow color, intense and elegant aromas of citrus fruits and green apples as well as hints of nuts, such as hazelnuts and roasted chestnuts. A tense and fresh acidity on the palate, and a vertical structure in the mouth. Very fine and complex, its long persistence highlights the austere character of its fruit and a delicate minerality.

Shellfish and fish of intense flavor, such as smoked salmon, swordfish, giant perch, and white meats, poultry.
