Bouysses Cahors is made from 100 percent 100% Malbec.
A beautiful dark brilliant ruby purple color. The nose is complex of black cherry, blackberry with a hint of violet, followed by a buttery and vanilla note. The palate is rich, powerful, with smooth and melted tannins. This wine is fleshy and velvety.
Serve with game meat, red meat, duck confit, and goat cheese.

Manoir du Carra Beaujolais Cru Brouilly Terre de Combiaty is 100% Gamay.
Deep red ruby colored wine with red fruit aromas of strawberry, raspberry and floral notes of violet. Ample in the mouth, supple tannins.
Parcels in the lieu-dit "Combiaty", within the village of St Etienne la Varenne. The soils are dry, made of pink granite which gives the wine its tipicity.
The average age of the vines is 50 years.
Yield is 45-50hl/ha
Manual harvest; Aging on the lees in foudre for 3-4 months; Slight filtration.

Ponzac Patiemment Cahors 2011 is made from 100% Malbec
Grown on soils of red (irony) clay and limestone, this ambitious Cahors is one of the best example of what can be achieved when working with high precision on the "Causse". It combines the ripeness and the fat of Malbec of the clay based soils and the purity in fruit of the limestone. Should age well too.
Dark color, almost black as it should be for a ripe and concentrated wine from Malbec. The nose shows notes of fresh black fruit (blackberries) and also some more candied fruit and orange peal. It has also a spicy dimension to it (cinnamon). The texture is dense and velvety but the wine remains crisp and tensed all the way to the finish. Great food wine it will match any grilled meat dishes.

My First comment tasting this wine is "wow!" It's delicious; our flagship wine at Paradigm and it delivers. Dense, deep, ripe aromas of black berry and black cherry-like fruit layered with caramel and toastiness from a nice mix of French Oak barrels. Flavors coat the palate with matching notes in a classic Cabernet Sauvignon presentation. One of our best Cabs to date!

"Owned and managed by the Harris family, Paradigm winery produced its first vintage in 1991 in Oakville with winemaker Heidi Barrett. A self-contained winery estate with 50 acres of vineyards, Paradigm maintains a hands-on approach to all winemaking and vineyard operations. The 2015 Cabernet Sauvignon consists of 89% Cabernet Sauvignon, 6% Merlot, 3% Petit Verdot and 2% Cabernet Franc, and is aged in both new and used French oak for 20 months, then aged a further 20 months in bottle before release. The total production for this vintage was 5,544 bottles." Mas Redonne Bandol Rose is made from 55% Mourvèdre, 35% Cinsault, 10% Grenache.
Nice light salmon color, typical of Bandol.
The wine expresses some citrus, Pomelos (a delicious type of grapefruit) and lots of white fruit aromas and minerality.
The flavors are fresh, fruity and very aromatic with tons of apricot and mango.
Grilled salmon, chicken dishes as well as salads, sushi and sashimi.
