Riebeek Cellars Shiraz is made from 100% Shiraz.
Cold soaked for one day and then inoculated with selected yeast.
Fermentation temperature was between 24 - 26 degree Celsius. Malolactic
fermentation was done with French oak chips and American oak staves. This
was then blended with wine matured in 2nd and 3rd fill barrels for 12 months.

exceptional Shiraz wines. The Riebeek Shiraz is a lively rich wine, full bodied
with a subdued smokiness on the nose and a pallet of ripe fruit and
interesting spice.

Riebeek Cabernet Sauvignon is made from 85% Cabernet Sauvignon,15 % Shiraz.
An exciting new world style wine with upfront blackcurrant flavors. The black fruit is well-balanced with subtle French oak for a complex nose and an elegant and lingering follow-through. An exceptional example of a lighter style Cabernet Sauvignon that can be enjoyed young. Excellent with red meat dishes or veal.
Hickinbotham Peake Cabernet Shiraz is made from 60 percent Cabernet and 40 percent Shiraz.
Named after the late Mr. Edward John Peake who established the first vineyard and orchard at Clarendon circa 1850. Blending Cabernet Sauvignon and Shiraz is a famous part of Australian winemaking history and whilst the individual components of this wine are mighty, the sum of The Peake’s parts is magnificent. The Cabernet shines aromatically with notes of blackberry pie and dark chocolate, while the Shiraz fills the mid-palate with black plum and toasty oak. Fine tannins and balanced acidity contribute to an incredibly long finish. The Peake continues to honor the legacy of this iconic Australian blend.
Review:
Hickinbotham's 2017 The Peake Cabernet Shiraz is a 60-40 blend of the varieties, aged in a healthy proportion of new French oak. As a barrel selection, it stands above the other wines in the lineup, being more complex and complete than either the Brooks Road Shiraz or the Trueman Cabernet. Cassis leads the way, rounded out by ripe cherries and joined by shadings of cedar and vanilla. It's full-bodied and concentrated in the mouth, rich, supple and almost creamy in texture and boasts a long, silky finish. While nearly drinkable already, it should easily age for a decade or more.

The Riebeek Cellars Estate
Riebeek Cellars was established in 1941 and is situated in Riebeek Kasteel at the foot of Bothma's Kloof Pass. This medium-sized winery on the western coast of the Cape Province of South Africa sources its grapes from the fertile Riebeek Valley and the slopes of the mountain where the climate is very similar to the Mediterranean. Through the years as vineyard practices developed, cultivars were planted in soil and at slopes best suited to them. These well-tended vineyards enable the production of high quality wines which makes Riebeek Cellars the choice of wine buyers internationally. Well-known both in South Africa and abroad, Riebeek Cellars manages a variety of brands for various countries.
Heritage
Corporal Pieter Cruythoff, a scout of Jan van Riebeeck, founded the Riebeek Valley in 1661. Impressed by the single standing mountain, he called it Kasteelberg (“Castle Mountain”) commemorating the Castle of Good Hope in Cape Town, the fortress of Commander Jan van Riebeeck. The twin towns, Riebeek Kasteel and Riebeek West, established at the foot of Kasteelberg, are therefore also suitably named after Van Riebeeck.
The Riebeek Valley is a mecca of wonderful wines, exceptional food and exquisite art where tourists and locals alike are forever tempted into spending more time than allowed. The serene valley falls in the bigger Swartland region which is called the 'bread basket' of South Africa for its grain production, while it is further internationally acclaimed for its high quality olive products. With various hotels and fine-dining restaurants as well as true country hospitality, the Riebeek Valley has become a very popular tourist destination. The ultimate charm of Riebeek is however in its people and their commitment and passion for wine.
"Located in the Western Cape region of South Africa, this winery was established in 1941, which makes it relatively old compared to all the new wineries that have sprung up in this area. Among the first Pinotages I can recommend, it’s also a good value. Pinotage, which is, of course, ubiquitous in South Africa, was first made in 1941, when the Cinsault grape (primarily grown in southern France and the Rhone Valley) was crossed with Pinot Noir." - Robert Parker's Wine Advocate (Issue 201, June 2012).
Luis XIV Fondillon Oro 50 years NV is made from 100 percent 100% Monastrell (Mourvedre). Only 24 9 liter cases produced.
The wine is produced in the village of Cañada, in the subarea of Alto Vinalopó in the province of Alicante. Made from 100% Monastrell planted on traditional dry land as bush vines, at 550-580 meters above sea leval and enjoying a Mediterranean climate with great marine influence due to the easterly winds.
Fondillon 50 years is mahogany in color with orange tile rim, medium layer and great density. On the nose, it has a very deep aroma of old wood, black tea and carob. In the mouth, it has a sweet entry balanced by a rich high acidity. Its aromas are long, almost eternal and very intense. It tastes like old mahogany, a very old barrel and bygone times.

"The NV Fondillón Luis XIV has the subtitle Edad Superior a 50 años (over 50 years old), and it's a dark mahogany, bottled from a single barrel that has the specific profile of a very old wine greatly concentrated by age, which tends to make it similar to other very old and concentrated wines, be it a Mediterranean rancio or a very old Moscatel. It has notes of bitter chocolate, coconut and iodine, carob beans (algarroba) and some bittersweet sensations. It's dense and concentrated, and the palate is pungent, with very intense flavors and a bitter twist in the finish. This has 16.3% alcohol, 6.45 grams of acidity and 34 grams of sugar, but it comes through as very dry. The wine is long and extraordinary, but it just doesn't have any Fondillón character after decades of concentration by evaporation. The price is ludicrous. "Fondillón is an extraordinary treasure of Alicante, a rare product, made from late harvest, non-botrytised grapes, unfortified, but with a final alcohol of no less than 16%. Intense, aged, but not sweet (deliciously not more than 45g/l). Fab with cheese or dark chocolate. The wines have to be a minimum of 10 years; this release is more than 25 years. A ruby red garnet color, ripe fruit aromas, dried fruits, hints of licorice and scents of vanilla. Robust and harmonious in the mouth, a rich texture. The wine is only produced in the best vintages.
The grapes are coming from a vineyard planted at 400 meters above sea level. The soil is mainly marl and limestone.
The density of vines per hectare is 5,000 plants, which is equivalent to 2,000 vines per acre.
The pruning technique used is cordon
The grapes used are 100% Sangiovese grosso
Alcoholic fermentation was done in tank, while the Malo-Lactic fermentation was carried in oak barrels.
Wine was then aged for one year in big French oak barrels and 3 years in Slavonian oak barrels.
