Inviting aromas of mint, marshmallow and Asian pear pull you into this drink. Surprisingly dry, this Nigori (cloudy) style sake has a rich, chewy texture. The intriguing mid palate features mint, white chocolate, and tart cherries. The finish belies our expectations with an elegant, softness of minerals that settles in a dry finish.
Pair with roast duck, dry-rub ribs, full flavored country pate, and fruit and nut desserts of light sweetness.
Mildly ripe Coulommiers or Brie, Italian Raschera.
This unpasteurized sake is exciting and lively with a nose full of citrus, apple blossom and shizo. The palate is equally as bold featuring fresh persimmons, marshmallow and slightly underipe stone fruit. The finish is clean showing soft minerality.

Juicy & Refreshing. Full of fruity flavors with clean sweetness. Brewed with Hitogokochi, the special sake rice harvested in Nagano, and natural water slowly filtered down the Japan Alps. In 1866, toward the end of the Edo period, Matsujirou Kurogouchi and his family started a small sake brewery currently called Senjo named after Senjo Ga Take, a 3000-meter peak in the Japanese Alps. Today Senjo Brewery strives to combine art with science and old skill with new technology by adding modern twits to the rich historical traditions of Sake brewing.
Pair with Deep-fried fish with sweet & sour sauce, Young sweetfish tempura (chiayu tempura), Caesar salad.
Kokuryu "Tokusen" expresses its ginjo identity not through fragrant aroma but with decisively good taste. Its hallmarks are strength, flavor depth and, one notices at last, imperturbable balance.

The Kokuryo Brewing Company Brewery
This brewery is located in the Fukui Prefecture.
Sake made from soft water tends to pick up subtle flavor nuances that are not detectable in the crisp, dry sakes made from mineral-rich hard water. At the ginjo level they are multi-layered and complex, and It is not always easy to describe their qualities in words.
Among the soft-water breweries of Japan Kokuryu is perhaps the most famous. Its water is drawn from the subterranean flow of of Kuzuryugawa (Nine-Headed Dragon River), famed since ancient times for its delicious taste. Kokuryu's founder, Nizaemon Ishidaya, built the original brewery in 1804 in the vicinity of Eihei-ji, the main temple of the Soto Zen sect. Nizaemon's descendants have been making sake there ever since.
Kokuryu labels resound with deep flavor, but what makes them unique is their overall finesse. Often sakes with a big taste profile become muddied by amino acids and other fermentation byproducts and lack clarity. Somehow Kokuryu manages to avoid this, bringing rich flavor and delicate balance together in a unique expression of the sake-maker's art.

Johann Michel Cornas Cuvee Mere Michel is made from 100 percent Syrah.
Cuvee Mère Michel was first introduced in 2016 and is not produced every year. This wine is a tribute to Johann Michel' wife, Emmanuelle, and a nod to the French song, La Mere Michel. This wines comes from Selection Massale (replanting new vineyards with cuttings from exceptional old vines from the same property) cuttings of Serine off the 1947 Yves Cuilleron vineyard at Chavanay. The vineyards are located in the lieu-dit "Les Cotes" at an altitude of 230 meters and benefiting from a southern sun exposure.
Review:
"Only made in top vintages, the 2018 Cornas Mère Michel is a tribute to Johann's wife and a play on the French song "La Mere Michelle." Brought up in a new demi-muid, it's a richer, broader wine compared to the Cuvée Jana yet still has incredible Cornas style in its red, black, and blue fruits as well as notes of toasted spice, roasted meat, chocolate, and wild herbs. Rich, full-bodied, and opulent, it has a touch more upfront appeal and should be drinkable in just 4-5 years yet also evolve for two decades." -

Chavy-Chouet Maranges Blanc Les Meurees is made from 100 percent Chardonnay.
Domaine Chavy-Chouet is a well-regarded Meursault house, estate-bottling since 1982 and today in the hands of Romaric Chavy, whose whites have a devoted following and reach the United States only in small quantities. Maranges, at the southern tip of the Cote de Beaune, is one of Burgundy's last great-value white appellations, and Les Meurees is a single limestone plot the domaine farms organically from vines around thirty years old.
Raised fifteen months in French oak with a fifth new, it is pure Chavy in style: ripe orchard fruit and hawthorn lifted by acacia honey, with a bright, mineral, lime-blossom finish. White Burgundy that drinks well above its price.
