Dark red with a hue of purple. Intense and complex bouquet of red, black and blue berries intermixed with notes of blueberries, minerals (graphite, wet river rocks) licorice, fresh blond tobacco and a hint of lavender. The estate-grown 2016 Cabernet Sauvignon Mon Chevalier is a blend of 94% Cabernet Sauvignon, 4% Cabernet Franc, 1% Malbec and 1% Petit Verdot. Very deep purple-black in color, it charges forth with intense notes of crushed black cherries, black berry preserves and cassis scents with touches of spearmint, Indian spices, espresso and dried lavender plus a waft of roses. Full-bodied, the palate reveals incredible restraint, slowly revealing earth and black fruit layers framed by firm, grainy tannins and just enough freshness, finishing very long and spicy.

Moving to the top releases, the 2016 Cabernet Sauvignon Mon Chevalier comes from Knights Valley and was brought up in puncheons. The 2017 'Mon Chevalier' is rich, deep and unctuous, with all the character that makes wines from this site so exciting. Graphite, inky blue/purplish fruit, spice and lavender infuse the 2017 with tremendous complexity. In the glass, the 2017 is savory, rich and expansive, not to mention hugely appealing.

Clif Lede Cabernet Sauvignon Stags Leap is made from 82% Cabernet Sauvignon, 8% Merlot, 7% Cabernet Franc, 3% Petit Verdot.
The fruit was sourced from the hillside terraces of our Poetry Vineyard, our Twin Peaks Vineyard estate surrounding the winery, and a few neighboring vineyards in the Stags Leap District. The wine is composed of small lots from our best blocks, representing a diverse range of carefully selected clones and rootstocks. From Poetry’s exposed, rocky terraces boasting volcanic origins, to the ancient riverbed alluvial soils of Twin Peaks, the breadth of contributing sites translates into a wine of impressive complexity.
Grapes were picked in the darkness of the early morning hours. The freshly-harvested fruit immediately underwent rigorous selection by our three-tiered sorting process, which included our cutting-edge optical sorter. Whole berries were gently delivered by gravity to tank using our crane system, minimizing disruption of berry integrity. Cold soaks lasted approximately seven days, and fermentations were managed via a combination of délestage, pumpovers, and punchdowns. Extended maceration ranging from four to five weeks fine-tuned our tannin profiles, allowing us to perfect mouth feel and wine complexity. The wine was aged in French oak barrels, 38% of which were new, for twenty-one months.

The 2021 DAOU Reserve Cabernet Sauvignon is emblematic of Paso Robles as a world-class region for Bordeaux-style wines. Intense purple-red hues foreshadow deep aromas of black fruit, pomegranate, tobacco, mocha, and bay leaf. Trailing notes of clove, nutmeg, and vanilla emerge as the wine opens up in the glass. The 2019 Cabernet Franc Lithology Beckstoffer To Kalon Vineyard just shines for its bouquet, which is classic To Kalon with its floral, incense, spicy, red and black-fruited aromatics. These all flow to a medium to full-bodied, utterly seamless Cabernet Franc that’s balanced, has laser-like precision, and a great finish. This isn’t the biggest or richest wine in the lineup, but it’s Cabernet Franc in all its glory, with soaring aromatics and complexity, ample richness and texture, and a beautiful sense of finesse and elegance. It’s going to keep for 15-20 years with no issues.

Anakota Wines Helena Dakota Vineyard Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon.
Helena Dakota is defined by its power, structure and sophistication. It is an intricate Cabernet Sauvignon that reflects both the terroir of the site and the influence of the surrounding Knights Valley AVA. It possesses layers of plums, anise, cassis, leather, bay leaf and cedar. Galvanized by a streak of minerals and bold tannins. Helena Dakota is a solidly-built wine that stands the test of time.
This sloping, 12-acre vineyard runs southwest to northeast at roughly 750 feet above sea level. It features soft, reddish brown, gravelly, silt loam soils speckled with rocks. Prevailing westerly winds blow over a large pond and continue uphill parallel to the rows of vines. These cooling breezes slow the ripening process creating wines that are both powerful and balanced with red fruit flavors, notable minerality and graceful tannins. Pierre says the Cabernet from Helena Dakota remind him of Pauillac or Saint-Estèphe.

As are all To Kolans, it's incredibly perfumed and complex aromatically, and it's one of those wines that changes every time you come back to the glass. Full-bodied on the palate, it offers beautiful richness and depth, a light, graceful mouthfeel, silky tannins, and a heavenly finish. Grand Veneur Chateauneuf Du Pape Vieilles Vignes is made from 50% Grenache, 40% Mourvedre, 10% Syrah
Matured in concrete vats (40%) and oak casks (60%)
It boasts an inky/purple color in addition to a gorgeous perfume of crushed rocks, jammy black fruits, charcoal and graphite. Blackberry aroma with an air of dates pressed in alongside – this is sweet-noted. It is easy to appreciate, a sleek and stylish start. The palate holds excellent fruit that runs well and has kick. Its tannins move round freely and a minted finale comes forward. Its dark fruit is tasty, darkens on the finish, where tar and char from its oak enter. It is all very much together, a bundle of harmony, and will gain local attributes as it ages.

The vineyards are located in the north of Châteauneuf du Pape. GRAND VENEUR «Vieilles Vignes» cuvee is produced from the older vines. Thanks to time and an organic growing, roots go very deep in the soil. Yields are naturally low and grapes highly concentrated.
