Lismore Barrel Fermented Sauvignon Blanc is made from 100 percent Sauvignon Blanc.
As with all Lismore wines, balance is the key. The bracing acidity that is customary in new world Sauvignons has been brought into balance with a carefully chosen pick date and the barrel and egg fermentation and maturation. A full bodied, balanced wine was the goal.
Barrel fermentation and extended lees contact contribute to this full bodied, elegant and well balanced wine. Floral notes of passion flower and fynbos, granadilla, guava, gooseberry and pear on the palate along with an underlying minerality which gives this unique terroir driven wine its signature.

The grapes come from 50% Lismore’s Greyton vineyards which are planted on East/Southeast facing slopes at 320 meters in the foothills of the Sonderend Mountain Range. The soils are deep decomposed shale. The other 50% comes from a vineyard in Stanford which overlooks Walker Bay on sandstone soils.

This very special Chardonnay was made in the style of a traditional Burgundian Chablis. It shows intense citrus and soft fruit layered with brioche, honey and walnut carried by a distinct minerality and crisp acidity with a lingering citrus finish.

The palate is quite brilliantly balanced, the fine tannins framing vivid brambly red and black fruit laced with cracked black pepper, dessicated orange peel, clove and an undercurrent of garrigue that becomes more prominent on the persistent finish. An exotic experience which shifts your mind to another place. Cassis, brambles and succulent cherry. White pepper, classic garrigue and the strong floral perfume of crushed violets. Light and elegant, but structured with a fresh acidity. To experience the best this wine has to offer, decanting is suggested.
The grapes were fermented 40% whole bunch in a 5000 litre wooden fermenter with gentle pigeage throughout. The process allowed for a long extraction period which lends to the fruit expression of this wine. The wine was left for a 30 day extended maceration on the skins and then pressed in a traditional baskets press. Matured in 500 litre barrels for 10 months (35% new). Time in the bottle will allow integration, the deepening of layers and full expression of the fruit.

Bursting with purple flowers and savory, spicy notes, the 2022 Estate Reserve Syrah was made with 50% whole-cluster fruit, offering a crunchy, red-fruited nose that pops with delightful tertiary expressions of turned earth and pencil lead. Light to medium-bodied and with 12% alcohol, the wine compresses slightly to show an earthy, graphite edge on the palate while slightly stemmy notes sway with fine-grained tannins across the mid-palate. Flavors of potpourri with spiced cherry skin somersault with red and purple flower essences before finishing with hints of pink peppercorn over the elegant and elongated finish. Just under 5,000 bottles were produced after the wine spent 11 months in 25% new oak barrels.

Lodovico Barolo di Barolo is made from 100% Nebbiolo.
Barolo di Barolo is a blend of 2 different vineyards in Barolo: PREDA and SARMASSA, both in the village of Barolo. The somewhat different soils, exposures and microclimates of the Preda and Sarmassa vineyards combine to produce a well-balanced, harmonious wine packed with the fresh, elegant aromas supplied by La Preda, and the full body and structure catered for by Sarmassa.
Loads of blackberry and red berry with vanilla oak character. full and concentrated, displaying seamless tannins and gorgeous fruit. Complex and complete, full-bodied, with lots of fruit and round tannins. It's long and fruity. It will be at its best after 2-3 years stored lying down in cool, dark surroundings. Serving recommended in large glasses at a temperature of 17-18°C.
Long Shadows Saggi Red is made with 58% Sangiovese, 30% Cabernet Sauvignon 12% Syrah. Among Tuscany's oldest and most prestigious wine families, Ambrogio and Giovanni Folonari teamed with Allen Shoup to produce a wine that showcases Washington State's terroir with plenty of Italian character. Saggi (meaning "wisdom") is a stunning blend of two outstanding Washington Sangiovese vineyards. Candy Mountain Sangiovese gives the wine its dark fruit flavors and appealing notes of anise. Dick Boushey's Yakima Valley Sangiovese, planted in 1992, adds vibrancy and liveliness. Because Cabernet Sauvignon has the potential to overtake Sangiovese, the Folonaris work closely with Sagemoor Vineyards to carefully select blocks of Cabernet they know from experience deliver elegant character and refined tannins. Syrah, also from Sagemoor, adds to the wine's dark color and rich mid-palate.

The 2018 Red Wine Saggi is mostly Candy Mountain Sangiovese (58%) with Cabernet Sauvignon (30%) and Syrah (12%). Gilles Nicault has created a sensational, one-of-a-kind blend here. The wine explodes out of the glass with potpourri and anise tones alongside a beautiful core of red and dark fruits. Roederer's 2014 Brut Vintage is beautiful, offering up aromas of pear, mirabelle plum, red berries, warm biscuits and smoke. Full-bodied, layered and elegantly muscular, it's seamless and complete, with terrific mid-palate depth and amplitude. Framed by bright acids and enlivened by a pinpoint mousse, it concludes with a penetrating finish. The blend is 70% Pinot Noir, emphasizing Verzy, and pressure is a touch higher than in its more ethereal Blanc de Blancs counterpart. As I wrote of its 2013 predecessor, this is a wine that puts many prestige cuvées to shame.

Lucien et Andre Brunel Chateauneuf-du-Pape Les Cailloux Blanc is made from 70% Roussanne, 20% Grenache Blanc, 10% Clairette.
Les Cailloux Blanc displays a pale gold color in its youth and evolves into deep gold after a few years of aging. It has floral scents of honeysuckle and jasmine with hints of honey. On the palate, white flowers and honey are joined by minerality and viscosity on the finish. The wine’s surprising complexity grows more well-rounded as it evolves in the glass.
This historic estate was established in the 17th century when André Brunel’s family purchased a vineyard plot from the Bishop of Avignon. André took over the reins of this estate in 1971, and later his son Fabrice joined the winemaking team in 2012, keeping the family legacy alive by pursuing quality with the highest regard and respect for the environment.
Châteauneuf-du-Pape is notorious for its large, round pebbles that absorb the sun’s energy, radiating warmth throughout the night, allowing the grapes to achieve ideal ripeness and incredible complexity. “Les Cailloux” gets its name from the pebbles.

Inviting aromas of grapefruit and lime zest, Meyer lemon and honeydew harmonize with wild white flowers and stone on the nose. The palate is refreshed by brisk acidity, making way for a wave of fresh pears lemon zest, subtly framed by a layer of stone and light oak spice.

Luigi Baudana Barolo Cerretta is made from 100 percent Nebbiolo.
Austere and very mineral expression of Barolo. Aromas of dark cherries and raspberries jump out vividly from the glass. Hints of iron, menthol, new leather add to the depth and intrigue of this wine. Another sensational edition of the Mollydooker ‘Carnival of Love’ Shiraz from 2021 — and I am not the least surprised. I’ve had every edition of this wine for more than a decade. This bottling was as usual aged in all new American oak. On the nose this takes on dense black currant jelly, cigar box and shades of creosote with Arabica bean. The palate is soft and inviting with its plush texture and seamless mouthfeel as this effortlessly glides throughout the drinking experience. A joy to drink now so young, this will easily cellar for another ten years and potentially more. But why wait?

That's perfectly okay, as the aromas and flavors are textbook for the appellation: crushed stone, flowering garrigue, ripe cherries and mouthwatering strawberries, all capped off by refreshing citrus-zest notes on the lengthy finish. Ossian Capital represents a particular expression of very old Verdejo vines, taking its potential far finesse, elegance and longevity. It is made in selected years with a selection of extraordinary grapes.

"The 2020 Capitel is pure Verdejo from the oldest vines from the Peña Aguda vineyard in the village of Nieva on slate soils. This is the last vineyard to be bottled and has higher alcohol (14%) than the rest of the vineyards despite now harvesting earlier. The wine has a different aromatic profile but getting closer to the style of Ossian, less opulent than in the past, with more energy, quite fruit-driven with some exotic notes reminiscent of banana skin. The whole clusters were pressed and the juice put to ferment in barrel where the wine matured with the lees and, starting this year, without bâtonnage, because they feel the wines have enough volume and stirring the lees can bring more oxidation to the wine. 2,500 bottles produced. - Luis GUTIERREZ"

The Pago de Carraovejas Ribera del Duero vintage marks a turning point in the history of the winery. From now on, the Crianza and Reserva are unified in this wine that focuses on the terroir and character rather than the time of aging. Its renewed label reflects the three key elements of this red: origin, soul and emotion.
Pago de Carraovejas Ribera Del Duero is made with grapes grown in the Botijas River valley, and planted between 1988 and 2011. Our work over the last 30 years has been geared to handcrafted viniculture, that puts as much care as possible into the microclimate conditions and the details. We have placed particular attention on the maintenance of the soil by plant cover that already grows spontaneously. It allows us to develop the ecosystem of the valley, which we respect scrupulously, using organic fertilizer and sulfur as the sole basis of our viticulture.
Depending on which plot they come from and the time they enter the winery, the grapes may be deposited in cold chambers to prevent oxidation and preserve the aroma. We carry out a two-part selection: first on the vine, where we choose the bunches, and then on a belt in the winery, where we remove the grapes that do meet the necessary conditions. The grapes enter the winery and are transported with the assistance of gravity. The deposits are filled slowly and gently. Depending on the characteristics that we detected when tasting the grapes, we ferment them either in stainless steel deposits or French oak barrels. For years we have worked with our own yeast that has been isolated from the vines by our team. This work is also partly responsible for the Carraovejas character.
The wine was aged in barrels for around twelve months.

The eponymous 2021 Pago de Carraovejas comes from a cooler year when they consider the grapes had exceptional quality. The bottled wine is composed of Tinto Fino with 5% Cabernet Sauvignon and 3% Merlot with 15% alcohol but good freshness and integration of the oak after spending 12 months in 226- and 600-liter barrels. It's medium to full-bodied, with fine tannins, a juicy mouthfeel and a tasty finish. This is a more elegant Carraovejas. It was bottled in the spring of 2023.

Our efforts during harvest and barrel cellaring concentrate on maintaining the freshness from the first day we handpicked each vineyard block. Simple winemaking protocols are employed while crucial “timing” oriented winemaking decisions rule each day.
The 2015 vintage produced delicious concentrated wines in smaller quantity than normal. This black raspberry colored Cabernet has lovely open aromatics of black cherry, berry, and plum layered with a perfect balance of new and used French Oak.

My First comment tasting this wine is "wow!" It's delicious; our flagship wine at Paradigm and it delivers. Dense, deep, ripe aromas of black berry and black cherry-like fruit layered with caramel and toastiness from a nice mix of French Oak barrels. Flavors coat the palate with matching notes in a classic Cabernet Sauvignon presentation. One of our best Cabs to date!

Paradigm Merlot is made from 98% Merlot - 2% Cabernet Sauvignon.
Deep ruby color with aromas of black cherry and plum, a hint of cedar and soft touch of toasty French oak. Seamless and silky across the palate with a nice mouthcoating texture and nicely balanced acidity for many food pairings. Flavors are similar to the aromas, dark plums and cherries, pomegranate, spice and complimentary sweet vanilla toasty oak. Flavors linger making you want another sip.
Full of life, crispy red fruit, with balsamic notes, easy to drink, representing the Mediterranean character.
As a light red wine, it pairs well with tapas, charcuterie, rice dishes, or pizza. It can even complement desserts. The high acidity will take you on a surprising journey.
Vinsacro Dioro Seleccion is made from 100% Vidau (Blend of the de varietals Tempranillo, Graciano and Mazuelo with predominance of 70+ years old Garnacha).
A wine to enjoy.Vinsacro Dioro, a wine inspired by the Egyptian, Greek and Roman cultures that worshipped wine and gave it a sacred meaning associated with joy and festivity. It is the fruit of our best vineyards, living witnesses to the work and passion of the four generations that preceded us.
Pair with Roast lamb or pork, game, beef steaks, stewed meats. During the aperitive, it will accompany as well with aged and blue cheese.

Grapes selected manually from our vineyards located on the southern slopes of Monte Yerga in the “Cuesta la Reina” estate. Grapes that are harvested with the utmost care, transported at low temperature in fruit boxes to the winery to avoid any damage to the fruit.
Fermentation is carried out with indigenous yeasts and the wine is kept in maceration for 30 days while breaking the cap daily. Afterwards, the wine is transferred to oak barrels where it remains for 17 months before bottling.

"The 2019 Vinsacro Dioro Selección is a Vidau field blend sourced from Monte Yerga in Rioja Oriental. Aged for 18 months in French and Eastern European oak barrels, it is only released after five years in the cellar. Dark garnet in color, time in the glass reveals soy sauce, bay leaf and thyme notes, along with black fruit and chutney-like undertones. Dry and rich on the palate, it flows with softened tannins and a clingy mouthfeel, lingering long with an impression of tomato leaf. This is a complex, nuanced and solar red that will warmly captivate your palate. - Joaquin HIDALGO"

Cabrieres Chateauneuf du Pape Rouge L'Esprit is made from 50% Grenache, 15% Syrah, 15% Mourvèdre, 10% Cinsault and 10% remaining: Muscardin, Counoise, Picpoul, Terret noir, Vaccarèse, Clairette, Bourboulenc, Roussanne, Picardan.
The vineyard is situated on the high tablelands, which are characteristic of the northern area of Châteauneuf-du-Pape. The terrain consists mainly of alpine diluvium and chalky Miocenian soil, with large flint pebbles covering the surface. These pebbles conserve the heat of the day during the night, thus avoiding too much evaporation.
85-year-old vines. Aged 12 months in French oak. Intense ruby color, with a dominant nose of black fruits (blackcurrant and blackberry) evolving into smoke and grilled notes. Robust tannins on the palate with a long finish.
Pair with choice red meat, prime rib and game, or try with strong cheeses and chocolate dessert.
