It's a full-bodied, opulent, powerful Cabernet Sauvignon that doesn't pull any punches on the fruit or texture scale, yet has ripe, present tannins, a light, elegant texture, and a great finish. Give bottles an hour in a decanter if drinking any time soon, or better yet, hide bottles for 2-3 years. It's going to evolve for 15+ years in cold cellars.

DAOU Vineyards Reserve Cabernet Sauvignon is made from 77% Cabernet Sauvignon, 23% Petit Verdot.
The 2021 DAOU Reserve Cabernet Sauvignon is emblematic of Paso Robles as a world-class region for Bordeaux-style wines. Intense purple-red hues foreshadow deep aromas of black fruit, pomegranate, tobacco, mocha, and bay leaf. Trailing notes of clove, nutmeg, and vanilla emerge as the wine opens up in the glass. Opulent textures expand across the palate with flavors of red fruit, blueberry, and chocolate-covered raspberry. DAOU Vineyards Soul of a Lion is made from 80% Cabernet Sauvignon, 13% Cabernet Franc, 7% Petit Verdot .
The 2020 vintage presents an alluring profusion of black cherry, mulberry and Oregon blackberry aromas with notes of leather, cigar box and dark chocolate. Hints of desert sage and crème de menthe accent the rich fruit. The palate is silky and voluptuous, delivering loads of currant, cassis, black raspberry and ripe cherry. The 2021 Pinot Noir (West Sonoma Coast), a new wine in this range, is lights out. Rich, ample and bold, the 2021 races across palate with layers of purplish fruit, lavender, spice, menthol, licorice and spice. A dollop of stems adds nuance, but without dominating the overall balance. There's terrific acidity and structure to play off the natural fruit richness that is such a distinctive attribute of the best sites in the appellation.

Guillemot-Michel Vire Clesse (magnum) is made from 100 percent Chardonnay.
Beautifully expressive, with yellow fruits, orange blossom, smoke & flint. Thick and saline on entry, then seriously deep in the mid-palate, with suggestions of exotic fruits perfectly countered by strong minerality. This wine strikes a perfect balance between sweet and salty elements, and it shows vibrant acidity. It boasts a thickness that few other northern Mâconnais can match.

Notes of crisp green orchard fruit, oatmeal, clear honey, white flowers and mint introduce the 2019 Viré-Clessé Quintaine, a medium to full-bodied, layered and concentrated wine that's deep and sapid, framed by lively acids and chalky structuring dry extract. A small, inaugural release from Caymus Vineyards, this wine is a California-appellation Cabernet Sauvignon – supple, dark and rich, bearing the signature hallmarks of Caymus. Saumaize Michelin Macon Vergisson Sur Roche is made from 100 percent Chardonnay.
Harmonious, fresh and clean aromas of fresh apple, lemon, orange blossom, white flower. Pure, crisp, silky and fine texture. Ripe fruit flavors and good acidity.
Collemattoni Brunello di Montalcino is made from 100 percent Sangiovese.

Coming from a parcel with 10-15 year old vines planted in sandy clay and marl soils.

Malolactic fermentation completed.
Wine is slightly filtered before bottling.

Deep violet in color, intense, and with a great aromatic complexity of red fruits together with floral notes of violets and roses. On the palate, it is a tasty wine with a soft spell and a superb freshness, along with the elegance and power so characteristic of Puente Alto. It is a wine with a velvety texture, lush body, and a very long and persistent finish.

Deep and serious with black olives, blackberries, blueberries, tobacco leaf, sweet red capsicum, ash, dried meat and a hint of black chocolate. This is a more direct, full-bodied Don Melchor, filled with solid blackberries and wrapped by tight, fine-grained tannins. Dark, ruby/purple core with a medium intensity rim and moderately stained tears. Complex and very aromatic with black cherry, cassis, toasty vanilla, cinnamon, cedar, graphite, oak, dusty leaf notes, star anise and red licorice. Full bodied, with ripe black fruit of cherry, currant and berry with baking spice on entry. Super-concentrated and mineral. Release always trails the regular Sancerre Blanc by a year so it has extra time in both tank and bottle.
An understated charm on the nose, revealing elegant aromas of yellow fruits like apricot and mirabelle plum, along with hints of anise and marzipan. A touch of green pepper adds a light and airy quality. On the palate, it offers a crisp and delightful experience, with flavors of plum and orange wedge, culminating in a chalky, saline finish.
VINEYARDS: The vineyards are planted in Terroir of Kimmeridgian marls (calcareous clay with encrustation of oyster and mussel fossils) from the Jurassic time. Trellised vines are averaged around 30 years old and have a planting density of 8000 vines/ha. Tillage takes place in the rows until the bud burst, the rest of the year to natural grass covers. The Côte des Monts Damnés is located in Chavignol. Steep hillsides (declivity up to 70%), facing south, with an altitude that ranges from 650 to 980 feet.
VINTAGE: The grapes matured in cooler temperatures than in recent years, so the 2021 vintage is in line with other vintages that conform to the temperate climate of the Centre-Loire wine region.
VINIFICATION AND MATURATION: The grapes were handpicked and had a light cold static settling to eliminate the coarsest lees. Fermentation and aging took place in stainless steel tanks (88%) and 10 years old wooden vats (12%). After, the wine was aged on fine fermentation lees for 9 months.
Corinne Perchaud Chablis is 100 percent Chardonnay.
A classic Chablis with aromas of ripe white fruits and a taste of rich minerals.
The Vineyards The plots are in Chablis located predominantly on the village of Fleys, but also on the common Chichée and Fontenay, their total area is 13 hectares. They are mostly north and north-west oriented. The ground floor is Kimmeridgian marl consisting clay and limestone. The oldest of of the vines is 35 years. Winemaking After a slight settling, the juice is put in stainless tanks to achieve its fermentation both alcoholic and malolactic. Ther is a long aging on lees to refine the flavors and develop complex flavors. If necessary, we make a collage of Bentonite to remove proteins and a passing cold which eliminates tartar crystals. Then we perform a tangential filtration method friendly to the wine. The wine is bottles between 14 and 21 months after the harvest.
Pairs well with Oysters or shellfish and Sole Meunière.
All older vintage wines have been purchased from a single collectors cellar. Pictures can be requested before shipment.
2021 Rossj-Bass displays the main features of the vintage well, with intense fruit concentration and floral notes. The nose shows ripe citrus notes of lemon peel and orange evolving into tropical fruits. The richness of the nose and the same notes are reflected on the palate, where remarkable acidity balances the fruit concentration. The wine is rich, full-bodied and creamy, with a long finish.

The 2021 Gaja Rossj-Bass starts off with very, crisp, green fruit and much more Sauvignon Blanc dominant aromas of grassy, bright, fragrant green apple and green pepper - all very bright and cheerful. Then Chardonnay seems to take over in the medium-full bodied and pleasing creamy texture of the wine. This is balanced again by the tangy, juicy acidity of Sauvignon. This is very elegant blend of Sauvignon Blanc aromas and zestiness and the textural comfort of Chardonnay. The name Rossj is a nickname of Angelo Gaja’s second daughter, Rossanna.
