Freemark Abbey Sycamore Cabernet Sauvignon is made from 88% Cabernet Sauvignon, 7% Merlot, and the rest Petit Verdot and Cabernet Franc.

Wine Profile: Opaque dark ruby describes the color of this Rutherford wine. Black currant and Boysenberry notes dominate the aroma, with dark chocolate truffle, cocoa powder,  Worcestershire sauce, cremini mushrooms and forest floor adding to the complexity. The oak adds the ideal amount of complexity with aromatic cedar, cinnamon and clove. The wine has great depth of black fruit flavor, with a strong expression of sweet black cherry. This full-bodied cabernet sauvignon has resolved tannins yet firm structure, with good acidity. Lovely long finish!

Primary Vineyard: Sycamore Vineyard—Rutherford (100%): Small 24-acre vineyard located about 1.2 miles south of Bosche, right up against the Mayacamas Range, this vineyard has a rich clay loam. Sycamore Vineyard produces small berries reminiscent of mountain fruit berries, with intense extract of color and flavor. The color is very dark early in the fermentation, with flavors of black currant and black berry with a forest floor complexity.

Klipsun Cabernet Sauvignon Red Mountain is made from 84% Cabernet Sauvignon, 4% Merlot, 4% Malbec and 8% Syrah.

The 2017 vintage started out with a cool, wet winter, with significantly above average snowfall in eastern Washington. Red Mountain had a 24% increase in rainfall in 2017 over the 10 year average. Going into spring, the cool trend continued. As a result, bud break at Klipsun was behind the historical average and significantly behind the most recent warm vintages of 2013 2016. Bloom was also slightly delayed. Because of the cool weather, set was lighter than usual which translated into significantly less fruit in 2017.

The early part of the summer saw average temperatures followed by above average temperatures in July and August. As a result, he at accumulation was a bit above average for the season, despite the cool start. And because of the smaller than normal yield, harvest began right on schedule, perhaps even a bit early for some of the whites. In the second half of September, when Klipsun traditionally harvests all the reds, the temperatures cooled considerably, which delayed ripening. This allowed for luxurious amounts of hang time without the threat of increased sugar accumulation, stretching harvest into the first week of October. A s a result, all fruit going into the 2017 Klipsun Cabernet Sauvignon could be picked at perfect sugars levels with great fruit maturity and flavors. Overall, the quality of t he 2017 harvest is as high as the 2016. However, the style is slightly different. The 2017 wine has a firmer structure, more spice & mocha in the nose and will take a few mo re years than the 2016 to reach a perfect balance between fruit and tannin.

The 2017 Cabernet Sauvignon Red Mountain is composed of 84% Cabernet Sauvignon, 4% Merlot, 4% Malbec and 8% Syrah, which immediately emanates with aromas of dark roasted espresso bean, toasted oak, dried tobacco and dusty black fruit tones of cassis, currant and blackberries covered in dark cocoa powder. Full-bodied, generous in complexity and still tight in the mouth, the wine unpacks layers of cedar and vanilla tones with dusty purple flowers and bitter dark chocolate across the mid-palate, giving way to fine-grained tannins that will loosen with time. As the wine sits on the palate, the 100% French oak regimen is on full display for all to see. The wine lingering long and continues to evolve in the mouth, ending with a drying finish that highlights the oak and terroir. It’s still a baby, and I would keep it in the cellar for another few years before popping the cork—this will effortlessly coast for more than a decade. The 2017 vintage marks the second release of this wine, with 6,300 bottles produced. It comes from its namesake vineyard, first planted in 1984 on Red Mountain. I’m keeping my eye on this producer. Patz & Hall Hyde Vineyard Chardonnay is made from 100 percent Chardonnay.

The 2018 vintage is elegant, yet powerful and displays classic Hyde Vineyard traits of delicate white flowers, tangerine zest, and lemon cream. On the palate the wine is citrus-driven with orange and lemon flavors along with hints of toasted almond and vanilla. The wine has great acidity that leaves a white chalk/mineral note on the very long finish.

Rich and contoured, this is filled with concentrated Fuji apple, pear tart and quince paste flavors that are well-structured and backed by powerful acidity. Shows intense mineral and sea salt notes on the long finish. Drink now through 2025. 1,400 cases made.

Deep garnet-purple in color, the 2018 Cabernet Sauvignon Snake Oil needs a little swirling to reveal emerging notes of freshly crushed blackcurrants, blackberry pie and mulberries plus suggestions of tilled soil, cedar chest and Indian spices with a touch of roses. HARVEST NOTES 

The early half of 2018 brought us moderate temperature allowing for a long growing season.   We had a majority of our rainfall in February followed by a mild Spring.  Then summer brought consistent temperatures with little heat spikes.  This weather allowed for longer hang time and for the fruit to ripen at a slower rate.  The 2018 harvest at our estate began in late August and resulted in exceptional quality.

This is a quintessential bistro wine. Fresh and fruity, displaying red and black fruit flavors. Well balanced, good structure and silky finish with excellent length. Serve slightly chilled.

Bellevue Cotes de Castillon Cuvee Vieilles Vignes is made from 65% Merlot, 35% Cabernet Franc.  Aged in mostly new oak barrels (90% French oak and 10% American oak), and some Château Haut Brion 2nd Barrels.

The wine offers a rich and intense bouquet of blackcurrant, blackberry and strawberry. It is smooth and full in the mouth with a velvety texture. Acidity combined with firm but well-integrated tannins are a fine supporting cast to the black fruit flavors at the end.

Cazaux Vacqueyras Blanc Vieilles Vignes 50% Clairette, 30% Roussanne and 20% Viognier

The wine has a beautiful golden color.
The aromas are rich and exotic with mango, almonds, toast, lemon, pineapple white flowers and papaye. These aromas will develop to honey, butter and pear after ageing for a few years.
The finish is long, citrusy and toasty.

Terroir: Slopes of sandy soil or grey limestone.
Yield: 25 -30 hl/ha
Age of the vines: 70 years old minimum. The oldest are around 90 years old.
The grapes are pressed pneumatically after a few hours contact with the skins.The must is kept at 20°c during the alcoholic fermentation to optimise the aromas and respect the wine’s suppleness.
Barrel fermented an aged in 228-liter French Oak barrel for 12 months with regular stirrings of the lees.

Trueman represents Cabernet in Clarendon at its best. Its purity, its elegant style, its supple, polished nature ... it’s a wine of its own.Distinct in character, this is not like Cabernet from the Vales below or the hills to the east. From its pretty, delicate florals and musk, through to its silky blackcurrant and kalamata juice and down to its dark carbon soul - Trueman is a modern Cabernet that encapsulates all the toil and antiquity of Clarendon. Echoing the unearthed prose of wine writer Ebenezer Ward from 1886 on theCabernet sown from this very land – Trueman is “an excelled wine, of very marked flavor and bouquet”.

This limited release was specially selected and blended from the exceptional 2016 vintage in Paso Robles. It is both a tribute to Jerry's pioneering efforts in the region and our red wine portfolio's ultimate expression of Cabernet Sauvignon. VINEYARDS & CELLAR Beck Vineyard, in the Creston District of Paso Robles, is a unique, high elevation site that sits at 1,700 feet above the early morning fog line. Its calcareous soils and cooling afternoon winds are perfect for growing Cabernet Sauvignon. The Cabernet from this vineyard ripens early with excellent color, purity of fruit, and phenolic maturity. Incorporation of Cabernet Franc brings freshness to the blend, while the rare Bordeaux variety, Saint Macaire, brings density and a savory character. Siegel Single Vineyard Los Lingues Petit Verdot is made from 100 percent Petit Verdot.

The grapes were grown on the Los Linques "Reserve" hillside, blocks 23, 24 & 25. The wine offers elegant notes of tobacco, mocha and roasted coffee beans. It presents soft tannins, wine of great balance with a persistent and long finish.

Our Special Reserve wines represent the union of tradition and innovation in two generations. The grapes are sourced through careful selection of our best vineyards. Their ripe and round tannins clearly express the terroir of Colchagua. Siegel Special Reserve Cabernet Sauvignon has been aged for 12 months in french oak barrels, lending it structure and complexity. The wine is deep ruby red and presents aromas of Cassis, red fruits, black pepper, black cherries, tabacco, cinnamon and chocolate. On the palate it is highly concentrated with juicy notes of red fruits and spices.

Serve with red meat, braised stews, grilles pork and flavorful cheeses.

Pre-fermentative cold maceration for 5 days, with alcoholic fermentation occurring at 27-29°C to better extract polyphenols from the wine. Post-fermentative maceration for 2 to 3 weeks. Then part of the wine is decanted into barrels for 10-12 months. The rest of the wine finishes its malolactic fermentation in stainless-steel tanks. Once the wine has been blended it is smoothly clarified.
