Kershaw Chardonnay Deconstructed Lake District Cartref CY96 is made from 100 percent Chardonnay.

Sourced from the western part of Elgin, known as the Lake District, this clone produces wines that are nervous, aromatic, elegant and sharp with slightly lower alcohol and finely balanced, the fruit profile being subtle with hints of citrus/orange peel and peach blossom and with time, some nutty elements. The Cartref soils, a mixture of decomposed granite, pebbles and quartz, adds delicacy and heightens the fruit intensity.

The inspiration for my Deconstructed Chardonnay stems from my belief that the Elgin region boasts credentials that make it world-class. To bolster these regional credentials, I have set out to prove that Elgin has both a signature grape, as well as specific ‘terroirs' (meso-climates) that reflect intra-regional distinctions. To fully comprehend this, it is necessary to dig deeper into the DNA that make up our region. To elucidate this, I have decided to make these 3 Chardonnay wines, each selected from a specific vineyard and an individual clone. Importantly, this is an ongoing story that will unfold over the coming years.

We began the year with warm spring conditions that gave way to an early budbreak and the consistent, dry weather afforded an optimal fruit set of small berries with incredible concentration. Crop yields were down a bit from 2013, but the quality was magnificent. It was a textbook growing season, every winemaker’s dream.”

This wine and its siblings will do a lot to establish Dry Creek as more than another viticulture area better known for Zinfandel than Cabernet Sauvignon. This is a killer Cabernet Sauvignon with dazzling fruit levels and loads of loamy soil notes intermixed with black raspberry, blueberry and blackcurrant. Les Noisetiers is a combination of specific lots from within Kistler’s vineyards of designated quality that are situated in far western Sonoma County, near the coast. They began creating Les Noisetiers upon noting that there was an inherent mineral tone which they loved in the lots from their vineyards planted in these coastal sandy Gold Ridge soils.

A classic balance of layered, juicy fruit and mineral backbone. It is delicious wine, with white flowers and stone fruit aromatics leading to a full bodied, juicy core, loaded with flavors of peach, apricots, pineapple and pear.

Klipsun Cabernet Sauvignon Red Mountain is made from 86% Cabernet Sauvignon, 7% Merlot, 7% Syrah.

Fruit aroma of blackberry, mulberry and boysenberry, interlaced with a spicy oak note. As the wine ages in the bottle the oak and fruit aromas will meld into a complex medley of cedar and cigar box. Rich blackberry and a hint of wild sage normally found. Pleasant acidity and a rich, balanced mouthfeel followed by a well-developed mid palate. The result is a tannin structure that is evident but seamless. The finish is smooth and lingering.

Blended with 7% Merlot and 7% Syrah, the 2019 Cabernet Sauvignon Red Mountain starts with a bold, generous and dark-fruited nose with a rich and robust expression that boasts a seductive oaky essence. Full-bodied, the palate is still tight and will benefit from additional aging in bottle, yet I can see it has good bones now that will allow it to age gracefully for about two decades. Gobs of dark red and black fruits sway with a delightful mineral tension before concluding with a long, winding and spicy finish. The wine rested for 20 months in all new French oak before being bottled and left to rest for more than a year prior to release.

La Motte Merlot offers a bouquet of red currants, cherries and spicy oakiness. It is an elegant, well-balanced and juicy wine with an underlying, refreshing quality.

Laird Jillians Red Blend  is made from 65% Cabernet Sauvignon, 18% Syrah, 10% Merlot, 5% Malbec and 2% Petit Verdot

Our family has been proudly growing grapes in Napa Valley for two generations; this unique fusion of four varietals honors the youngest member of the third generation in our farming family, our daughter Jillian. This Left Bank Bordeaux-style blend with a twist of Rhone is structured, but easy to drink. Jillian’s is the only blend we make and it’s our most popular red wine.

Tasting Notes: Complex and precocious just like the real Jillian. Its deep, ruby red appearance accompanied by viscous legs leads the way to a seductive bouquet of toasted oak, lavender and ripe strawberries. A medium bodied palate, with delicate tannins and acidity, leads the way to tart dusty cherries and boysenberries that dance across your palate, while flavors of clove, vanilla and blueberry custard unfold on the finish.

Le Jade Picpoul de Pinet is made from 100% Picpoul de Pinet

Pale straw color. Delicate white flower, citrus and juicy pear aromas. Fresh, crisp, and bright acidity with mineral and saline accents. Well-balanced and easy-drinking.

A refreshing treat laced up with snappy food-friendly acidity.

Picpoul Le Jade makes a classic match with oysters on the half shell and goes very well with exotic food in general. Picpoul means lip-smacking good.

Le Jade Sauvignon Blanc is made from 100 percent Sauvignon Blanc.

The wine comes from sun-drenched vineyards planted on the best terroir, selected for its physical and geographical characteristics, on clay and limestone hillsides called "costieres" (coastal region), only a few miles away from the Etang de Thau - a coastal lagoon that is situated between the port of Sete and Marseillan.

This Sauvignon Blanc boasts a silvery straw color. Crisp and fragrant white wine with wonderful aromatic intensity, fresh exotic notes, delicious fruity aromas of citrus and gooseberry. A great varietal expression, this is a zesty and refreshing wine that lingers on the palate.

Le Jade Viognier is made from 100 percent Viognier

The wine comes from sun-drenched vineyards planted on the best terroir - specially selected for its physical and geographical characteristics - on clay and limestone hillsides called "costières" (coastal region). The vineyards are only a few miles away from the Etang de Thau, a coastal lagoon that is situated between the port of Sète and Marseillan.

The color is a wonderful brilliant yellow with pearl tints. Intense and seductive aromas of ripe fruits, especially apricot, and floral notes with a hint of rose petals. The texture is very harmonious, generous, round and long. The finish is long and balanced with a good freshness.

Perfect as an aperitif, or great with richer dishes like langoustines, smoked or marinated salmon. Great too with guinea fowl in creamy or curry sauce. Serve it also with a broccoli and Roquefort soup or for dessert with a mango and pineapple tarte Tatin. An extremely versatile wine!

"This 100% Viognier comes from some of the region’s best vineyards, whose clay and limestone soils lend mineral and chalky notes. Night-picked fruit receives extended skin contact prior to partial cold fermentation in tanks (with a small percentage fermented in oak) and subsequent aging on the lees in large vats. No malolactic is done, which helps the wine retain its freshness as it presents the ripe tropical fruit, citrus, and apricot that define its profile along with a round, harmonious texture and floral notes such as rose petal. Pour it by the glass as an apéritif, or pair it with seafood dishes or a good blue cheese like Roquefort."

Brilliant golden yellow robe. The Bourgogne Chardonnay from Remy Lefevre is a marvel of density and aromatic expression. Very expressive on the nose, hints of stone and yellow fruits such as peach, pineapple. The opulence of the mouthfeel is nicely balanced between minerality and very delicate oaky notes. Slightly saline finish marked by a magnificent tension and freshness leaving an great memory and pleasure !

Remy Lefevre Bourgogne Chardonnay goes well with caesar salads, seafood and soft cheeses such as goat cheese. 

Lismore Chardonnay made from 100 percent Chardonnay.

This very special Chardonnay was made in the style of a traditional Burgundian Chablis. It shows intense citrus and soft fruit layered with brioche, honey and walnut carried by a distinct minerality and crisp acidity with a lingering citrus finish.

Wine Made in the Soil

The vineyards are planted in decomposed shale over clay at 300 meters in the foothills of the Sonderend Mountain Range. A low mean February temperature lends to an extended ripening period that can put harvest 3-4 weeks later than traditional wine growing regions in South Africa. The intense citrus notes and the lingering finish are consistent trademarks of Lismore's specific terroir. The restrained minerality of the Chardonnay is a clear indication of the cool climate in which it is grown.

Wine of Origin "Greyton" has been designated by SAWIS recognizing the special terrior of this region.

Delightful with warm curries which lift the aromatics or a traditional pairing of smoked salmon highlighting the fresh acidity.

Lismore Pinot Noir is made from 100 percent Pinot Noir

The grapes were picked at optimal ripeness. 30% whole bunch fermented in large 5000 liter vats with gentle pump-overs twice a day. The process allowed for a long extraction period which lends to the fruit expression and structure of this wine. The free run wine was drained off and the fermented grapes were then pressed in a traditional wooden basket press. The wine was racked into 225, 300 and 500 liter barrels where malolactic fermentation took place and the wine was aged for 10 months. 35% new French oak was used.

"The 2018 Pinot Noir comes from Walker Bay and Kaaimansgat and includes 30% whole-bunch fruit, aged for 11 months in 25% new oak. The bouquet sports vivid red cherry and raspberry fruit that is exceptionally well defined and beautifully integrated with the oak. The palate is medium-bodied with supple tannins, well-judged acidity and a slightly fleshy texture. There is just the right amount of salinity here, and the finish is kept on a tight leash, allowing the detail and precision to be fully expressed. "Walker Bay and Elandskloof are the twin sources of 30% whole bunch-fermented Pinot from Sam O'Keefe. "Clean citrus, reductive matchstick, crushed stone, and white flower notes all emerge from the 2022 Rioja Blanco Vinas Viejas, an incredibly well-made, balanced white that has a layered mouthfeel, building richness, and a clean, crisp, mineral-laced, almost salty finish. The hillside terraced vineyards are sheltered by the Sierra Cantabria Mountains to the north from harsh weather extremes. Small plot production is utilized in this region of infertile chalky clay soil to produce clusters of excellent quality. Almost 900 plots are needed to complete the approximately 400 hectares of estate-owned or cellar-controlled vineyards, some with vines more than 100 years in age.

Tasting notes
Ruby red color with earthy tones. The wine shows finesse, elegance and complexity with good concentration of black fruit, thyme and rosemary with secondary aromas of leather and tobacco leaves. In the palate it is polished and rounded, making it pleasant and easy to drink. Fleshy with both elegance and power. It has touches of black fruit jam and liquorice. A long, delicious and persistent finish.

Suitable for pairing with a long, copious meal where it can accommodate braised vegetables, cold cuts, peppers stuffed with hake and shrimp, mushroom omelettes, cod Rioja style, both red and white meat... and so on.

Intense oaky aromas, with some nice blackberry fruit and violet florals behind. The palate is rich, soft and open, yet packed with well-integrated fruity, oaky tannins, too. Really sleek and polished.

"Lastly, the 2017 Rioja Gran Reserva checks in as 95% Tempranillo and 5% Graciano aged 24 months in French and American oak. It's another deeply hued red from this producer that has a complex, impeccably made style. Cedary red and black fruits, smoky tobacco, vanilla bean, and charcoal notes giveway to a rich, powerful Rioja that has ample structure, medium to full body, building tannins, and a great finish. This smoky, complex, satisfying effort will evolve for another 10-15 years."

This wine is a response to our quest to find the perfect wine, one that combines structure, complexity and balance. It is the result of a careful selection of grapes not from the vines but from the appropriate clusters, those that naturally produce three or less clusters and which are 60 or more years of age. Vines situated on slopes and terraces of limestone and clay soil, well exposed to the sun. These grapes are harvested in small boxes at the very best moment, then inspected on the selection table and vinified in small groups at a controlled temperature. After alcoholic fermentation they are macerated to extract their full potential. The resulting most is then settled in new French and American oak barrels to undergo malolactic fermentation. This second fermentation ensures the wine gains in complexity and aromatic intensity, it also stabilises its colour.

Fully ripened and concentrated fruit aromas with balsamic and spicy mineral nuances, notes of blackberry and blueberry preserve wrapped in creamy oak, caramel and milky coffee tones. The palate is concentrated, unctuous in the centre, balanced, sweet, with fine tannins. Very long finish, expressive, clearly marked with the character of the soil.

Hiru 3 racimos is a complex wine and so is its pairing with food. We must consider two options, either drink it in light sips so that the wine itself is the star of the feast, or serve with solid dishes that can match its vigour. An Iberian pork loin with roasted peppers, steak with mushrooms and plums, wild boar stew or pheasant in port are dishes that blend incredibly with this characterful wine.
