Winemaker Joe Harden ages his Truchard Vineyard Chardonnay for 10 months in 30% new French oak, with minimal stirring and no malolactic fermentation, allowing for a slightly more pronounced oak presence. Truchard, one of Carneros' most esteemed sites, is characterised by rolling hills with ideal sun exposure and cooling breezes. Harden sources fruit from eight distinct blocks across the vineyard’s expansive 109 hectares, with harvests spanning roughly a month. Among the selections is Clone 809, a Muscat clone that adds floral aromatics and a touch of baking spice. The Truchard Chardonnay exhibits a silky texture on the palate, layered with citrus peel and tropical hints of apricot and peach. Estate Vineyard

For only stretching 12 acres, our Estate Cabernet Sauvignon vineyard offers quite a variation in terroir. With the main block sloping both to the southwest and the northeast, our yields produce drastically different fruit. The smaller block has terraced rows that curve from the south to the east.

Smith Ranch Vineyard

Planted in 1998, the Smith Ranch grows Cabernet Sauvignon, Clone 337, at around 600 feet. Sloping to both the east and the west, this Alexander Valley hilltop vineyard produces aromatic, intense fruitiness in the glass.

Wessel Vineyard

Located not far from the winery, Wessel is a well-managed hilltop vineyard located on the Dry Creek Ridge of the Alexander Valley. "The 2020 Capitel is pure Verdejo from the oldest vines from the Peña Aguda vineyard in the village of Nieva on slate soils. This is the last vineyard to be bottled and has higher alcohol (14%) than the rest of the vineyards despite now harvesting earlier. The wine has a different aromatic profile but getting closer to the style of Ossian, less opulent than in the past, with more energy, quite fruit-driven with some exotic notes reminiscent of banana skin. The whole clusters were pressed and the juice put to ferment in barrel where the wine matured with the lees and, starting this year, without bâtonnage, because they feel the wines have enough volume and stirring the lees can bring more oxidation to the wine. 2,500 bottles produced. - Luis GUTIERREZ"

The vineyards are located at an elevation of 300-600 metres above sea level, with a south-southwesterly exposure. Training system: Guyot.

It features an intense red color with garnet highlights. The nose offers up a rich variety of aromas with fruity notes of cherries, morello cherries and plums, spices and hints of chocolate. It is round and caressing with soft, mellow tannins balanced by excellent acidity that enhances its drinkability and ageing potential.

It is a wine with a marked personality, great finesse, elegance, and extraordinary longevity.

The Chardonnay grapes were sorted prior to vinification to ensure the fruit was healthy and ripe. The grapes were then pressed, and the must was racked to stainless steel fermentation tanks, where the must was fermented at 14 to 16°C with selected yeasts. The wine did not undergo malolactic fermentation to maintain the crisp, fresh style. The wine rested on its fine lees for three months adding texture and subtle complexity before being gently filtered and bottled.

Pago de Carraovejas Cuesta Liebres is made from 100% Tinto Fino. The plot is located on a terraced hillside located at 900 m above sea level with slopes that range between inclines of 30% and 40%. Red cherry color with purple hues. Ripe fruit aromas, vanilla notes. Suave and unctuous in the mouth. A strong and noble character.

The harvest is carried out by hand using small crates and after passing through a refrigerated container it is transferred into tanks via gravity. The alcoholic and malolatic fermentation is carried out in small French “Haute Futaie” Oak casks with unique and original local yeasts and fermenting bacteria from the vineyard itself, to bring out the very best of the terroir, respecting the uniqueness of each and every vintage. Clarified with egg whites and bottled by gravity with natural cork stoppers.

A benchmark Ribera del Duero when it comes to quality. Expect the fine integration of high-grade wood, showing notes of peppermint, spices, truffles, dark chocolate, grilled herbs and dark cherry and blackberry fruit. More restrained in oak use compared with the old vintages for sure. Full-bodied and resolved, with seamless, powdery tannins and a juicy, tightly wound finish. Even, polished and effortless for such remarkable balance. It has a high level of concentration, with plush, integrated oak. Drink or hold.

Prepared with Tempranillo grapes (100%), this wine has a very bright, intense maraschino cherry colour that fades to a Cardinal red rim.

It has a very marked aroma with a good balance of fruit and wood, where tones of vanilla intermingle with well-ripened fruit, black berries and wild fruits. There are also noticeable hints of leather and liquorice, resulting from the mingling of the French oak and the aromas inherent in this variety of grape.

In the mouth, the wine has a smooth texture but fills the palate with balanced flavours, including fine tannins, which help extend the life of the wine. The finish and aftertaste are both long and elegant.

Serving:

Uncork and decant one hour before serving at a temperature of 16-18 ºC.

Selected harvest with yields limited to 5000 kg per hectare. The harvest begins in early October, starting with the most mature parcels. Once the grapes are brought into the winery, the tanks are seeded with indigenous yeast (start culture) and the alcoholic fermentation begins. During the barrelling period, which lasts 30 days, the wine is crushed and pumped over daily, all the while controlling the density, temperature and evolution of the yeast. At the end of this fermentation, the tanks are emptied and the wine taken for malolactic fermentation.

The malolactic fermentation begins without the addition of bacteria. The temperature is held steady at 20ºC for period of 22 days, during which we monitor the levels of malic and lactic acids. When the malic acid content is less than 0.1 grams per litre, the wine is decanted to separate the lees and is transferred directly to the barrels without undergoing any type of filtration, clarification or cold treatment.

The wine is aged for twelve months in new and semi-new French oak barrels (no more than three years old). At the end of this period, it is taken to the tank for homogenisation, where it undergoes light filtration through cartridges (open pore) and is then bottled.

A hillside of tinto fino vines red in the village of Mambrilla, a short distance from the winery. Painous Brut Cava

Grape varieties: Parellada 40%, Macabeo 30% and Xarel·lo 30%.
Harvest: Occurs in 3 stages. Macabeo within the first fortnight of September, Xarello during the second fortnight in September and Parellada within the first fortnight of October.
First fermentation and vinification: This is a "Methode Traditionnelle" with
soft pressing of the grapes to obtain 60% of the must (flower must). It is decanted and fermented with controlled temperatures of 18ºC for 20 days until it fully develops the primary aromas of the grapes.
Secondary fermentation: takes place in the bottle for 40 days at a temperature of 16ºC and final ageing for 20 months. Residual sugar: 7 gr. per litre.
Color: Pale yellow with green tones. Shiny and clear.
Aromas: Powerful in the nose, clean. Ageing aromas.
Taste: Soft and well structured, long aftertaste and good balance of acidity and sugar contents.
Gastronomy: It should be served chilled between 5ºC and 7ºC. A flute type glass is recommended. Excellent with pasta, red and soft meats and white fish.Painous is unique in that it is a Cava-Joven style sparkling wine, meaning, the wine receives the minimum aging of 9 months. This allows crisp, fresh aromas and flavors to be expressed. It is delicious for aperitif.
